- Brown beef and onion in a large saucepan until meat is no longer pink. Add potatoes, bouillon and water to cover.

- In a large bowl, combine ham and onion. Shred potatoes and add to ham mixture. Stir in the butter, Parmesan cheese, mustard, Worcestershire sauce, horseradish and pepper. , Spoon into a greased 11x7-in. baking dish, pressing down firmly. Combine cheeses; sprinkle over top. Bake, uncovered, at 350° for 35-40 minutes or until bubbly and cheese is melted.

- Saute onions in oil and butter over medium high heat until golden.
- Add ham, potatoes, oregano, thyme, and cajun seasoning.
- Cover and cook over medium heat 8 minutes.
- Remove cover, add green chilis and cook until potatoes are tender and browned and crusty.
- Stir, scraping up browned bits and adding more oil if necessary.
- Add green onions, adjust seasonings and cook 2 minutes.

Uncover and continue cooking until potatoes are tender and crusty, occasionally scraping up browned bits, adding more oil by tablespoonfuls if potatoes are sticking, about 7 minutes longer. Mix in remaining 1/2 cup green onions. Season with salt and pepper.
CORNED BEEF AND HAM HASH
I love fresh corned beef hash but we never have enough corned beef left when I make a brisket. So this time I saved enough and still had a bandit that left me with not enough! However, I have recently made a half ham so added the ham instead of going without. Worked out well, still had the corned beef flavor and a few hints of the sweet ham.

Steps:
- Pierce potatoes with a fork and microwave on high until tender, about 5 minutes. Remove from the microwave and chop when cool enough to handle.
- Heat butter and olive oil in a skillet over medium heat. Add onion and garlic and cook until translucent, about 5 minutes.
- Add chopped potatoes, cover, and cook for 5 minutes. Stir in corned beef and ham and season with salt and pepper. Cook until potatoes are crispy on the bottom, about 5 more minutes.
- While the potatoes are cooking, crack eggs into a nonstick skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.
- Plate the potato mixture and place fried eggs on top.

- In a large skillet, cook hash browns in butter until almost tender. Stir in onions, peppers and seasonings. Cook until hash browns are lightly browned and peppers are tender. Add corned beef; heat through., Meanwhile, place 2-3 in. of water in a large skillet with high sides; add vinegar. Bring to a boil; reduce heat and simmer gently. Break cold eggs, one at a time, into a custard cup or saucer; holding the cup close to the surface of the water, slip egg into water. , Cook 4 eggs, uncovered, until whites are completely set, about 4 minutes. With a slotted spoon, lift each egg out of the water. Repeat with remaining eggs., Serve over hash mixture. Sprinkle with additional Cajun seasoning and serve with hot pepper sauce if desired.

- Heat oven to 400F degrees.
- Spread the potatoes single layer on a baking sheet.
- Sprinkle with the paprika, chili, cajun spice and then drizzle with the olive oil.

- Preheat a 12” or larger heavy-bottomed skillet (cast iron if you have it,) over medium-high heat then drizzle in enough extra virgin olive oil to coat the bottom. Add sausage then saute until lightly browned, 4-5 minutes. Remove to a plate then set aside.
- Turn heat down to medium then add enough extra virgin olive oil to once again coat the bottom of the skillet. Add potatoes, season with Old Bay, then saute, stirring occasionally, until potatoes are lightly browned, 10 minutes, adding more extra virgin olive oil if potatoes begin to burn.
- Add more extra virgin olive oil to the skillet with bell pepper, onion, and mushrooms then season with more Old Bay. Saute until vegetables are tender while stirring occasionally, 20-25 minutes, turning the heat down and/or adding more extra virgin olive oil if needed. Taste along the way, adding more Old Bay and/or salt as needed. Add sausage back into the skillet then stir to reheat.
- Meanwhile, heat another large skillet over medium heat then spray with nonstick spray. Cook eggs according to your preference (scrambled, over easy, sunny side up, etc.) then scoop hash onto plates and top with eggs.
