COLD CANTALOUPE AND MINT SOUP

Steps:
- With a vegetable peeler remove zest from lime in strips. In a saucepan simmer water, zest, mint, and sugar, stirring occasionally, 5 minutes. Remove pan from heat and let mixture stand 15 minutes. Pour mixture through a sieve into a bowl, pressing hard on solids, and discard solids. Cool syrup to room temperature.
- Halve and seed cantaloupe. Working in 2 batches, scoop flesh into a blender and purée with syrup until smooth, transferring to a large bowl as pur ed. Stir in wine. Chill soup, covered, until cold, at least 2 hours, and up to 1 day. Skim any foam from top. Serve soup garnished with mint.

CUCUMBER VODKA COOLER

- To make simple syrup, bring the sugar and 1/2 cup water to a simmer in a saucepan on medium heat, then turn off the heat and let cool to room temperature.
- In a tall thermos, add the cucumbers, mint and simple syrup. Stir with the handle of a wooden spoon. Add the lime juice and vodka, then cover and shake vigorously for about 30 seconds. Chill until ready to serve.
- Pour over ice in glasses, then top off with the club soda. Serve immediately.
FRESH MINT CANTALOUPE COOLER
This is my favorite new way to enjoy summer cantaloupe. And it's a great way to cool off in summer! Growing mint is rather easy too. We have some in a large pot, and it comes back each year in full force with almost no effort on our part.
