BUTTER BASTED SIRLOIN STEAK - HEALTHY



Butter Basted Sirloin Steak - Healthy image

This steak is a restaurant quality steak easy enough to do on a weeknight, but fancy enough to cook up for a romantic dinner. This recipe makes 3 servings which is roughly a cooked 6 2/3 oz steak serving for 7sp. If you make this into 4 servings, it is 6sp an 5oz a serving (10oz for 11).

1.5 lb sirloin, lean 1" thick
2 tsp canola oil
1 tbsp butter*
1.5 tsp kosher salt
8 sprigs thyme
3 cloves garlic
1 cup low sodium beef broth**

Steps:

  • Pat steaks dry and liberally salt and pepper. Let steaks come to room temperature before searing. Dry steaks again before cooking.
  • Heat the cast iron pan for 1-2 minutes. Add oil, swirl the oil around, add the steak to the pan. Cook the steak for 2 minutes. Flip steak.
  • Cook steak for 2 minutes. Add butter, garlic, thyme, and 1/2 c beef broth. Spoon butter mixture onto the steak while cooking for 1 more minute.
  • Remove steak and let rest. If using a meat thermometer, remove steak after it has reached 122 degrees (it'll rise while resting to 125 which is medium rare).
  • Add remaining 1/2 c of broth and scrape the pan with a wooden spoon. Ladle the deglazed liquid over the steak once served.

I have never tasted any other steak that came even close to the ones made with this recipe. If you are having steak, don't skimp on flavor to save a few calories. The butter makes this steak melt in your mouth wonderful.

½ cup butter
2 teaspoons garlic powder
4 cloves garlic, minced
4 pounds beef top sirloin steaks
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for high heat.
  • In a small saucepan, melt butter over medium-low heat with garlic powder and minced garlic. Set aside.
  • Sprinkle both sides of each steak with salt and pepper.
  • Grill steaks 4 to 5 minutes per side, or to desired doneness. When done, transfer to warmed plates. Brush tops liberally with garlic butter, and allow to rest for 2 to 3 minutes before serving.

  • Let steak stand at room temperature for 30 minutes. Pat dry with paper towels. Brush with oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Heat a large cast-iron skillet over medium-high heat. Add steak and cook for 1 minute. Add garlic, shallots, butter and rosemary; cook, tilting the pan slightly to pool the butter and drippings on one side, for 1 minute. Use a spoon to baste the steak with the butter mixture. Flip the steak and cook, basting occasionally, until an instant-read thermometer registers 125 degrees F for medium-rare, 2 minutes more. Transfer the steak to a clean cutting board and top with the shallots, garlic and rosemary. Cover loosely with foil; let stand for 10 minutes.
  • Discard the rosemary sprig. Thinly slice the steak against the grain and transfer to a serving platter. Spoon drippings from the pan and cutting board over the steak. Season with the remaining 1/4 teaspoon each salt and pepper and garnish with more rosemary, if desired.

  • Heat a dry large skillet, preferably cast iron, over medium-high, then add oil. As soon as oil is smoking, cook steak, turning every 2 minutes or so, until a deep brown crust forms and the internal temperature is a few degrees below your favored doneness (120°–125° for medium-rare), 8–10 minutes.
  • Add butter, rosemary, and garlic to skillet, tilt pan toward you so that butter pools on one side, and use a large spoon to continually baste steak with butter. Continue until butter is no longer bubbling and it smells nutty and is beginning to brown, about 1 minute. Transfer meat to a cutting board and let rest 10 minutes. (For medium-rare, your steak should reach an internal temperature of 125°–130°.)
