2 teaspoons instant coffee granules
1/4 teaspoon ground cinnamon
1-1/2 teaspoons hot water
3/4 cup cold 2% milk
1/3 cup instant chocolate pudding mix
1/2 cup whipped topping
1/4 cup cream-filled chocolate sandwich cookie crumbs
2 tablespoons chopped walnuts

Steps:

  • In a small bowl, dissolve coffee granules and cinnamon in hot water; set aside. In another small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in whipped topping and coffee mixture., In each of two parfait glasses, layer 3 tablespoons pudding mixture, 2 teaspoons cookie crumbs and 1-1/2 teaspoons walnuts. Repeat layers. Top each with 2 tablespoons pudding mixture and 2 teaspoons crumbs. Chill until serving. ,

1 pound non-tempering chocolate, coarsely chopped
20 chocolate pastilles (small, chocolate disks in candy-making shops)
Cognac Caramel Ganache, recipe follows
Coffee Ganache, recipe follows
White Chocolate Ganache, recipe follows
Cocoa powder, for garnish

Steps:

  • Place the non-tempering chocolate in the top of a double boiler over hot, but not quite simmering, water. Melt the chocolate, stirring until it is smooth. Remove the boiler from the heat. Pour the chocolate into 1/2-inch circular molds and prepare the molds as directed on the chocolate packaging (reserve some melted chocolate for making the handle as directed below). Once hardened, pop the cups out of the mold.
  • To make the handle of the coffee cup, put some melted chocolate in a pastry bag. Using a fine-point tip, pipe out a "C" for each mug on a piece of waxed paper. Allow the chocolate to harden.
  • Using a fine point tip, pipe out a dollop of melted chocolate onto each pastille and place a cup on each to glue them together, making a coffee cup shape. Do the same for each handle and allow to harden.
  • Place the 3 ganaches in 3 different pasty bags. Using a circular motion, pipe 1/3 of the Cognac Caramel Ganache in the bottom of each mug. Next, pipe the Coffee Ganache up to the top of the mug. Then, pipe the White Chocolate Ganache on top. Dust each cup lightly with cocoa powder and serve.
  • 1/4 cup water
  • 1 1/2 tablespoons corn syrup
  • 2/3 cup sugar
  • 1/2 cup heavy cream
  • 2 tablespoons Cognac
  • Heat a medium saucepan over high heat. Add the water, corn syrup, and sugar and bring the mixture to a boil. Do not stir the mixture once the sugar begins to boil. When the sugar begins to caramelize on the sides, remove the pan from the heat and slowly stir until the color is a medium brown. Carefully add the heavy cream and stir; then add the cognac and stir until well blended. Store the ganache at room temperature until ready to use.
  • 1/2 cup heavy cream
  • 1 tablespoon instant coffee
  • 1 cup chopped white chocolate
  • 1 tablespoon coffee liqueur
  • 1/2 teaspoon coffee extract
  • Heat a medium saucepan over medium-high heat. Add the heavy cream and instant coffee and slowly bring to a simmer. Put the white chocolate in a bowl and pour the hot cream over the chocolate and stir. Add the coffee liqueur and stir well; then add the coffee extract and stir until it is blended. If you need to melt the chocolate more, use a double boiler (as described above).
  • 1/2 cup heavy cream
  • 3/4 cup chopped white chocolate
  • Heat a medium saucepan over medium-high heat. Add the heavy cream and slowly bring to a simmer. Put the white chocolate in a bowl and pour the hot cream over the chocolate, stirring until it is melted.

1 tablespoon hot water
1 1/2 cups cold milk
1 (3 ounce) package jell-0 pudding (vanilla or chocolate)
1/2 teaspoon ground cinnamon
1 cup Cool Whip (thawed)
3 chocolate wafer cookies, crushed

Steps:

  • Dissolve coffee in hot water in medium bowl.
  • Add milk, pudding mix and cinnamon.
  • Beat with whisk about one or two minutes.
  • Let stand for at least five minutes or until thickened.
  • Gently stir in whipped topping.
  • Scoop 1/2 pudding mixture into 5-6 dishes.
  • Sprinkle with crushed cookies.
  • Spoon remaining pudding mixture over crushed cookies.
  • If you want you can put spoon some more cool whip over the top.

