Homemade Buttermilk pie warm from the oven with the warm raspberry sauce and a big dollop of whipped cream is so good!

Number Of Ingredients 17

1 1/2 cup flour
1 teaspoon baking powder
3/4 teaspoon baking soda
2 1/2 cup sugar
4 eggs
2 cups buttermilk
2 tablespoons lemon juice
2 teaspoon vanilla
1/2 cup butter (melted and slightly cooled)
1 prepared pie crust
1/2 cup sugar
1/4 cup water
1/2 pint fresh raspberries (fresh or frozen)
1 cup raspberry jam
raspberry sauce ((see recipe below))
fresh raspberries
sweetened whipped cream

Steps:

  • Pre-bake the pie crust at 350 for 10 minutes. Remove from oven and let cool to room temperature.
  • Preheat oven to 400 F.
  • In a large bowl whisk the dry ingredients together: flour, baking soda, baking powder and sugar.
  • In a separate bowl mix the wet ingredients together: eggs, buttermilk, lemon juice, vanilla and melted butter.
  • Add the dry ingredients to the wet ingredients and mix together until combined.
  • Pour mixture into prepared pie crust and bake for 10 minutes at 400 degrees. Keep the pie in the oven and reduce the heat of the oven to 350 F. and bake for another 30 minutes longer, or until a tooth pick test comes out dry.
  • Remove from oven and let cool slightly. Serve warm with raspberry sauce, fresh raspberries and sweetened whipped cream.
  • In a small sauce pan on medium high, heat the water, sugar and raspberries for 4 minutes until the sugar is dissolved. Stirring continually.
  • Turn heat off but keep the sauce pan on the burner.
  • With a handheld blender on low speed puree the raspberries in the sauce pan to make a sauce. Serve warm.

1 tablespoon flour
1 tablespoon grated lemon zest
4 large eggs
1 cup buttermilk
1 stick butter, melted
1 unbaked 10-inch basic pie crust shell

Steps:

  • Preheat the oven to 350 degrees F. In a large mixing bowl, combine the sugar, flour, and lemon zest. Whisk in the eggs, 1at a time. Stir in the buttermilk and melted butter. Pour the buttermilk mixture into the pie shell and bake until the top is lightly browned and the center sets, about 25 minutes. Remove from the oven and cool to room temperature. Slice the pie into individual servings. Garnish with the whipped cream and mint.

1 1/2 teaspoons unflavored gelatin
1/2 cup half-and-half
1/2 cup sugar
1 1/2 cups buttermilk
1/8 teaspoon vanilla extract
6 ounces fresh or 10 ounces frozen raspberries (about 1 1/4 cups), plus more for garnish
3 tablespoons confectioners' sugar
1 teaspoon fresh lemon juice

Steps:

  • In a small bowl, sprinkle the gelatin over 1/4 cup water. Let stand until softened, about 5 minutes.
  • In a saucepan, heat half-and-half and sugar over medium heat until sugar dissolves and mixture is hot but not boiling, 3 to 5 minutes. Remove from heat; stir in gelatin mixture, then buttermilk and vanilla. Pour into four 4- or 6-ounce ramekins or custard cups; chill until set, 3 hours.
  • Make the sauce: Puree raspberries, sugar, and lemon juice in blender. Strain through sieve into bowl, pressing with a spatula. Adjust consistency with water, if necessary.
  • To remove, dip each ramekin in hot water. Invert onto serving plate; shake gently until custard releases. Spoon sauce around custard; garnish with raspberries.

1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup well-shaken buttermilk
1 cup fresh raspberries (about 5 ounces)

Steps:

  • Preheat oven to 400°F with rack in middle. Butter and flour a 9-inch round cake pan.
  • Whisk together flour, baking powder, baking soda, and salt.
  • Beat butter and 2/3 cup sugar with an electric mixer at medium-high speed until pale and fluffy, about 2 minutes, then beat in vanilla. Add egg and beat well.
  • At low speed, mix in flour mixture in 3 batches, alternating with buttermilk, beginning and ending with flour, and mixing until just combined.
  • Spoon batter into cake pan, smoothing top. Scatter raspberries evenly over top and sprinkle with remaining 1 1/2 tablespoons sugar.
  • Bake until cake is golden and a wooden pick inserted into center comes out clean, 25 to 30 minutes. Cool in pan 10 minutes, then turn out onto a rack and cool to warm, 10 to 15 minutes more. Invert onto a plate.

1 prepared 8-inch graham-cracker crust
1 large egg white, beaten until frothy
2/3 cup packed light-brown sugar
3 tablespoons all-purpose flour
3 large eggs
1 1/4 cups low-fat buttermilk, well shaken
3 tablespoons unsalted butter, melted
1/4 teaspoon salt
Raspberry sauce

Steps:

  • Preheat oven to 350 degrees. Place crust (in its pan) on a baking sheet. Brush crust lightly with some egg white; discard remainder. Bake until crisp and slightly darkened, 6 to 8 minutes. Set aside to cool.
  • Make the Filling: In a food processor, process sugar and flour until well combined. Add eggs; process until smooth. Add buttermilk, butter, and salt; process just until blended. Pour into crust.
  • Make the Raspberry Sauce: Combine raspberries, sugar, and lemon zest in a bowl. Lightly mash about half the raspberries with a fork. Let sit at least 10 minutes to allow juices to release.
  • Bake until filling is almost set but center still jiggles slightly when pan is gently shaken, 35 to 40 minutes.
  • Transfer pie to a rack; cool completely. Cover, and refrigerate at least 2 hours and up to 2 days. To serve, slice pie and drizzle slices with raspberry sauce.
