This bright salad is creamy yet crunchy - my idea of a perfect lunch! Vegan and Gluten-Free

1 cup quinoa, rinsed and drained
2 cups finely cut purple cabbage
1 cup julienned or shredded carrots
1 red bell pepper (capsicum), diced
2 green onions (scallions), thinly sliced
1/2 cup chopped fresh coriander (cilantro)
1/2 cup cashews (or peanuts)
1/4 cup cashew butter (or peanut/almond butter)
2 cloves garlic, minced
1 tbsp grated fresh ginger (or 1 tsp dried ginger)
3 tbsp tamari (light soy sauce)
2 tbsp agave (or maple syrup)
2 tbsp warm water
1 tbsp rice vinegar
1 tbsp sesame oil
1/2 tsp crushed red chili pepper (or 1 tsp Sriracha sauce)

Steps:

  • Place the quinoa along with 2 cups salted water in a medium saucepan. Cover and bring to a boil, then reduce to the lowest heat setting. Simmer until water is completely absorbed and quinoa is fluffy, about 20 minutes.
  • In a large bowl, whisk the dressing ingredients together.
  • Add the quinoa to the dressing and mix well to combine.
  • Add the veggies, onions, cilantro and cashews.

1/4 cup balsamic vinegar
1/2 tsp crushed black pepper
1 tsp olive oil
1/2 tsp dried garlic
salt as per taste
2 cups cooked quinoa
1/2 cup sliced red onions
1/2 cup chopped carrots
1/2 cup sliced red pepper

Steps:

  • In a blender combine all the dressing ingredients except salt and blend into a creamy smooth dressing. Keep it aside.
  • In a salad bowl combine all the salad ingredients.
  • Fold in the dressing and toss it well.
  • Garnish with more raw cashew nuts and serve immediately.

Vibrant curry cashew chickpea quinoa salad packed with veggies and delicious flavor from curry powder, fresh ginger, turmeric and sweet and spicy maple glazed cashews. This wonderful vegan curry chickpea quinoa salad is easy to make for the perfect main meal or healthy side dish!

For the quinoa:
¾ cup quinoa
1 2/3 cup water
1 (15 ounce) can chickpeas, rinsed and drained
¾ cup frozen green peas, thawed
1 tablespoon sesame oil (or sub olive oil)
½ tablespoon freshly grated ginger
1 teaspoon curry powder, plus more if you want a really big curry punch!
¼ teaspoon ground turmeric
¼ teaspoon garlic powder
½ teaspoon salt
Freshly ground black pepper
For the mix-ins:
1 red bell pepper, diced
½ cup shredded carrots (from 1 large carrot)
½ cup dried cherries (or dried cranberries)
¼ cup finely diced red onion
1/3 cup finely diced cilantro
1/3 cup finely diced flat leaf parsley
For the maple cayenne toasted cashews:
3/4 cup raw cashews
½ tablespoon pure maple syrup
¼ teaspoon cayenne pepper
1/2 teaspoon sea salt

Steps:

  • Add in quinoa and water to a medium pot and bring mixture to a boil, then cover, reduce heat to low and cook for exactly 15 minutes. After 15 minutes, remove from heat and fluff quinoa with a fork, then replace lid and allow quinoa to steam for 5-10 more minutes. While quinoa is cooking you can chop all your veggies.
  • Once quinoa is done cooking, stir in chickpeas, peas, sesame oil, ginger, curry powder, turmeric, garlic powder, salt and black pepper.
  • Next stir in red bell pepper, shredded carrots, dried cherries, red onion, cilantro and parsley.
  • Finally make your maple cayenne toasted cashews: place cashews in a skillet over medium heat. Toast cashews for 4-6 minutes, stirring frequently until they turn slightly golden brown and fragrant, then turn off heat and immediately add in maple syrup, cayenne pepper and sea salt. Stir for 30 more seconds to coat cashews, then transfer to a plate or piece of parchment paper to cool for a few minutes. Cashews may stick together so try to spread them in an even layer when they are cooling.
  • Top quinoa with cashews and serve! Serves 4 for a main meal or 6 as a side. I suggest waiting to add cashews until you are ready to serve so they stay nice and crunchy.

¼ cup olive oil
1 cup fresh dark sweet cherries, pitted and halved
½ cup coarsely chopped cashews
½ cup dried apricots, thinly sliced
¼ cup thinly sliced red onion
4 cups torn Bibb lettuce

Steps:

  • Stir water, quinoa, and 1/4 teaspoon salt together in a saucepan; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed, about 10 minutes. Remove from heat. Let stand for 10 minutes.
  • Meanwhile, whisk honey, ginger, vinegar, lime juice, garlic, remaining 1/4 teaspoon salt, and pepper together in a small bowl. Slowly add olive oil, whisking constantly, until fully incorporated.
  • Fluff quinoa with a fork. Stir together quinoa, cherries, cashews, dried apricots, and red onion in a large bowl. Add lettuce. Drizzle with 1/2 cup honey vinaigrette; toss to coat. Serve salad with remaining vinaigrette.

Salad
3 cups fresh salad greens
1 cup cooked quinoa
1/2 red onion, sliced thin
1/2 cup pomegranate arils
1/4 cup cashews
1 avocado, pitted and diced
Instructions

Steps:

  • In a small bowl combine lemon juice, sea salt, paprika and pepper. Whisk until combined. Place tempeh, chick'n or chicken in a shallow dish and pour the mixture over. Set aside for 15 minutes. In a grill pan or indoor grill, cook until golden brown and cooked through. Allow to cool slightly and cut into thin strips. Meanwhile, make dressing by combining all ingredients in a small bowl and whisking together. In a large bowl combine greens, quinoa, red onion, pomegranate and cashews. Toss until combined. 1 cup uncooked quinoa
1 -2 cup raw cashews (2 makes the salad more of a meal)
1 cup dried cranberries (crasins)
1 bunch mint, diced
1 bunch scallion, diced
2 tablespoons honey
1/2 teaspoon salt
1 pinch garlic powder
1 tablespoon olive oil
1 -1 1/2 lime, juice of

Steps:

  • Cook quinoa with 2 cups of water (per 1 cup of uncooked quinoa). Otherwise follow package directions.
  • Cool quinoa.
  • Add all items through scallions.
  • Mix together honey, salt, oil, garlic powder, lime juice together and add to the salad, toss to coat.
  • Let the salad sit in the refrigerator a few hours to allow the flavors to meld.
  • If making the night before, hold back the cashews and cranberries (mix in the day of). The cashews can get soft if they sit too long in the salad.
