This Buttermilk Fried Mushrooms recipe is about to revolutionize your vegetarian cooking. With fried oyster mushrooms and a crunchy coating, it tastes just like fried chicken!

2 heaping cups oyster mushrooms (125 g)
1 cup buttermilk (240 mL, see notes for vegan substitute)
1 ½ cups all-purpose flour (200 g)
1 tsp each salt, pepper, garlic powder, onion powder, smoked paprika, cumin
1 Tbsp oil* (15 mL)

Steps:

  • Marinate: Preheat air fryer to 375 degrees F (190 C). Clean mushrooms then toss together with buttermilk in a large bowl. Let marinate for 15 minutes.
  • Breading: In a large bowl combine flour and spices. Spoon mushrooms out of the buttermilk (save the buttermilk). Dip each mushroom in the flour mixture, shake off excess flour, dip once more in the buttermilk, then once more in the flour (in short: wet > dry > wet > dry).
  • Cook: Grease the bottom of your air fry pan well, then place mushrooms in a single layer, leaving space between mushrooms. Cook for 5 minutes, th½en roughly brush all sides with a little oil to promote browning. Continue cooking 5 to 10 more minutes, until golden brown and crispy.

At my house, we don't like those fried mushrooms that are black and slimy where the breading slides easily off. This recipe is just a very crisp breading on a fresh mushroom. They'll 'pop' when you cut into them they are so fresh. Panko breadcrumbs are a polished bread crumb that you can find in an Asian market or the International section of your favorite food store and they make just a wonderful crunchier coating, too.

10 ounces fresh white mushrooms, wiped clean
1 cup flour
1/2 cup cornstarch
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup water
2 cups breadcrumbs (Panko if you can find them)

Steps:

  • Mix flour, cornstarch, baking powder and salt in a bowl.
  • Add water to make a batter.
  • Dip clean mushroom into batter letting excess batter drip off.
  • I find it easier to stick a toothpick into the mushroom to dip it.
  • After dipping into batter roll in Panko breadcrumbs to coat.
  • Deep fry in oil until golden.
  • We like to serve with cocktail sauce.

1 egg
1 cup water
1 pound button mushrooms, quartered
2 cups oil for frying, or as needed

Steps:

  • In a medium bowl, stir together the flour and garlic salt. Mix in egg and water until smooth.
  • Heat the oil in a large deep skillet over medium-high heat. Test to see if oil is hot by frying a drop of batter. If it sizzles and floats to the top, the oil is ready.
  • Dip mushrooms into the batter and then place in the hot oil. Fry a few at a time so they are not crowded, until golden brown, 3 to 5 minutes. Remove from oil with a slotted spoon and drain on paper towels.

1 teaspoon salt, divided
1/2 teaspoon pepper
6 boneless pork loin chops (6 to 8 ounces each)
2 tablespoons canola oil
1 tablespoon butter
1 pound medium fresh mushrooms, quartered
1/2 cup white wine or chicken broth
1 tablespoon minced fresh basil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup buttermilk
Hot cooked egg noodles
Additional basil

Steps:

  • In a shallow bowl, mix flour, 1/2 teaspoon salt and pepper. Add pork chops, one at a time, and toss to coat; shake off excess., In a large skillet, heat oil over medium-high heat; brown pork chops in batches. Transfer meat and drippings to a 4-qt. slow cooker., In same skillet, heat butter over medium heat. Add mushrooms; cook and stir until tender, 6-8 minutes. Add wine, stirring to loosen browned bits from pan. Pour mushroom mixture over pork chops; sprinkle with basil., Cook, covered, on low until meat is tender, 3-4 hours. Whisk together soup, buttermilk and remaining salt; pour over pork chops. Cook, covered, 30 minutes longer. Stir before serving. Serve with noodles; sprinkle with additional basil.

1 (3 1/2) pound chicken, cut into 8 pieces
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon paprika
¼ teaspoon dried rosemary
¼ teaspoon ground thyme
¼ teaspoon dried oregano
¼ teaspoon dried sage
½ teaspoon white pepper
¼ teaspoon cayenne pepper
2 cups buttermilk
2 cups flour
1 teaspoon salt
½ teaspoon paprika
½ teaspoon cayenne pepper
½ teaspoon garlic powder
½ teaspoon white pepper
½ teaspoon onion powder
2 ½ quarts peanut oil for frying

Steps:

  • Toss together chicken pieces, black pepper, salt, paprika, rosemary, thyme, oregano, sage, white pepper, and cayenne in a large bowl to coat.
  • Stir in buttermilk until chicken is coated. Refrigerate for 6 hours.
  • Combine flour, salt, paprika, cayenne, garlic powder, white pepper, and onion powder in a large shallow dish.
  • Remove chicken from the buttermilk and dredge each piece in the seasoned flour. Shake off any excess and transfer to a plate.
  • Heat peanut oil in a large Dutch oven to 350 degrees F (175 degrees C). Add all the chicken to the pan and cook for 10 minutes.
  • Turn chicken pieces and cook for another 10-15 minutes.
  • Remove chicken from the oil and transfer to a cooling rack set over a paper towel lined baking sheet. Let sit for 10 minutes before serving.

This is a great snack that I like to make with my mushrooms. I prefer Panko bread crumbs for deep frying as they always come out nice and crispy. Does not have to be made in a deep fryer, but definitely helps with taste and even crispness. You can always change seasoning amounts to taste or use different ones like italian seasoning :)

deep frying oil, canola or vegetable oil
white button mushrooms, as many as you would like
1 cup japanese panko breadcrumbs
1 -2 egg, beaten with fork depending on amount of mushrooms
1 teaspoon garlic powder or 2 -3 minced garlic cloves
1 teaspoon chili powder

Steps:

  • Leave mushrooms whole, trimming stems if you prefer, but not necessary.
  • Mix garlic, chili powder, any other seasonings you would like with eggs and beat with fork for about a minute or two in a medium bowl.
  • Put mushrooms in and let sit for a couple minutes.
  • Dip mushrooms into bread crumbs, coating as thoroughly as possible, and fry in batches for 4-5 minutes.
  • serve with soy sauce, ranch dressing, or your favorite dip.
