3 tablespoons unsalted butter
3 firm-ripe bananas, sliced diagonally 1/2 inch thick
1/2 cup packed light brown sugar
1 cup heavy cream
4 ounces fine-quality bittersweet chocolate (no more than 60% cacao if marked), finely chopped
1 pint cinnamon or vanilla ice cream
1/2 cup chopped walnuts, toasted and cooled

Steps:

  • Melt butter in a 12-inch heavy skillet over medium heat, then add bananas in 1 layer and sprinkle with brown sugar. Increase heat to medium-high and cook bananas, gently turning once and shaking skillet occasionally, until sugar is caramelized, 3 to 4 minutes. Divide bananas among 4 bowls, leaving any remaining caramel in skillet.
  • Add cream to skillet and boil over medium heat, stirring, until caramel is dissolved. Add chocolate with a pinch of salt and whisk until melted.
  • Top bananas with scoops of ice cream, then drizzle with some of chocolate sauce and sprinkle with nuts. (There will be extra sauce.)

1/4 cup coarse or granulated sugar
2 flavors ice cream
1/2 cup store bought chocolate sauce
1/2 cup store bought marshmallow sauce
1/4 cup pineapple sauce, store bought
1/4 cup chopped peanuts
4 mint sprigs, for garnish, optional

Steps:

  • Cut bananas in half lengthwise and then in half again crosswise. Pour sugar onto a small plate. Dip the cut sides of the bananas in the sugar, and caramelize under the broiler or with a blowtorch.
  • Place a scoop of each flavor of ice cream in a martini glass. Place 2 pieces of caramelized bananas at the back of the glass like rabbit ears. Drizzle with chocolate sauce, then spoonfuls of marshmallow sauce and pineapple sauce, then sprinkle with chopped nuts. Garnish with a big sprig of mint.

4 lumpia wrappers
4 bananas, split into thirds along its natural seam
1/2 cup toasted almond slices, save some for garnish
1 egg beaten with 2 tablespoons water (egg wash)
1/4 cup powdered sugar
1/2 cup heavy cream
1 cup semisweet chocolate, small pieces
Top notch vanilla ice cream
1/2 cup whipped cream
1/4 cup cocoa powder for garnish

Steps:

  • Lay out a wrapper and put together the banana filled with the almonds. Roll like a spring roll and seal with egg wash. Fry at 350 degrees until golden brown and delicious. Sprinkle with powdered sugar. To make ganache, scald cream and add to the chocolate. Stir until completely melted.
  • PLATING Place 3 scoops ice cream in a banana boat. Top with fried banana slice on the bias. Top with whipped cream, almonds and drizzle with ganache.

1 pinch ground cinnamon
4 bananas, sliced into rounds
1 (10.5 ounce) package miniature marshmallows
1 ¾ cups chocolate chips
¾ cup chopped pecans
½ cup sweetened flaked coconut
1 tablespoon orange juice
1 cup crushed pineapple
1 cup mashed strawberries
½ gallon vanilla ice cream

Steps:

  • Melt brown sugar and butter in a pan over medium-low heat for about 2 minutes. Add salt and cinnamon. Place sliced bananas on top of caramel mixture in an even layer. Turn bananas after about 30 seconds and cook for about 30 seconds more. Remove from heat and place in a bowl.
  • Melt marshmallows and chocolate chips in a pot over low heat. Stir in pecans and coconut along with orange juice. Remove from heat and place in a bowl.
  • Place pineapple and strawberries in separate bowls. Scoop ice cream into serving dishes and top with the bananas and caramel, melted chocolate mixture, and fruit.

Everyone loves banana splits. But, hey, when the bananas are grilled to caramelized perfection and then topped with goodies -- watch out! This recipe is from"Emeril at the Grill" by Emeril Lagasse.

