BUTTERED PEAS AND PEARL ONIONS
Steps:
- Bring a large pot of salted water to a boil. Toss in the pearl onions and blanch for 3 minutes. Drain them out and then shock them in ice water to stop from over cooking. Drain again. Pinch the pearl onions out of their little skins and set aside.
- In a 3-quart saucepan over medium heat, combine the chicken broth, 2 tablespoons of the butter, and 2 teaspoons of the dill. Once the liquid gets hot, add the pearl onions and peas. Cook and stir for 5 minutes until well coated and thickened slightly. Add the lemon juice, watercress, remaining butter, and dill; season with salt and pepper.

- Fill a saucepan with water, and bring to a boil. Cook pearl onions in boiling water for 3 minutes, drain, and rinse in cold water. Peel onions, and remove the ends.
- Place onions with peas in the saucepan, and fill with enough water to just cover the vegetables. Simmer until tender, about 10 to 12 minutes. Drain, and place vegetables in a bowl.
- Melt margarine in the saucepan over medium-high heat. Pour in cream, and season with salt, pepper, onion powder, and garlic powder. Bring to a boil; cook until thick, stirring constantly. Stir peas and onions into the sauce to coat. Serve immediately.

BASIC BUTTERED PEAS

- Shell the peas if using fresh peas, if using frozen defrost fully before cooking. Bring the water to a rapid boil. Stir in the salt and add the peas. Boil the peas for 1 minute or until they are cooked. Drain the peas when done and add peas to a wide skillet over high heat. Toss in pan until fully dry. Add butter and salt and pepper to taste. Add any optional additions if you choose, and combine.
MINTY PEAS & ONIONS
I have served this delicious side dish many times over the years. The original recipe came from one of my favorite community cookbooks,"Enough to Feed an Army." I usually serve this as an accompaniment to lamb as the mint flavor blends quite nicely with lamb. If you are in a hurry, you can simply melt the butter in the pan and proceed wthout waiting for it to brown. Since mint plays a major role in this recipe, is it highly recommend that you stick with fresh rather than dried mint. Tip: I snip my mint leaves with kitchen shears.

- Slowly heat the butter(he says a nob of butter not a TB) and a good glug of olive oil in a pan.
- Add the flour and stir around.
- Slowly add the stock.
- Turn up the heat and add the spring onions, peas and lettuce with a pinch of salt and pepper.
- Put the lid on and simmer for five minutes or until tender.
- Salt and pepper to taste, squeeze in a bit of lemon juice, and drizzle with oil. Serve!
