1 1/2 cups boiling water
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup good olive oil
3 1/2 teaspoons kosher salt
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (1 bunch)

2 cups cherry tomatoes, cut in half
1 teaspoon freshly ground black pepper

BAKED FALAFEL & CAULIFLOWER TABBOULEH WITH PICKLED CARROT, CUCUMBER & CHILLI SALAD

Baked falafel & cauliflower tabbouleh with pickled carrot, cucumber & chilli salad image

Try these easy falafels with cauliflower tabbouleh and pickled carrot, cucumber and chilli salad. Tasty and healthy, they serve up all five of your five-a-day

Provided by Sophie Godwin - Cookery writer

Categories     Dinner, Lunch

Time 55m

Number Of Ingredients 20

400g can chickpeas , drained (or 85g dried chickpeas soaked in 500ml cold water overnight, then drained)
1 tsp ground cumin
1 tsp ground coriander
¼ tsp cayenne pepper
½ small red onion , quartered
1 garlic clove
1 tbsp sesame seeds
½ tsp baking powder (gluten free if you like)
small pack parsley , stalks and leaves separated, leaves chopped
1 tbsp olive oil
½ small cauliflower , cut into florets
½ small pack mint , leaves chopped
½ lemon , juiced
2 carrots , peeled into ribbons
1 cucumber , peeled into ribbons, seedy core removed
1 small red chilli , deseeded and sliced
1½ tbsp rice or white wine vinegar
pinch sugar
½ small pack coriander , leaves picked
2 tbsp % fat natural yogurt

Steps:

  • Heat oven to 200C/180C fan/gas 6, line a baking sheet with baking parchment. Tip the chickpeas, ½ tsp ground cumin, ½ tsp ground coriander, cayenne pepper, red onion, garlic, sesame seeds, baking powder, parsley stalks and ½ tbsp water into a food processor. Blitz until everything is combined but not mushy - you want the falafel to have some texture, rather than being like hummus. Season to taste then roll into 18 even-sized balls. Flatten each ball into a disc shape and put onto the baking trays (the more surface area the crisper they will become). Brush them with ½ tbsp oil. Bake for 20 mins, turning halfway, until golden and crisp.
  • Meanwhile, clean the food processor. Briefly pulse the cauliflower until you have a couscous consistency. Mix the cauliflower with the remaining ground spices, olive oil and seasoning. Tip onto a baking tray and roast for 10-12 mins, stirring occasionally, until slightly toasted. Once cool, mix through the chopped parsley, mint and a squeeze of lemon juice. Season to taste.
  • Mix the carrot, cucumber, red chilli, vinegar, sugar and a pinch of salt in a bowl. Stir through the coriander and divide between the baked falafel and tabbouleh with a dollop of yogurt.

CLASSIC TABBOULEH SALAD

Classic Tabbouleh Salad image

This basic tabbouleh salad (aka tabouli) made with cracked wheat bulgur, tomatoes, cucumber, and parsley is easy and delicious.

Provided by Molly Watson

Categories     Salad     Side Dish     Lunch     Salad

Time 1h20m

Yield 8

Number Of Ingredients 11

1 cup cracked wheat bulgur
1 teaspoon fine sea salt (divided)
1 1/2 cups boiling water
1 clove garlic
1/3 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/2 cup fresh mint leaves
1/2 teaspoon freshly ground black pepper
1 bunch flat-leaf parsley
4 tomatoes
1 English or hothouse cucumber

Steps:

  • Gather the ingredients.
  • Put the bulgur in a medium bowl and sprinkle it with 1/2 teaspoon of the salt. Add the boiling water, cover, and let sit for 20 minutes (or up to 60 minutes depending on the brand) until softened.
  • While the bulgar sits, make the dressing. Pulse the garlic in a food processor until minced, then add the olive oil and lemon juice and whirl into a dressing-like consistency. Or, whirl the olive oil, lemon juice, and garlic in a blender .
  • Add the mint leaves, the remaining 1/2 teaspoon salt, and the pepper. Blend until the mint leaves are well worked into the dressing and the dressing is more or less smooth. Taste and add more salt and pepper, if you like.
  • Remove the parsley leaves from the stems; discard the stems or save them for another use. Roughly chop the leaves. Core, seed, and chop the tomatoes. Peel, seed, and chop the cucumber. Set aside.
  • Check the bulgur: It should have absorbed all of the water, but there may be a bit in the bottom of the bowl. It should also be tender to the bite. If it's not, stir, cover, and let sit for 10 more minutes. If it's tender and there's water in the bowl, either drain the bulgur in a fine-mesh sieve or lift it out with a slotted spoon and into a separate bowl.
  • Pour the dressing over the bulgur and toss to combine well. Add the parsley and toss to combine well. Add the tomatoes and cucumber and stir to mix.
  • Serve immediately or cover and chill (up to overnight). Enjoy.

CARROT TABBOULEH SALAD

Carrot Tabbouleh Salad image

Printed in Taste for Life via the cookbook 'Smashing Plates' by Maria Elia. I had fun customizing this recipe! Red onion or scallions can replace the shallots if you prefer. Did you notice a certain ingredient missing from the list? No bulgur.

Number Of Ingredients 18

DRESSING:
1/3-1/2 cup(s) extra virgin olive oil
1 large lemon, juice of (i used a meyer lemon)
1/2 teaspoon(s) ground cinnamon (reduced from 1 tsp.)
1/4 teaspoon(s) ground allspice (reduced from 1 tsp.)
- salt and fresh cracked black pepper, to taste
SALAD:
4-5 medium carrots, cut into chunks (i used rainbow carrots: orange, yellow, and red)
2 small golden beets, washed, ends trimmed and peeled ( i added this ingredient although it is optional)
1 1/2 cup(s) fresh parsley, stems intact and loosely packed (italian parsley preferably or curly will work but *not* dried parsley!)
1 cup(s) fresh mint, stems removed and loosely packed (*not* dried mint!)
1-2 clove(s) garlic, peeled
1 medium shallot, peeled and chopped
1/2 tablespoon(s) lemon zest
GARNISHES:
12 - grape tomatoes, approximately
1/2 small cucumber, diced small or sliced (persian cucumber this time around)
- lemon slices

Steps:

  • With a food processor on the PULSE setting or by hand finely mince the carrots, beets, fresh parsley, fresh mint, garlic and shallots. Stir in the lemon zest.
  • Place the vegetables in a large mixing bowl. Pour the dressing over the vegetables and toss to combine. Taste and adjust seasonings if necessary.
  • Transfer the mixture to a large salad bowl or platter. (I lined the edges of the bowl with baby spinach leaves, as an option.) Garnish with grape tomatoes, cucumber slices and lemon slices. Serve at room temperature for best flavor.

TABBOULEH SALAD

Tabbouleh Salad image

A great salad for potlucks. Substitutions can be made to the vegetables. While in Mexico I used cilantro instead of parsley and added poblanos and created a southwestern tabbouleh. Very refreshing!

TABBOULEH - ONCE UPON A CHEF
2021-07-21 Tabbouleh is a Middle Eastern salad made from loads of fresh herbs, quick-cooking bulgur, and chopped vegetables in a lemon-and-olive oil dressing. Traditionally, the herbs constitute the bulk of the salad, but I prefer to swap the proportions to put the bulgur and vegetables front and center, making it a more of a grain salad than an herb salad.
