This is my Omas recipe that she got from her mom, which she took with her when she fled Russia during the fall of the Czar. It's a real Mennonite soup.

2 pounds beef soup bones
2 quarts water, or more as needed
12 carrots, chopped
6 potatoes, cubed
1 head cabbage, finely chopped
3 onions, minced
1 ½ tablespoons chopped fresh parsley
10 whole allspice berries
1 bay leaf
½ star anise
1 teaspoon salt
1 pinch ground black pepper
1 ½ cups chopped tomato
½ cup heavy cream

Steps:

  • Bring beef soup bones and water to a boil in a large pot over medium-high heat. Reduce heat and simmer for 1 1/2 hours, adding more water, as necessary, to maintain the 2 quart level. Remove and discard the soup bones, then strain the broth into a fresh pot, and return to the stove.
  • Stir in the carrots, potatoes, cabbage, onions, parsley, allspice berries, bay leaf, star anise, salt, and pepper. Cook until the potatoes are easily pierced with a fork, about 20 minutes. Stir in tomatoes and return soup to a boil. Serve individual bowls of soup topped with heavy cream.

9 cups water
1 Spanish onion, sliced
1 carrot, sliced
1 large cabbage, shredded
2 medium potatoes, peeled and sliced
1 (19 ounce) can tomato juice
1 (28 ounce) can tomatoes
1/2 cup sugar, more if you like it sweet
1/2 cup white vinegar
2 tablespoons butter
2 bay leaves
1/2 teaspoon caraway seed
2 tablespoons chopped parsley (I use dried)
salt and pepper

Steps:

  • Put all ingredients in water, in large pot.
  • Bring to a boil, lower heat and simmer 1 hour, or until vegetables are tender.
  • Season well with salt and pepper.
  • Let sit overnight in refrigerator,this improves the flavor.
  • Remove bay leaf and then reheat.
  • This freezes well.

This is my favourite soup. It's my friend Judy's mothers recipe. I have changed it slightly to accommodate my family's taste. This is very easy to make and keeps well.

2 -3 lbs blade steaks (cooked and shredded, You may use blade or crossrib roast or steak)
3 cups cold water
2 (28 ounce) cans tomato juice
1 large cabbage, cut into bite size pieces
1 large onion, chopped
3 large carrots, chopped
3 potatoes, peeled and cubed
1 teaspoon salt
1 teaspoon pepper
2 lemons, juice of
4 tablespoons sugar

Steps:

  • Place roast or steak in a big pot.
  • Cover meat completely with water.
  • Cover with lid and let come to a boil.
  • After water is boiling, reduce heat to simmer and cook until meat is tender and shreds easily.
  • Remove meat from pot and shred with fork.
  • Leave water in pot and add 2 large cans of tomato juice, cabbage, onion, carrots, potatoes and shredded meat.
  • Season with salt and pepper, add lemon juice and sugar to taste.
  • Cook on low heat 1- 1 1/2 hours-- until all vegetables are cooked-- you may re season with more lemon, sugar or salt and pepper as needed to taste-- Serve with lots of rye bread-- enjoy.

4 cups unsalted chicken stock
1 cup dry white wine
1 pound (about 6 cups) Savoy or green cabbage, cored and shredded
1 large (about 8 ounces) beet, peeled and cut into fine julienne
1 small red onion, peeled and thinly sliced
1 tablespoon balsamic vinegar
Generous pinch of ground cumin
Salt and freshly ground black pepper to taste
Unflavored yogurt or sour cream (about 1/2 cup)

Steps:

  • Place the chicken stock, wine, cabbage, beets and onion in a large pot. Bring to a boil, reduce heat and simmer until vegetables are tender, for about 30 minutes, stirring occasionally. Add the vinegar, cumin, salt and pepper. (This can be prepared ahead, cooled, covered and set aside at cool room temperature for several hours or refrigerated for several days.) To serve, remove from the refrigerator for about 30 minutes before serving if presenting chilled. Simmer over medium-high heat to reheat if presenting warm. Ladle into 4 soup bowls. Spoon on a generous dollop of yogurt. Serve immediately.

An elderly lady residing in Turkey served this to a friend of ours while he was in that country several years ago. She has since passed away, but her recipe lives on. It is the best Borscht recipe I've ever enjoyed. Serve topped with sour cream, extra dill weed, chopped fresh tomatoes.

1 ½ cups thinly sliced potatoes
1 cup thinly sliced beets
4 cups vegetable stock or water
2 tablespoons butter
1 ½ cups chopped onions
1 teaspoon caraway seed
2 teaspoons salt
1 celery stalk, chopped
1 large carrot, sliced
3 cups coarsely chopped red cabbage
black pepper to taste
¼ teaspoon fresh dill weed
1 tablespoon cider vinegar
1 tablespoon honey
1 cup tomato puree
sour cream, for topping
chopped tomatoes, for garnish

Steps:

  • Place sliced potatoes and beets in a medium saucepan over high heat; cover with stock, and boil until vegetables are tender. Remove potatoes and beets with a slotted spoon, and reserve stock.
  • Melt butter in a large skillet over medium heat. Stir in onions, caraway seeds, and salt; cook until onions become soft and translucent. Then stir in celery, carrots, and cabbage. Mix in reserved stock; cook, covered, until all vegetables are tender, about 10 minutes.
  • Add potatoes and beets to the skillet. Season with black pepper and dill weed. Stir in cider vinegar, honey, and tomato puree. Cover, reduce heat to medium low, and simmer at least 30 minutes. Serve topped with sour cream, extra dill weed, and chopped fresh tomatoes.

