SPICY CAJUN CABBAGE

Spicy Cajun Cabbage image

I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

These chicken drumsticks are packed with flavor yet they are easy to prepare. The addition of baking powder will help crisp up the skin. I prefer to make my own Cajun spice mix but feel free to use store-bought Cajun mix.

FRIED CUCUMBERS

Fried Cucumbers image

A recipe from a local guy who does a produce show on our local news. I haven't tried this yet, but it looks interesting.

Provided by Aggiezoey

Categories     Vegetable

Time 20m

Yield 1 bunch

Number Of Ingredients 7

2 -4 cucumbers
2 -3 eggs
2 -3 tablespoons milk
1 -2 cup flour or 1 -2 cup breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup parmesan cheese

Steps:

  • Note - the orginal recipe didn't have ingredient amounts. When I submitted the recipe, Zaar wouldn't take it without amounts, so I just estimated. I haven't tried this recipe, and I'm just posting as a request from one of the message board topics. So go easy on the ratings and please provide tips.
  • Select cucumbers that are firm and preferably thin-skinned and small-seeded.
  • Peel, if you wish, slice into 1/8" slices and dip in beaten egg mixture (the eggs with milk). Dredge in flour or preferably Italian seasoned bread crumbs.
  • Fry in margarine or vegetable oil till browned on both sides.
  • Drain on a paper towel, salt and pepper and top with Parmesan cheese. A great appetizer or side dish.
  • Note - hot sauce in the egg mixture or cayenne in the flour or breadcrumbs might kick it up a bit.

STIR-FRIED CUCUMBERS

Stir-Fried Cucumbers image

An inexpensive Chinese side dish. It is very quick to cook. I make this often, and sometimes add a chopped onion together with the cucumbers. The black beans I buy in an Asian supermarket, they are soya beans and salted. The recipe is from a Ken Hom cookbook

Provided by PetsRus

Categories     Vegetable

Time 50m

Yield 4 serving(s)

Number Of Ingredients 8

1 1/2 lbs cucumbers
2 teaspoons salt
1 tablespoon oil
1/4 teaspoon chili bean sauce or 1/4 teaspoon chili powder
4 cloves garlic, finely chopped
1 1/2 tablespoons black beans, coarsely chopped
4 fluid ounces water
1 1/2 teaspoons sesame oil

Steps:

  • Peel the cucumbers, cut them in half lengthways and remove the seeds using a teaspoon.
  • Cut the cucumber in 1 inch cubes, put them in a colander, sprinkle with the salt, mix and let them stand for about 20 minutes to drain excess liquid.
  • Then rinse them in water and dry them with kitchen paper.
  • Heat a wok, then add the oil, when the oil is hot adding the bean sauce, garlic and black beans, stir-fry for 30 seconds.
  • Now add the cucumbers, fry them until coated with the spices, add the water and go on stir-frying for several minutes on a high heat until most of the water has evaporated.
  • Add the sesame oil, mix and serve.

CAJUN-FRIED CAULIFLOWER

Cajun-Fried Cauliflower image

This recipe originally came from my Cajun great grandmother. She didn't speak any English, but her cooking always received that universally understood "Mmmm!" I have modernized the recipe, by using purchased crab-boil and Cajun seasoning, instead of her multitude of mixed spices. (Prep. and cook times are a "guesstimate").

Provided by Berts Kitchen Witch

Categories     Cauliflower

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 8

1 head cauliflower
3 ounces crab boil seasoning (net-bag kind)
1/2 tablespoon salt
4 eggs (well beaten)
1/3 cup lemon juice
4 cups dry breadcrumbs
1 1/2 tablespoons cajun seasoning (Tony Chachere's or Emeril's Essence)
24 ounces cooking oil

Steps:

  • Wash head of cauliflower.
  • Place cauliflower in a large pot with enough water to cover.
  • Add the bag of crab-boil, and the salt to the water.
  • Bring to a boil; cook for about 8-10 minutes, or until cauliflower becomes "fork tender".
  • When cauliflower becomes tender, remove from heat and allow cauliflower to "soak" in the spice for about 3-5 minutes (the longer it soaks, the spicier it gets).
  • Remove cauliflower from the water and drain.
  • Cut cauliflower into florets.
  • Place breadcrumbs in a large bowl and mix in the Cajun seasoning.
  • Mix together the beaten eggs and the 1/3 cup lemon juice.
  • Heat enough oil to deep fry the cauliflower to 350°F.
  • Coat each floret in the egg mixture, and then dredge in the breadcrumbs.
  • Deep fry until breadcrumbs turn golden brown, about 2-3 minutes.
  • Drain well on paper towels.
  • Serve with your favorite dipping sauces if desired.
