BUTTERNUT SQUASH TORTELLINI WITH BROWN BUTTER SAUCE

Steps:
- To make the tortellini, preheat the oven to 375 degrees F. On a foil-lined baking sheet toss together the butternut squash, 2 tablespoons of olive oil, herbs de Provence, salt, and pepper. Bake in the oven until soft and golden, about 25 minutes. Meanwhile, heat the olive oil in a small saute pan over medium heat. Cook the shallots and garlic until lightly golden, about 3 minutes.
- In a food processor, combine the butternut squash mixture, the shallot mixture, and the ricotta cheese and pulse a few times to blend. Add the crushed amaretti cookies, the nutmeg, and sprinkle with salt and freshly ground black pepper. Pulse until smooth. The tortellini filling can be made one day ahead.
- To make the tortellini, lay out 6 wonton skins, keeping the remaining skins inside the package or under a very lightly dampened paper towel. Place 1 tablespoon of squash mixture in the middle of each skin. Dip a pastry brush in a little water and wet the edges of the skin. Gently fold the square wrapper into a triangle, making sure the edges are securely closed and there are no air pockets inside. Dampen the two bottom corners of the longest side of the triangle and gently bring them together, pressing lightly to secure. Place the formed tortellini on a baking sheet and cover with plastic wrap. Before laying out another 6 wonton sheets, be careful to dry the work surface. This will help keep tortellini from sticking to the baking sheet. Continue until all the butternut squash mixture is used. There should be approximately 36 tortellini. (The tortellini can be formed, frozen on the baking sheet, transferred to a tightly sealed plastic bag or container and stored for up to six months. To cook, simply toss the frozen ravioli into the salted boiling water and cook for 4 minutes.)
- To make the sauce and serve, bring a large pot of salted water to a boil. Meanwhile, melt the butter in a large, heavy skillet over medium heat.
- Add the sage, walnuts and cranberries and let cook until the butter starts to brown, about 3 minutes. Turn the heat off and season with salt, and pepper.
- Stir to combine. Then, gently place the tortellini in the boiling water and gently stir. When they begin to float they are done, about 3 minutes. Using a slotted spoon, gently spoon the tortellini onto a serving platter, Top with the brown butter sauce, sprinkle with Parmesan cheese and serve.
BUTTERNUT SQUASH SAUCE WITH SAGE

- Cut the butternut squash in half lengthwise to remove the seeds and strings. Peel the skin using a paring knife and cut the squash into small cubes.
- Place the olive oil and shallots in a deep skillet over medium heat. When the shallots begin to color, add the squash and season with salt and pepper. Saute a few minutes to lightly caramelize the surface of the cubes. Add the bay leaf, nutmeg, sage, and chicken broth. Cover the pan and cook until the squash is tender but still holding its shape, about 8 minutes.
- Puree the sauce with a standard or immersion blender and serve with potato gnocchi. Top with grated cheese and chopped chestnuts before serving. If desired, fry some sage and shallots in olive oil to garnish.

- Heat two tablespoons of the butter in a medium-sized saucepan over medium heat. Add chopped shallots and cook until they are translucent. Make sure that the butter does not brown. Add lemon juice and remaining butter.
- When the butter has melted, add the fish. Gently place the fish into the pan. The cooking liquid should cover the fish 2/3 up the side of the fish. Turn the temperature high and allow the fish to cook for three minutes once the cooking liquid begins to boil. Turn the heat down and allow to cook on low for an additional minute.
- Finish the recipe with a touch of sea salt!

CARAMELIZED LEEKS BRAISED IN A WINE AND THYME BUTTER SAUCE

- Trim the leeks by removing the outer layer and most of the dark green tops. You should be left with only the white and light green parts. Halve them lengthwise, making sure to leave the root end intact. Place the trimmed leeks in a large bowl of cold water and swish them around to remove the grit and dirt from the many layers. (Leave the leeks in the water for a few minutes - this will loosen up the dirt). Remove the leeks from the water and drain them on a kitchen towel or paper towels.
- Place a 12" non-stick skillet over medium heat (the skillet should have a lid which you will need later.) When the skillet is hot, add two tablespoons of butter and when the butter melts, sprinkle the sugar, ¼ teaspoon of salt and a pinch of pepper evenly over the bottom of the skillet. Next, add the leeks, cut side down in a single layer. Cook the leeks until they become golden brown and caramelized. This will take 5-6 minutes depending on the heat and the kind of skillet you are using.
- To the skillet, add the wine, broth, fresh thyme sprigs and some salt & pepper. Reduce the heat to low, cover and simmer for about 15 minutes, carefully turning them once or twice (this step is not absolutely necessary). The leeks are done when they can be pierced easily with a knife. If they need a longer time braising or if your liquid has evaporated, add some more wine and broth.
- Remove the leeks from the skillet and place on a serving dish. Cover them to keep them warm. Simmer the remaining liquid in the skillet over medium heat, for a minute or so, until it is thickened. Stir in the remaining 1-tablespoon of butter and the lemon juice. Taste the sauce and adjust the seasoning if needed. Spoon the sauce over the leeks; sprinkle some pomegranate seeds (this is optional) and serve warm.
BUTTERNUT SQUASH & LEEKS
I found the basic recipe in a magazine, don't know which one. This is a tasty recipe, and really quite simple. The hardest part is the peeling of the squash.