When I made friends, I found that many people had heard of Borscht, a traditional soup made with fresh beets, but few knew how to cook it. 8 cups water
1 pound beef shanks
5 whole peppercorns
2 bay leaves
1 teaspoon salt
1/2 teaspoon dill weed
3 medium uncooked beets, peeled and shredded
2 tablespoons vegetable oil, divided
2 teaspoons white vinegar
2 medium potatoes, peeled and cubed
2 medium carrots, sliced
1 cup shredded cabbage
2 tablespoons minced fresh parsley
1 medium onion, chopped
1 tablespoon all-purpose flour
2 medium tomatoes, chopped
1/2 cup sour cream

Steps:

  • Place the first six ingredients in a large soup kettle or Dutch oven; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until beef is tender. Meanwhile, in a skillet, saute beets in 1 tablespoon oil for 3 minutes. stir in vinegar; set aside. Remove beef with a slotted spoon; cool. Remove meat from the bones; discard bones. Cut meat into chunks; set aside. strain broth, discarding peppercorns and bay leaves. Skim fat. Add enough water to broth to measure 6 cups; return to kettle. Add potatoes, carrots, cabbage, parsley and beets. Bring to a boil., In a skillet, saute onion in remaining oil for 5-7 minutes or until tender. Sprinkle with flour; stir until blended. Whisk into soup. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. add tomatoes. process soup in small batches in a blender or food processor; pour into a large saucepan. Add beef; heat through. Garnish with sour cream.

a 16-ounce jar whole beets, drained, reserving the liquid, and shredded
1 to 2 tablespoons red-wine vinegar, or to taste
sour cream or plain yogurt for garnish if desired
minced fresh dill for garnish if desired

Steps:

  • In a large saucepan cook the onion in the oil over moderately low heat, stirring, until it is softened, add the garlic, the cuminseed, the cabbage, and the potato, and cook the mixture, stirring, for 1 minute. Add the broth, 1/2 cup water, the beets with the reserved liquid, the vinegar, and salt and pepper to taste, bring the liquid to a boil, and simmer the soup, covered partially, for 25 minutes. Divide the soup between 2 bowls and garnish it with the sour cream and the dill.

Every Ukrainian family has its own style of borsch. (That's the Ukrainian word; Russians spell it borscht.) Olga Koutseridi, who grew up in Mariupol, is a historian and collector of Ukrainian recipes; she's documented more than 70 recipes, including her mother's "tomato-centric and cabbage-centric" borsch, as well as this version often eaten in Mariupol. Borsch with fish is traditional in southern Ukraine, where Black Sea ports like Mariupol and Odessa have relied on fishing since ancient times. Modern cooks often use canned versions of local species like anchovies, gobies and sprats. With bell peppers and carrots along with the usual beets and cabbage, this soup is hearty and chunky, but also very light.

2/3 cup dried cannellini beans, rinsed (see Tip)
3 bay leaves
1/2 tablespoon salt, plus more to taste
1 medium beet, peeled
1 large carrot
1 onion, any kind (except sweet)
1 medium red bell pepper
4 medium potatoes (peeled or unpeeled)
1 small bunch dill
1/2 small head cabbage (¾ pound)
3 tablespoons olive oil
1 1/2 teaspoons granulated sugar
2 cups tomato juice
1 to 2 (8-ounce) cans sprats in tomato sauce, or sardines in tomato sauce
Sourdough bread (preferably 20 percent whole wheat or rye) rubbed with garlic, for serving

Steps:

  • Place the beans in a medium bowl and add enough water to cover by 4 inches. Let soak for at least 3 hours and up to overnight. Drain and rinse the beans. Fill a large pot or Dutch oven with 8 cups of water, add the soaked beans, bay leaves and salt, and bring to a boil over high. Reduce the heat and let simmer until the beans are tender, 30 minutes to 1½ hours, depending on soaking time and age of beans.
  • While the beans cook, use the large holes of a box grater to shred the beet, then the carrot. Finely dice the onion and bell pepper. Cube the potatoes into medium pieces. Chop the dill. Shred the cabbage using a knife.
  • Heat 2 tablespoons oil in a large skillet over medium. Add the shredded beets, sprinkle with the sugar and cook, stirring frequently, for 5 minutes, then add the carrot and cook until tender, stirring occasionally, about 10 minutes. Transfer to a bowl and wipe out the pan.
  • Add the remaining 1 tablespoon oil and the onion and cook, stirring occasionally, until tender and lightly browned, 5 to 10 minutes. Pour the tomato juice into the pan, bring to a boil, then reduce the heat and simmer for 2 minutes.
  • Once the beans are done cooking, add the potatoes and the beet-carrot mixture to the pot, bring to a boil over high, then reduce the heat and simmer until the potatoes are tender, about 15 minutes. Add the bell pepper and onion-tomato mixture. Let simmer for 10 minutes, then add the cabbage to the pot along with the sprats and dill, and let simmer for another 5 minutes.
  • Turn off the heat, cover the pot and let sit for 20 minutes to let all the flavors mingle. Remove and discard the bay leaves and adjust salt level as desired. Enjoy warm or at room temperature. Serve with a side of sourdough bread rubbed with garlic.

  • Ladle soup into bowls. Top with dollop of sour cream; sprinkle with parsley. Serve, passing lemon wedges separately.
