Steps:

  • Place carrots in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 5 minutes. Add apple, and simmer until soft, about 5 minutes more. Drain.
  • Combine cooked carrots and apple with milk in a blender or food processor; and puree until smooth. Allow to cool before serving.

1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a saucepan, cook carrots in water until crisp-tender; drain. Add butter, brown sugar, lemon juice and cinnamon; mix well. Stir in apple. Cover and simmer for 10 minutes, stirring occasionally. Combine cornstarch and cold water; stir into carrot mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Simmer, uncovered, until glazed, 2-3 minutes, stirring constantly.

2 cups all-purpose flour
2 cups sugar
1 cup canola oil
4 eggs
2 (4 ounce) jars carrots, baby food
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons vanilla
1 (8 ounce) package cream cheese
1 (16 ounce) box powdered sugar
1 teaspoon vanilla

Steps:

  • Cake method: Preheat oven to 350ºF.
  • Grease and flour a 9x13 baking pan.
  • Place first 9 ingredients (through 2 teaspoons vanilla) in a large mixing bowl.
  • Beat with electric beaters or mixer paddle for 2 minutes on medium speed.
  • Pour the batter into the prepared pan.
  • Bake in 350ºF oven for 30 minutes, until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool completely; prepare icing in the meantime.

1 teaspoon thyme (optional)
1/4 cup lemon juice
1 cup seasoned bread crumbs

Steps:

  • Steam carrots in boiling salted water until tender-crisp. Set aside.
  • Cook onions until golden in 2 tablespoons of the butter.
  • In buttered baking dish, layer carrots, onions and apples. Sprinkle with thyme. Drizzle with lemon juice. Melt remaining butter. Mix in bread crumbs. Sprinkle over vegetable mixture.
  • Bake at 300 degrees for 15 minutes or until vegetables are heated through and crumbs are golden brown.
