Sauteed Carrots with Borage image

This is how I ate carrots as a child. You can use any type of herbs instead of borage, like parsley or basil.

1 tablespoon butter
½ pound carrots, sliced
⅓ cup water, or more as needed
salt
2 teaspoons borage leaves, finely chopped

Steps:

  • Melt butter in a pot over low heat. Add carrots and stir they are well coated in butter.
  • Season with salt and add as much water to cover the bottom of the pot by 1/4 inch. Cover and cook until carrots are soft, 20 to 30 minutes. Keep checking to make sure there is always a little water in the pot--add more to avoid burning the carrots. Garnish with borage and serve.

This delicious pickled carrot recipe contains chile peppers, garlic, herbs, and spices. It keeps in the fridge for three months.

1 pound carrots (peeled and cut into 3- to 4-inch spears)
2 to 3 small fresh chile peppers (or dried chile peppers)
1 clove garlic (peeled)
1/4 teaspoon whole coriander seeds
1/4 teaspoon whole cumin seeds
1 bay leaf
3/4 cup white wine (or cider vinegar)
1/2 cup water
1 teaspoon honey
1/2 teaspoon kosher salt (or another non-iodized salt)

Steps:

  • Gather the ingredients.
  • Tightly pack the carrots into a clean 1-pint canning jar (it is not necessary to sterilize the jars for this recipe unless you will be processing in a boiling water bath). It is easier to lay the carrots in lengthwise if you put the jar on its side and slide the carrot spears in horizontally.
  • Tuck in the chile peppers. garlic, coriander, cumin, and bay leaf as you go.
  • Bring the vinegar, water, honey, and salt to a boil.
  • Pour the hot liquid over the carrots and seasonings in the jar. The carrots should be completely covered by the liquid, but there should be 1/2-inch space between the top of the liquid and the rim of the jar.
  • Screw on a 2-piece canning jar lid and put the jar of spicy pickled carrots into the refrigerator and start enjoying them after they've had two weeks for the flavors to develop.
  • To be able to store at room temperature , pack sterilized jars with the ingredients and process the jar(s) in a boiling water bath for 10 minutes. You must use a canning jar and canning lid to process in a boiling water bath.

1 cup orange juice
¼ cup honey
½ cup apricot preserves
3 tablespoons Dijon mustard
2 tablespoons butter
2 tablespoons brown sugar
¼ teaspoon salt
⅛ teaspoon ground white pepper

Steps:

  • Mix carrots and orange juice in a large saucepan; bring to a boil, place a cover on the pan, reduce heat to low, and cook at a simmer until carrots are tender-crisp, 8 to 10 minutes. Drain carrots, reserving 1/4 cup of the orange juice.
  • Return carrots and reserved juice to the pan and place over medium heat. Stir honey, apricot preserves, Dijon mustard, butter, brown sugar, salt, and black pepper with the carrots and juice; cook and stir until sugar dissolves completely and the carrots are glazed and tender, about 10 minutes.

20 Ritz crackers, crushed (about 1 cup)
1/2 cup chopped salted peanuts

  • Preheat oven to 350°. In a large saucepan, bring 2 in. of water to a boil. Add carrots; return to a boil. Reduce heat; simmer 4 minutes. Add onions; return to a boil. Reduce heat; simmer until carrots are tender, 4-5 minutes. Drain vegetables; return to pan., Whisk together mayonnaise, cream, curry powder, salt and pepper. Pour over vegetables; toss to coat. Transfer to a greased 11x7-in. or 8-in. square baking dish. Combine crushed crackers and peanuts; sprinkle over carrots. Drizzle melted butter over top. Bake, uncovered, until bubbly, 20-25 minutes.

1 1/4 cups apple cider vinegar
2 1/4 teaspoons coarse salt
2 1/4 teaspoons brown sugar
2 cloves garlic
1 hot pepper, such as habanero
1 cinnamon stick
1 fresh bay leaf
1 tablespoon cumin seed
1 tablespoon coriander seed
1 tablespoon fennel seed
1 tablespoon black peppercorns
1 pound carrots, peeled and sliced into thin rounds

Steps:

  • Bring the vinegar, 3/4 cup water, salt, and brown sugar to a boil in a medium stainless steel saucepan. Stir, dissolving the salt and sugar.
  • Heat a 1-quart jar: Fill it with hot water and let it sit a couple minutes before pouring out. (The heat will prevent shattering when you pour in the boiling brine.) Add garlic, hot pepper, and spices.
  • Pack the jars tightly with carrots. Pour in hot brine. Cover and let cool overnight before eating. Spiced carrots can be stored in the refrigerator for up to 3 weeks.