6 firm-ripe unpeeled bananas, halved lengthwise
6 tablespoons honey
12 tablespoons (3/4 cup) packed light-brown sugar
Vanilla ice cream, for serving
Hot Fudge Sauce, for serving
Rum Caramel Sauce, for serving
2 cups lightly sweetened whipped cream, for serving
Finely chopped roasted lightly salted peanuts, for serving
6 maraschino cherries, for serving

Steps:

  • Preheat a grill to high, and lightly oil the grill grate.
  • Place the banana halves, cut side up, on a baking sheet and drizzle the honey evenly over them. Sprinkle with the brown sugar. Place the bananas, cut side up, directly on the grill, arranging them so they are perpendicular to the grill grate. Close the grill cover and cook until the bananas are caramelized around the edges and the fruit is beginning to pull away from the peel, 3 to 5 minutes.
  • Carefully transfer the grilled banana halves (still in their skins) to a small baking sheet. Using two small forks or a long, thin spatula, carefully remove the banana halves from their skins and place 2 pieces of banana on each dessert plate. (This is a little tricky because the bananas are now very soft.) Top each banana with 1 or 2 scoops of vanilla ice cream. Drizzle with the Hot Fudge Sauce and Rum Caramel Sauce. Top with dollops of whipped cream and sprinkle with chopped peanuts. Garnish each banana split with a maraschino cherry, and serve immediately.

1 cup (packed) golden brown sugar
1/2 cup (1 stick) unsalted butter
1 1/2 cups all purpose flour
1 cup hazelnuts (about 5 ounces), coarsely chopped
Pinch of salt
Filling
3/4 cup sugar
6 tablespoons (3/4 stick) unsalted butter
1/4 cup fresh lime juice
6 medium bananas (about 2 pounds), peeled, cut into 3/4-inch-thick slices
2 tablespoons Frangelico (hazelnut liqueur) or amaretto
10 sheets fresh phyllo pastry or frozen, thawed
3/4 cup (1 1/2 sticks) unsalted butter, melted
White Chocolate Sauce

Steps:

  • For Crumble:
  • Preheat oven to 300°F. Stir sugar and butter in medium saucepan over low heat until butter melts. Remove from heat. Mix in flour, nuts and salt. Spread on baking sheet. Bake until dry and golden, about 30 minutes. Cool. Break into small pieces. (Can be made 1 day ahead. Store airtight at room temperature.)
  • For Filling:
  • Stir sugar, 6 tablespoons butter and lime juice in large nonstick skillet over low heat until sugar dissolves. Increase heat to high and stir until butter melts and mixture begins to brown around edges, about 5 minutes. Add bananas and liqueur; stir until bananas are coated with butter mixture, about 2 minutes. Transfer to large bowl and cool.
  • Mix 1 cup hazelnut crumble into banana mixture. Place 1 phyllo sheet on work surface (keep remaining phyllo covered with plastic wrap, then damp towel). Brush phyllo with melted butter. Fold phyllo in half crosswise, brush with butter, then fold in half again, forming square; brush with butter. Place generous 1/4 cup filling in center of phyllo square. Bring all edges of phyllo square up toward center and squeeze firmly at top, forming purse. Place on baking sheet. Repeat with remaining phyllo sheets, melted butter and filling, forming total of 10 purses. (Can be prepared 6 hours ahead. Chill.)
  • Preheat oven to 350°F. Cover phyllo purses loosely with foil. Bake until purses begin to color, about 30 minutes. Remove foil and continue baking until phyllo is golden, about 15 minutes longer.
  • Place 1 purse on each of 10 plates. Spoon 3 tablespoons warm White Chocolate Sauce around each. Sprinkle remaining hazelnut crumble over sauce.

4 bananas, cut into 2-inch pieces
1 pint plus 1/2 cup vanilla ice cream
1/4 cup shaved semisweet or milk chocolate

Steps:

  • Heat sugar in a large heavy-bottomed saute pan over medium-high heat. Let stand until edge of sugar starts to melt and turn golden. Carefully swirl pan to incorporate all of the sugar. Continue cooking until sugar is a golden-brown caramel, 6 to 8 minutes.
  • Reduce heat to low, and stir in butter. Add bananas, carefully roll in caramel, and cook, turning bananas occasionally until just soft, 3 to 5 minutes. Remove bananas from caramel, and place in serving dishes. Add 1/2 cup of vanilla ice cream to caramel sauce, and stir until smooth and creamy. Scoop remaining ice cream over bananas, pour caramel over ice cream, and sprinkle with chocolate shavings.
