4 tablespoons unsalted butter, at room temperature
1/4 cup fresh basil
Grated zest of 1 lemon
1 clove garlic
Kosher salt
4 ears of corn, grilled
Freshly ground pepper
Shredded Parmesan cheese, for topping

Steps:

  • Combine the butter, basil, lemon zest, garlic and a pinch of salt in a food processor. Puree until smooth.
  • Spread the basil butter on the grilled corn. Season with salt and pepper; sprinkle with shredded Parmesan.

Our Easy Homemade Caramel Corn is a family favorite. It is super yummy and super easy. And you don't need Corn Syrup for this recipe.

10 Cups of Popped Popcorn
Salt
1 Cup Butter (Sweet Cream Salted)
1 Cup Light Brown Sugar
2 tsp. Vanilla
1/2 tsp. Baking Soda

Steps:

  • Make popcorn.
  • Salt popcorn and set aside.
  • Melt 1 cup of butter in a medium saucepan over medium heat.
  • Add 1 cup of brown sugar and stir until thoroughly mixed.
  • Stirring continuously, bring the butter and sugar mixture up to a boil on medium heat.
  • When it reaches a boil allow it to cook for 5 minutes without stirring on medium heat.
  • Add the 2 tsp. of vanilla at the 4 minute mark and stir to mix.
  • Continue to boil for one addition minute and then add the 1/2 teaspoon of baking soda.
  • Drizzle the caramel mixture over the popcorn. Use a spoon to gently fold the popcorn with the mixture until the kernels are all covered.
  • Pour the popcorn out onto a cookie sheet covered with aluminum foil or a silpat liner.
  • Let the popcorn cool.
  • Serve.

SESAME CORN AND BASIL SAUTE

2 1/2 teaspoons sesame seeds
3 tablespoons unsalted butter
1 clove garlic, minced
6 ears fresh corn, shucked and kernels cut off the cobs (about 4 cups)
1/2 teaspoon kosher salt
Freshly ground black pepper
2 tablespoons fresh basil chiffonade

Steps:

  • Lightly toast the sesame seeds in a large skillet over medium heat, taking care not to burn them, 2 to 3 minutes. Transfer to a small bowl and reserve.
  • Return the skillet to medium heat and add the butter and garlic. Saute the garlic as the butter melts, about 2 minutes. Add the corn, salt and pepper to taste. Cook until the corn is just tender and warmed through, about 5 minutes. Turn off the heat and add the sesame seeds and half the basil and mix until combined. Transfer to a serving bowl and garnish with the remaining basil.

  • Rinse frozen corn with cold water to separate; drain. In 2-quart saucepan, melt butter over medium heat. Cook corn, onion and celery in butter 10 to 12 minutes, stirring frequently, until onion is tender.
  • Stir in remaining ingredients; reduce heat. Cover and simmer 3 to 5 minutes or until corn is tender.

Creamy Corn Pasta With Basil image

There's no cream in this wonderfully summery pasta dish, just a luscious sauce made from puréed fresh corn and sweet sautéed scallions, along with Parmesan for depth and red chile flakes for a contrasting bite. Be sure to add the lemon juice and fresh herbs at the end; the rich pasta really benefits from their bright, fresh flavors. And while this is best made at the height of corn season, it's still quite good even with out-of-season supermarket ears, or with frozen corn.

Fine sea salt
12 ounces dry orecchiette or farfalle
1 tablespoon olive oil, plus more for drizzling
1 bunch scallions (about 8), trimmed and thinly sliced (keep the whites and greens separate)
2 large ears corn, shucked and kernels removed (2 cups kernels)
1/2 teaspoon ground black pepper, more for serving
3 tablespoons unsalted butter
1/2 cup grated Parmesan cheese, more to taste
1/3 cup torn basil or mint, more for garnish
1/4 teaspoon red pepper flakes, or to taste
Fresh lemon juice, as needed

Steps:

  • Bring a large pot of well-salted water to a boil. Cook pasta until 1 minute shy of al dente, according to the package directions. Drain, reserving 1/2 cup of pasta water.
  • Meanwhile, heat oil in large sauté pan over medium heat; add scallion whites and a pinch of salt and cook until soft, 3 minutes. Add 1/4 cup water and all but 1/4 cup corn; simmer until corn is heated through and almost tender, 3 to 5 minutes. Add 1/4 teaspoon salt and 1/4 teaspoon pepper, transfer to a blender, and purée mixture until smooth, adding a little extra water if needed to get a thick but pourable texture.
  • Heat the same skillet over high heat. Add butter and let melt. Add reserved 1/4 cup corn and cook until tender, 1 to 2 minutes. (It's O.K. if the butter browns; that deepens the flavor.) Add the corn purée and cook for 30 seconds to heat and combine the flavors.
  • Reduce heat to medium. Add pasta and half the reserved pasta cooking water, tossing to coat. Cook for 1 minute, then add a little more of the pasta cooking water if the mixture seems too thick. Stir in 1/4 cup of the scallion greens, the Parmesan, the herbs, the red pepper flakes, 1/4 teaspoon salt and 1/4 teaspoon pepper. Sprinkle with fresh lemon juice to taste. Transfer to warm pasta bowls and garnish with more scallions, herbs, a drizzle of olive oil and black pepper.

This one stars sweet corn that's been tarted up with buttermilk and lime juice, spiced with garlic and scallion, and imbued with fresh herbs. While straining it isn't entirely necessary, it will give you a smoother, more elegant soup. But when it's too hot to breathe, let alone dig out the strainer, you have our permission to skip it. Serve this in espresso cups or shot glasses as an hors d'oeuvre, or in bowls as a first course.

3 ears corn, shucked
1 1/2 cups buttermilk
1/2 cup basil leaves, more for garnish
3 scallions, roughly chopped
1 tablespoon fresh lime juice, more to taste
1 fat garlic clove, roughly chopped
3/4 teaspoon fine sea salt
Radish slices, for garnish
Extra-virgin olive oil, for garnish

Steps:

  • Slice kernels off corn cobs (you should have 3 to 3 1/2 cups kernels). Discard cobs and place kernels in a blender.
  • Add buttermilk, basil, scallions, lime juice, garlic, salt and 1/3 cup ice cubes to the blender and purée until very smooth.
  • Strain mixture through a sieve, pressing down hard on the solids. Serve soup garnished with radish slices and a drizzle of olive oil.

4 tablespoons butter
1 (16 ounce) bag frozen corn, defrosted
3 tablespoons white sugar
1/4 cup heavy cream
1/4 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • In a large skillet over medium-high heat, melt the butter.
  • When butter is foamy add the corn stirring to coat with the butter.
  • Cook stirring frequently for 1 minute.
  • Add sugar or honey and cook for 2 minutes more.
  • Increase heat to high and add heavy cream-continue to stir so corn won't stick to pan.
  • Add salt and pepper.
  • Cook corn until most all of the cream has absorbed about 5 minutes more.
  • Remove add serve hot.
