CANNED APRICOTS WITH ORANGE PINEAPPLE SYRUP
Had a whole lug of fresh apricots, 26#s decided to make a flavored sugar syrup. Very easy. Makes 12-14 quarts or approx. 24-26 pints. Flavored syrup can be frozen and added to ice tea or lemonade.

Steps:
- Wash jars in hot soapy water. Rinse well.
- Turn oven to 250 degrees. Place jars upside down in 9X13 pan and place in oven. Pour hot water around the jars, about an 1 1/2 inchs.
- In water bath canner, add water half full.
- Place rack on the canner above the water. Put lid on and heat.
- In large stock pot mix lemon juice, sugar, pineapple juice, orange jello and hot water. Stir until dissolved.
- Heat moderate heat until hot, add apricots and gently stir until hot.
- Heat seals in a separate saucepan of hot water.
- Fill hot jars leaving 2 inches of head room. Use a knife blade to go on each side of jar to eliminate air pockets.
- Wipe rim and sides of jar with a clean hot wet cloth. Place seal on jar and screw on ring tight. Place in the rack in canner.
- Do this with each jar. I like to load the apricots and top off with hot syrup.
- Lower rack into canner, place lid. When water comes to a rolling boil over the jars, time for 20 minutes. Lift out rack.
- and place jars carefully on towelled counter out of drafts. When you hear the "pop" the jars have sealed.
- You may also turn them upside down and leave them. They will seal from the pressure also.
- You may freeze the additional syrup in ice cups and add to lemonade or ice tea.

APRICOT ORANGE SYRUP WITH AMARETTO
My parents have an apricot tree, so I've eaten fresh apricots all my life. I'm used to eating them fresh only, but I recently purchased some apricots that ripened very quickly. I wanted to make a jam or syrup out of them and couldn't find what I wanted, so I made something up. The result is a very sweet, thick syrup. Leave out the amaretto if you don't use it in cooking.

Steps:
- Mix together the apricots, sugar, vanilla extract, orange juice, and amaretto liqueur in a saucepan over medium heat, stirring until the sugar has dissolved. Bring to a boil, and cook, stirring constantly, until the apricots are soft and have started to release their juice, about 5 minutes. Reduce heat to low, and simmer until the apricots have broken down, about 1 1/2 hour. If mixture is too thick or begins to burn, stir in 1 tablespoon of water and mix well.
- Stir cornstarch into 1/4 cup water, and pour into the apricot mixture. Bring to a boil, and simmer until the mixture forms a thick syrup, about 30 more minutes.

PINEAPPLE-APRICOT JAM
I had all these apricots and cans of pineapple and since I was in the mood for making jelly and jam, I looked around the net and found this recipe. It is amazingly wonderful. My son-in-law fell in love with it.

Steps:
- Wash four 1/2 pint jars, lids and bands in hot soapy water, rinse well with warm water.
- Submerge in boiled water, off heat, until ready to use.
- Mix pineapple with syrup, apricots, and sugar in large pan.
- Bring to boil, stirring occasionally, reduce heat and simmer 10 minutes.
- Stir in gelatin and simmer 10 minutes longer, stirring occasionally.
- Skim off an foam with metal spoon.
- Ladle quickly into prepared jars, filling to within 1/8 inch of top.
- Wipe jar rims and threads with wet cloth.
- Cover jars with lids and screw bands on tightly.
- For water bath, place jars in boiling water for 10 minutes. Water should be 1-2 inches above jars.
- Allow to cool and check lids. They should be concave and not pop up when pressed in the center.
- Refrigerate after cooling if not using the water bath.
