This dessert "pizza" is wonderful for parties, showers, and is a real kid-pleaser! It boasts a soft cookie crust, light cream cheese sauce, and crisp apples among the delicious treats that make up the topping. For parents: this is a good way to sneak fruit into your kids' diet!

Number Of Ingredients 8

18 ounces premade refrigerated sugar cookie dough
1 (8 ounce) package cream cheese, room temp
1/2 cup packed brown sugar
1/4 cup creamy peanut butter
1 teaspoon vanilla
2 green apples
1/4 cup caramel ice cream topping
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°F
  • Roll out dough into a large cookie (should be about 3/4" thick) on a cookie sheet.
  • Bake appx. 17 minutes or until light brown. Remove from oven; cool 10 minutes.
  • Combine cream cheese, brown sugar, peanut butter and vanilla with a speed mixer until well blended.
  • Spread mixture evenly over cookie.
  • Peel and slice your apples. Cut apple slices into bite-sized chunks and arrange evenly over pizza.
  • Microwave caramel topping appx. 45 seconds or until warm; drizzle evenly over apples. Chop pecans sprinkle over apples.
  • Serve this "pizza" by cutting it into wedges.

  • To make the crust, combine hot water and yeast in a large bowl. Let sit for a few minutes until a foam develops.
  • Stir in the brown sugar, olive oil, salt and flour. Knead for a few minutes until dough is stretchy. Let sit for 30 minutes to rise.
  • Meanwhile, peel and dice the apples. Toss them with the flour, brown sugar, cinnamon and nutmeg. Grease and lightly dust a pizza pan with cornmeal.
  • Preheat oven to 400 F. Pat out the dough into a 12 - 15 inch circle. Lightly brush with olive oil. Spread the apples on top of the dough.
