1/3 cup plus 1 tablespoon granulated sugar
3 extra-large eggs, at room temperature

2 teaspoons pure vanilla extract
1 teaspoon grated lemon zest (2 lemons)
1/4 teaspoon kosher salt
2 tablespoons pear brandy (recommended: Poire William)
2 to 3 firm but ripe Bartlett pears
Confectioners' sugar
Creme fraiche

Steps:

  • Preheat the oven to 375 degrees F.
  • Butter a 10 x 3 x 1 1/2-inch round baking dish and sprinkle the bottom and sides with 1 tablespoon of the granulated sugar.
  • Beat the eggs and the 1/3 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla extract, lemon zest, salt, and pear brandy. Set aside for 10 minutes.
  • Meanwhile, peel, quarter, core, and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish. Pour the batter over the pears and bake until the top is golden brown and the custard is firm, 35 to 40 minutes. Serve warm or at room temperature, sprinkled with confectioners' sugar, and creme fraiche.

Steps:

  • Preheat oven to 375 degrees. In a medium bowl, whisk together eggs and flour until combined. Add sour cream, milk, granulated sugar, vanilla, and salt and whisk to combine. Pour mixture into four 2-cup baking dishes or a 3-quart baking dish. Scatter peaches in a single layer in batter. Bake until custard is browned at edges and center is set, 30 minutes. 1/4 cup (1/2 stick) unsalted butter, melted, plus more for dish
1 1/2 cup Lillet Blanc or white wine
1 1/4 cup sugar
1 vanilla bean, halved lengthwise, seeds scraped and reserved
2 pound firm, ripe peaches, (5 to 7), halved and pitted
6 ounce fresh raspberries
4 large eggs
1/4 teaspoon salt
6 tablespoon all-purpose flour
1 cup whole milk
1 teaspoon pure vanilla extract
1/2 teaspoon finely grated orange zest

Steps:

  • Butter a 12-inch round baking dish; set aside. Bring Lillet, 1 1/2 cups water, 3/4 cup sugar, and the vanilla bean and seeds to a boil in a large, wide saucepan over high heat, stirring until sugar has dissolved. Add peaches, cut side down, and cover with a round of parchment paper, placing it directly on top of peaches. Reduce heat to medium. Simmer until peaches are very tender, about 15 minutes. Remove from heat; let stand 30 minutes.
  • Preheat oven to 325 degrees. Using a slotted spoon, transfer peaches, cut side up, to prepared dish; reserve 1/4 cup poaching liquid (discard the vanilla bean). Arrange raspberries among peaches.
  • Whisk eggs, remaining 1/2 cup sugar, and the salt in a medium bowl. Gradually whisk in flour. Whisk in milk, melted butter, vanilla extract, orange zest, and reserved poaching liquid. Pour around fruit.
  • Bake until edges are puffed and golden, 40 to 45 minutes. Let cool on a wire rack 20 minutes before serving.

3 eggs
¾ cup white sugar
1 ½ cups heavy whipping cream
½ cup all-purpose flour

Peach Clafoutis Ina Garten is one of the most delicious ways to savor summer's most beloved fresh fruit. Isn't it fun to say clafoutis, pronounced (ka-for-tee)? The term is derived from the old Occitan verb Clair, which means "to fill." Filling a greased baking dish with sliced, juicy peaches surrounded by a gently sweet, milk, egg, and flour mixture. It's a pillowy pancake-like dish that's one of the most beloved home-baked sweets in French cuisine.

3 large eggs
1½ cup whole milk
⅓ cup packed light brown sugar +1 tablespoon for sprinkling
½ tsp vanilla
¼ tsp cinnamon
Pinch of salt
½ teaspoon lemon zest
⅔ cup Bob's Red Mill Organic Unbleached White All-Purpose Flour
2-3 Large peaches, ripe but firm sliced (approx 2 cups when sliced)
2 tablespoons bourbon or brandy
butter for greasing baking dish

Steps:

  • In a blender, combine the eggs, milk, sugar, vanilla, cinnamon, lemon zest, and salt. To blend, pulse a few times. Pulse in the flour until the mixture is smooth. Place the batter in the refrigerator for at least 30 minutes to rest.
  • Meanwhile, cut the peaches in half and slice them 1/4 inch thick. Toss the peach slices with the bourbon or brandy and set aside for up to 30 minutes while the batter settles.
  • Preheat the oven to 350 degrees Fahrenheit. Preheat the oven to 350°F and butter a 10-inch round pan, ceramic casserole, or quiche dish.
  • Set aside the peaches after removing them from the brandy mixture with a slotted spoon. Swirl the remaining bourbon brandy mixture in the mixer to combine. DO NOT MIX AGAIN.
  • Carefully remove the heated pan from the oven. Pour the batter in. Arrange peach slices on top. Alternatively, you might arrange the peaches in the pan first, followed by the batter - either method works. Garnish with coarse sugar
  • Return the pans to the oven and bake for 40-45 minutes. Alternatively, bake until the top is golden and puffy and the custard has set. Allow cooling somewhat before sprinkling with powdered sugar and serving. Toppings such as vanilla ice cream or whipped cream are excellent choices.

2 cups diced peaches (fresh or canned)
1 cup dried cranberries
1 tablespoon freshly chopped mint leaves
2 tablespoons sugar
1 teaspoon freshly cracked black pepper
2 eggs
1 cup whole milk
3 tablespoons all-purpose flour
1 fresh vanilla pod, split in 1/2, seeds removed and reserved
1/4 cup confectioners' sugar, sifted

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease 6 ceramic ramekins. In a large bowl mix together the peaches, cranberries, chopped mint, sugar, and cracked black pepper. Divide between the ramekins.
  • In another bowl, add the eggs, milk, flour, and vanilla seeds and mix well. Ladle over the fruit mixture.
  • Line a large oven-proof casserole dish with newspaper or kitchen towels, 3 to 4 layers thick. Arrange the ramekins on top of the paper. Add enough water to reach half way up the sides of the ramekins. Put in the oven and bake until golden brown and a knife inserted in the center comes out clean, about 20 to 25 minutes. Remove from the oven and allow to cool for about 1 hour. Dust with confectioners' sugar before serving.

  • Preheat oven 350 degrees. Butter a 10 in baking dish. Sprinkle with 1 T sugar evenly over bottom and sides of dish. Arrange peaches in a concentric circle over bottom of prepared dish. In the container of a blender, add eggs, cream, flour, extracts, zest, salt and remaining sugar; process until well blended. Pour batter over peaches and bake for 40-45 min or until golden brown. I noticed that there were no clafoutis posted using peaches, so I am remedying that! This one is from Bakefest 2004 and is very easy to prepare, since it uses canned fruit. Just make sure you drain the fruit really well.

796 ml canned peaches, sliced and drained
1 cup dried cranberries
2 tablespoons brandy
1 teaspoon lemon juice
1/2 teaspoon ground cinnamon
4 eggs or 3/4 cup liquid egg substitute
1 cup evaporated milk
1/4 cup butter, melted
1 cup all-purpose flour
3/4 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
icing sugar (to garnish) (optional)

Steps:

  • Preheat the oven to 350°F.
  • Drain the peaches well.
  • Toss with the cranberries, brandy, lemon juice and cinnamon.
  • Arrange in a 10" casserole or deep-dish pie plate, mounding the fruit slightly in the centre of the dish.
  • Whisk the eggs with the evaporated milk and melted butter.
  • Blend the flour with the sugar, baking powder and salt.