- Original recipe called for 400 - I think, like the one reviewer mentioned - may be too high. Maybe 375? Another thought is to maybe add the leeks a little into the cookiing -- the squash is definatly going to take longer to cook. Just some tweaking going on here. thanks for looking, and cooking!
- In a large bowl, mix the squash, leeks, herb, salt, pepper, olive oil and pecans (if your are using them) together.
- Place on a cookie sheet (may take 2) and cook for appx 1/2 hour.
- This is some really good stuff!
- Cook time is 1/2 hour, prep time is going to vary - the squash does take time, but well worth it.
- Edit to add that after peeling, seeding and halving/quartering the squash, put it in the microwave for 2 to 3 minutes. This will help with dicing of the squash and help even out the cooking time with the leeks.

- Bring 100ml water to a simmer in a saucepan, add a pinch of salt and whisk in the butter. Drop in the leeks, cook for 2 mins,then add the asparagus and peas, and cook for 2 mins more. Remove from the heat and add the lemon juice and mint.
- To serve, remove the veg from the emulsion with a slotted spoon, then spoon over some of the buttery poaching juices.

- Heat oil in a large skillet over medium-high. Cook squash, a cut side down, until browned underneath, about 3 minutes. Turn onto other cut sides and cook, undisturbed, until browned, about 3 minutes. Transfer to a plate.
- Reduce heat to medium-low and add shallots, garlic, and ginger to same skillet. Cook, stirring often, until translucent and fragrant, about 3 minutes. Stir in coconut milk, salt, chile powder, cayenne, and turmeric. Increase heat to medium-high and bring to a gentle simmer. Reduce heat to medium-low; return squash to skillet and spoon some sauce over. Cover and cook until squash is fork-tender, 20-25 minutes.
- Meanwhile, toast almonds in a dry small skillet over medium heat, tossing often, until golden brown, about 4 minutes. Transfer to a plate and let cool.

- Make a roux with 2 T. butter and 2 T. flour in a small sauce pan.
- In a large pan, melt 1 T butter and saute vegetables (except squash) until tender.
- Season vegetables with 1/2 tsp salt, Italian seasoning, and tarragon.
- Into roux, whisk heavy cream, 1/2 tsp salt, 1/4 tsp of each herb/blend, and cook over medium heat until bubbly and thick. Stir in the 3/4 cup vegetable broth.
- Pour a little extra broth into bottom of 9x13 baking dish. Place a layer of lasagna noodles in the dish.
- Mash or otherwise chop butternut squash so it can be laid in a layer about 1/4 to 1/2 inch thick. Layer the squash on top of the noodles.
- Pour 1/3 of the sauce over the squash.
- Add another layer of noodles.
- Layer the sauteed vegetables onto these noodles.
- Pour 1/3 of the sauce over the veggies.
- Add another layer of noodles.
- Pour remaining sauce over these noodles and top with shredded cheese.
- Bake at 350 til golden and bubbly throughout.

BUTTER-POACHED TRIPLETAIL WITH BRAISED LEEKS, BLACKENED BUTTERNUT SQUASH, AND SAUCE NANTUA
Steps:
- In a large saute pan, heat 1/4C water and juice of 1 lemon over medium heat. Add leeks in an even layer; cook until softened. Add 2T butter; cook until butter is melted and enough water evaporates to form an emulsion. Season to taste with salt.
- In a large bowl, prepare an ice bath. In a large pot, add 2-3 quarts water. Bring to a boil over medium-high heat. Add squash and blanch for 3 minutes in boiling water. Transfer squash to the ice bath to stop cooking; drain when cool and pat dry.
- Season squash with salt to taste and blackening seasoning. Heat a cast-iron skillet over high heat. Add squash; sear until caramelized, about 3-4 minutes. Let cool. Cut into bite-sized cubes.
- Season fillets with salt. In a wide saute pan, bring remaining 1C water and remaining juice of 1 lemon to a boil over medium-high heat. Reduce heat to a simmer, and place fillets in pan. Steam, uncovered, until fish is about halfway cooked, and liquid is reduced to about 1/2C, about 4 - 6 minutes. Swirl in remaining 1C butter, 2T at a time, adding more liquid if needed to maintain emulsion. Baste fish with butter repeatedly until fish is fully cooked, about 4 minutes. Add chives, and season butter with salt. Spoon Sauce Nantua into a wide bowl. Reheat leeks and squash. Spoon vegetables into center of bowl. Place fish over vegetables, and baste with a little lemon chive butter from pan. Garnish with green onion, celery leaves, and shaved fennel, if desired.
- SAUCE: In a medium saucepan, heat a thin layer of oil over high heat. Add shrimp heads; saute until evenly pink. Add celery, carrot, and onion; cook until softened, about 2 minutes. Add tomato paste, and stir to evenly distribute. Stir in wine, and cook for 2 to 3 minutes, scraping browned bits from bottom of pan with a wooden spoon. Add garlic; cook until wine is reduced by half. Add cream, and bring to a boil; reduce heat, and simmer for 20 minutes. Remove from heat. Let cool slightly. Puree mixture using an immersion blender or in batches in the container of a blender. Strain through fine-mesh sieve. Season to taste and add lemon juice.
