CARROTS AND WATER CHESTNUTS
This carrot dish has a little different taste than the usual and is done on the stovetop. No oven time needed.

Steps:
- In covered pan, cook carrots in small amount of boiling water, 15 minutes or until crisp tender.
- Drain and set aside.
- In pan, melt butter, add ginger, thyme and water chestnuts; cook and stir for 2 minutes.
- Add wine, parsley and carrots.
- Cook and stir until heated through.

STIR FRY SNOW PEAS & WATER CHESTNUTS
I usually like to add a little low sodium soy sauce just before serving. Attractive dish, great as part of a Chinese meal or any meal. For added color throw in some shoestring carrots - They cook very quickly and only need 1 minute befor adding the snowpeas.

Steps:
- Bring the broth to a boil in a wok or skillet.
- Toss in the peas cover and cook for 1-2 minutes (do not over cook the peas), shake the pan a couple of times.
- The peas should be crisp and bright green.
- Add sesame oil and water chestnuts, continue to cook for 2 more minutes.
- Serve immediately.

CALICO SQUASH CASSEROLE
My great-aunt made this for a family gathering and it's been a hit ever since, even with the kids! The water chestnuts add a different texture and my husband has even used whole baby carrots instead of shredded carrot. Easy and fast to make and a good way to use up all that squash from the garden!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large saucepan combine yellow squash, zucchini, onion, green onion, water and 1/2 teaspoon salt. Cover and cook over medium heat about 6 minutes. Drain well and set aside.
- In a medium bowl combine cracker crumbs and butter. Mix well and spread half of the mixture into the bottom of a 9x13 inch casserole dish.
- In a large bowl combine soup, water chestnuts, carrots, mayonnaise, pimentos, sage, pepper and remaining 1/2 teaspoon salt. Fold in squash mixture and spoon over crumb crust. Sprinkle cheese on top, and then the remaining cracker crumbs.
- Bake in preheated oven for 20 to 30 minutes, or until firm and heated through.

- 1. Cook carrots in a small amount of boiling water 6 to 8 minutes or until tender; drain, Set aside.
- 2. Melt the butter in a large skillet over medium-low heat. Add water chestnuts, thyme, and ginger, and cook 2 minutes.
- 3. Add the reserved carrot and wine; cook just until thoroughly heated. Transfer the vegetable mixture to a serving bowl; sprinkle with fresh parsley.