4 tablespoons unsalted butter, melted, plus more for the pan
2/3 cup granulated sugar
1 tablespoon instant espresso powder
1 batch Basic Sweet-Roll Dough, recipe follows, without nutmeg
1 1/4 cups confectioners' sugar
1 tablespoon instant espresso powder
1/4 cup plus 2 tablespoons heavy cream, plus more if needed
1/2 cup whole milk
1 1/4 -ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Make the knots: Put the melted butter in a bowl. Whisk the granulated sugar and espresso powder in another bowl.
  • Butter a 12-cup muffin pan. Divide the dough into 12 pieces; roll each piece into an 8-to-9-inch rope. Dip 1 piece of dough in the butter, letting the excess drip off, then roll in the espresso sugar. Tie the dough into a knot. Place in a muffin cup with one end of the knot facing up. Repeat with the remaining dough. Let rise, uncovered, in a warm place until doubled in size, about 1 hour, 15 minutes.
  • Preheat the oven to 350 degrees F. Bake the knots until puffed and golden brown, about 30 minutes. Transfer to a rack and let cool 10 minutes in the pan.
  • Meanwhile, make the glazes: Whisk 1 cup confectioners' sugar and the espresso powder in a medium bowl; add 1/4 cup heavy cream and whisk until smooth, adding more cream if necessary. In a small bowl, whisk the remaining 1/4 cup confectioners' sugar with the remaining 2 tablespoons cream until smooth. Transfer the white glaze to a resealable plastic bag.
  • Remove the knots from the pan and dip the tops in the espresso glaze; let set 5 minutes. Snip a small corner of the bag with the white glaze and pipe over the knots.
  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

Cappuccino is equal parts espresso, steamed and foamed milk, and is a favorite drink for many coffee lovers. This recipe shows you how it's done.

2 shots espresso (a double shot)
4 ounces milk

Steps:

  • Gather the ingredients.
  • Place the water into the boiler of your espresso machine.
  • Place the 2 tablespoons (2 shots) of ground coffee into the portafilter.
  • Tamp (press) the coffee down using a tamper. Do this 2 to 3 times to make sure the grounds are packed tightly.
  • Place the portafilter into your espresso machine's group head and lock it in place by turning it to the right.
  • Place a demitasse cup or the glass carafe that came with your espresso machine under the group head and pull the shot for 23 to 30 seconds, or until 2 ounces of espresso is yielded. Typically, there is a lever, switch, or button to start this process.
  • Once the shot is pulled, foam the milk.
  • Place the milk into either a glass measuring cup or a small metal pitcher.
  • Insert the steam wand into the container with the milk, just under the surface of the milk.
  • Engage the steam wand on your espresso machine. (You may need to read your espresso machine's manual for this, as each espresso maker is a little different.)
  • Make sure to keep the tip of the wand toward the side of the container. This will create a vortex with the milk.
  • Move the container higher, lower, closer, then further so that the steam wand can incorporate the air into the milk, making the foam. The bubbles should get smaller and smaller as you do this.
  • Once the milk has foamed to double its size, turn the steam wand off.
  • Top the espresso with foamed milk right after foaming. When initially poured, cappuccino is only espresso and foam, but the liquid milk quickly settles out of the foam to create the (roughly) equal parts foam, steamed milk, and espresso for which cappuccino is known.

Steps:

  • Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 2 to 3 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Whisk eggs and sugar together in a bowl. Stir in melted chocolate and butter.

18g ground espresso (or 1 espresso pod)
150ml milk
cocoa powder (optional)

Steps:

  • Make around 35ml espresso using a coffee machine and pour it into the base of your cup.
  • Steam the milk with the steamer attachment so that it has around 4-6cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming to pour into the centre. Once the milk jug is almost touching the surface of the coffee, tilt the jug to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top. Dust the surface with a little cocoa powder if you like.

For horseradish crème fraîche
1 8-ounce container crème fraîche or sour cream
2 teaspoons prepared horseradish
2 teaspoons grated lemon peel
1 teaspoon chopped fresh chives
4 ounces smoked salmon, chopped
2 ounces caviar
Purchased basil oil (optional)

Steps:

  • Make potato cakes:
  • Preheat oven to 375°F. Bake potatoes until tester can pierce center but potatoes are not yet tender, about 30 minutes. Cool. Peel and coarsely grate potatoes. Transfer grated potatoes to bowl. Add chives. Season to taste with salt and pepper. Mix in egg white. Oil baking sheet. Press 1 heaping tablespoon potato mixture onto sheet, forming 2-inch round. Repeat with remaining mixture, forming 8 cakes total. Add enough oil to heavy large skillet to reach depth of 1 inch. Heat oil to 350°F. Add potato cakes to skillet and fry until golden, about 2 minutes. Drain on paper towels. (Can be made 1 day ahead. Cool; cover and chill. Rewarm in 350°F oven about 10 minutes before serving.)
  • Make egg mixture:
  • Gently mix all ingredients in small bowl.
  • Make horseradish crème fraîche:
  • Combine first 4 ingredients in medium bowl. Using electric mixer, beat until peaks form. Season with salt and pepper.
  • Place 1 warm potato cake in center of plate. Place 2-inch-diameter cookie cutter or biscuit cutter with 1-inch-high sides around potato cake. Top cake with 2 tablespoons egg mixture; press to adhere. Press 2 tablespoons salmon atop. Dollop with 2 tablespoons horseradish crème fraîche. Gently remove cookie cutter. Smooth top. Top with small spoonful caviar. Repeat with remaining cakes.
  • Drizzle basil oil around if using.
