1 jar (12 oz) roasted red bell peppers, drained, chopped
1/2 cup Italian dressing
1/2 cup Original Bisquick™ mix
1 tablespoon salt-free Cajun seasoning
1 1/4 lb uncooked large shrimp, peeled, deveined
3 tablespoons butter
2 cups shredded provolone cheese (8 oz)
Chopped fresh parsley, if desired

Steps:

  • Lightly spray 4 (12-oz) individual baking dishes (ramekins) with cooking spray. In medium bowl, mix tomatoes, roasted peppers and dressing. Divide evenly among baking dishes.
  • In shallow bowl, stir together Bisquick mix and Cajun seasoning. Coat shrimp with mixture. In 10-inch nonstick skillet, melt half of the butter over medium heat. Add half of the shrimp; cook 3 to 5 minutes, stirring constantly, until shrimp are pink. Repeat with remaining butter and shrimp. Spoon shrimp over tomato mixture in each baking dish.
  • Set oven control to broil. Sprinkle 1/2 cup of the cheese over shrimp in each baking dish. Broil with tops 5 inches from heat 3 minutes or until cheese is melted and light golden brown. Garnish with parsley.

Spicy Shrimp and Tomatoes with Scallion Rice image

The sauce for these shrimp is made by simply tossing quickly sauteed tomatoes and shrimp in a bowl with what is known as compound butter: room temperature butter that has been flavored by mashing in something tasty like herbs or seasoning--in this case, lemon zest and hot sauce. You can make the butter and cook the shrimp and tomatoes in the time it takes to cook the rice.

6 tablespoons unsalted butter
3 scallions, sliced, whites and greens kept separate
1 cup medium-grain white rice
Kosher salt
1 bay leaf
1 lemon
2 to 3 teaspoons hot sauce, plus more for serving
1/4 cup lightly packed fresh parsley leaves, roughly chopped
1 pound large peeled and deveined shrimp, tails removed
Freshly ground black pepper
2 tablespoons olive oil
1 pint grape tomatoes (about 20)

Steps:

  • Melt 2 tablespoons of the butter in a medium saucepan over medium heat; add the scallion whites and cook, stirring occasionally, until soft and translucent, about 3 minutes. Add 1 1/2 cups water, the rice, 1/2 teaspoon salt and the bay leaf, increase the heat to medium high and bring to a simmer. Stir a few times, cover, reduce the heat to low and simmer until the rice is tender and the water is absorbed, about 17 minutes. Remove from the heat and set aside.
  • Meanwhile, zest the lemon into a large mixing bowl and add the remaining 4 tablespoons butter, the hot sauce and a pinch of salt. Stir until well combined. Gently stir in half of the parsley, reserving the remaining parsley for garnish. Cut the zested lemon into wedges and reserve.
  • Sprinkle the shrimp liberally with salt and pepper. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the tomatoes and some salt and cook, shaking the skillet frequently, until the tomatoes just start to pop, about 5 minutes. Transfer to the mixing bowl with the butter. Heat the remaining 1 tablespoon olive oil in the skillet. Add the shrimp and cook until the bottoms turn pink, about 1 1/2 minutes; flip and cook until just cooked through, about 1 minute more. Add the shrimp to the tomatoes and toss gently to coat everything with the butter and mush the tomatoes a bit more.
  • Fluff the rice and stir in the scallion greens. Divide the rice among 4 dinner plates, top with the shrimp, tomatoes and sauce, scatter the remaining parsley leaves over the top and put a lemon wedge on each plate. Serve immediately, with extra hot sauce.

  • Add the tomatoes and scallions to the skillet and cook, stirring, about 1 minute. Add the rice and 1/4 cup water and continue to cook until the rice is warmed through and the shrimp are opaque, about 3 more minutes. Stir in the parsley and serve with lemon, if desired.

Test kitchen tip: Always heat cooking oil in the pan before adding other ingrdients, and swirl pan to coat bottom evenly. Steps:

  • Butterfly shrimp by making a deep slit down back of each from large end to tail, cutting to but not through inside curve of shrimp.
  • Cook onions in hot oil in a large Dutch oven over medium heat, stirring often, 35 to 40 minutes or until golden brown. Add tomato sauce, and cook, stirring occasionally, 25 to 30 minutes or until thickened. Add diced tomatoes with green chiles, celery, bell peppers, and 2 cups water.
  • Bring to a boil over medium-high heat; reduce heat to medium, and simmer 30 minutes or until sauce thickens slightly. Add 3 garlic cloves, and simmer 30 minutes, stirring in 1 to 2 cups of water as needed to maintain a stew-like consistency. Stir in sausage, and simmer 30 minutes, stirring in 1 to 2 cups water as needed. Skim grease from surface as needed.
  • Meanwhile, prepare rice according to package directions.
  • Stir green onions, parsley, Cajun seasoning, and remaining 3 garlic cloves into sausage mixture. Simmer 10 minutes. Add shrimp, and bring to a boil over medium-high heat.
  • Stir together 1/4 cup cornstarch and 1/2 cup water. Stir into shrimp-and-sausage mixture, stirring just until mixture is thick and glossy. Serve with hot cooked rice.
