TURKEY CALIFORNIA CLUB SALAD
Steps:
- Place turkey breast filets into a plastic storage bag.
- Add in marinade ingredients and let sit for 15 minutes in the refrigerator.
- Preheat oven to 400 degrees.
- Place turkey bacon sliced on a baking sheet and bake for about 10 minutes or until desired crispness in reached.
- Heat 2 teaspoons olive oil over medium heat in a skillet.
- When turkey breast cutlets are finished marinating place into skillet.
- Cook turkey cutlets 11-13 minutes turning every few minutes until turkey is cooked through and reaches an internal temperature of 165 degrees F.
- Slice turkey cutlets.
- Assemble salad either in one large bowl or divided into two medium bowls. (makes two servings)
- Place all dressing ingredients into a food processor.
- Process dressing until smooth.
- Top salad with dressing.
- Serve immediately.
CHINESE TURKEY SALAD

- For the turkey: In a 4 or 5-quart saucepan, combine the chicken broth, soy sauce, orange juice, garlic and ginger. Add the turkey, breast-side down, and bring the mixture to a boil over medium-high heat. Reduce the heat to a simmer, cover the pan and cook until a meat thermometer inserted into the thickest part of the breast registers 165 degrees F, 45 to 50 minutes. Let the turkey cool for 20 minutes. Using 2 forks, shred the meat into 2-inch pieces.
- For the wontons: In a heavy, medium saucepan, heat the vegetable oil over medium heat until a deep-fry thermometer registers 375 degrees F. (If you don't have a thermometer, a cube of bread should brown in about 4 minutes.) Add the wontons and fry until golden, 30 to 45 seconds. Drain on paper towels. Set aside.
- For the dressing: In a medium bowl, whisk together the grapeseed oil, soy sauce, vinegar, maple syrup, orange juice, sesame seeds, 1 1/2 teaspoons salt and 1/2 teaspoon pepper until smooth. Season with additional salt and pepper, if needed.
- For the salad: In a large salad bowl, toss together the almonds, romaine, iceberg lettuce, Napa cabbage, scallions and bell pepper. Add the dressing and the shredded turkey and toss until coated. Garnish with the fried wontons and serve.
CRUNCHY TURKEY SALAD

ANNIE'S TURKEY SALAD
This recipe can be made with leftover turkey, or a turkey breast. It is my great-grandmother's recipe. The cook time will not include the baking of the turkey, just making the salad. Keeping the salad somewhat chunky is part of what makes it good. No food processors, please. I serve this on a bed of red leaf lettuce and garnish with red and green seedless grapes and pecan halves. Cubed jellied cranberry sauce is very good with it, so I place that on the plate around the salad. Serve with assorted crackers or breads.

- Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- In a large bowl, thoroughly mix the eggs, turkey, pickles, prepared sandwich and salad sauce and mayonnaise. Chill in the refrigerator approximately 3 hours before serving.

- Cook the rotini according to package directions; drain in cold water.
- Chop up the turkey in small cubes.
- Do not defrost the peas or corn--I put them in the salad frozen.
- Make sure the onion is chopped very fine.
- Chop the eggs and mix this all together in a large bowl.
- Mix all the dressing ingredients together; add the salt and pepper.
- Add the dresssing to the rotini mixture and chill. I never get to chill this much, as DH loves it.

Steps:
- Mix dressing, lemon juice, and tarragon in small bowl. (Can be made 1 day ahead. Cover and refrigerate.)
- Toss spinach in large bowl with enough dressing to coat. Divide among 4 plates. Top each salad with turkey, tomatoes, and bacon. Sprinkle with croutons.
