- In a large bowl mix first 5 ingredients thoroughly.
- Add enough water to make a thick batter.
- Add cauliflower and blend well.
- Using a large, heavy frying pan, pour 1 1/4 inch deep oil and heat to 365.
- To test oil, drop a very small amount of the batter mix into the oil, if it sizzles, it's ready.
- Add all batter to oil, 1/4 cup at a time to make "pancakes" and fry until golden brown.
- Drain well.

BAKED CAULIFLOWER WITH CHEDDAR CHEESE SAUCE

- Preheat oven to 350 degrees.
- Cut the cauliflower into large bite-size pieces.
- Cook the cauliflower in a large pot of salted water. The cauliflower should be tender, but firm. The cooking time is approximately 5 to 6 minutes.
- While the cauliflower is cooking, start the cheese sauce.
- Melt two tablespoons of butter in a small saucepan.
- When the butter has melted completely, add the flour and stir to combine.
- Cook the flour for 1 to 2 minutes, stirring occasionally.
- Slowly begin to add milk, whisking constantly. With each addition of milk the sauce should thicken.
- Add the dry yellow mustard and stir to combine.
- Add 4 ounces of cheese. Stir until the cheese is completely melted and the sauce is smooth.
- Place the cooked cauliflower into a large casserole dish.
- Pour the cheese sauce over the cauliflower.
- Sprinkle the remaining 4 ounces of cheese over the cauliflower.
- Bake at 350 degrees for 15 minutes or until the cheese is slightly browned.

CAULIFLOWER "MAC" AND CHEESE CASSEROLE

- Preheat oven to 375 degrees F. Bring a large pot of water to a boil. Season the water with salt.
- Spray the baking dish with vegetable oil spray.
- Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain well and pat between several layers of paper towels to dry. Transfer the cauliflower to the baking dish and set aside.
- Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Stir in 1 cup of the cheese, salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. - Preheat the oven to 350 degrees F.
- Bring a large pot of salted water to a boil over high heat. Blanch the cauliflower for 2 minutes. Transfer the cauliflower to a buttered 9 by 13-inch baking dish and let cool, about 5 minutes.
- In a small skillet over medium-high heat, brown the pancetta. Transfer to a small bowl and set aside.
- In the same skillet, melt the butter. Add the flour and stir until combined. Continue stirring for 2 minutes to cook the flour. Slowly add the milk, stirring continuously until the milk has incorporated and there are no lumps. - Preheat the oven to 400 degrees F.
- Bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Trim the base of the cauliflower so the stem is flat to the head but without cutting off any florets. Blanch the cauliflower until just beginning to soften, 8 to 10 minutes. Remove to a plate to cool slightly.
- In a small skillet, heat the butter until melted. Add the breadcrumbs and 1/2 teaspoon salt and toast until golden brown, about 3 minutes. Set aside to cool completely. Stir in the Parmesan and basil.
- Gently begin to create space in between the florets and stuff each space with a log of Cheddar. Continue until all the pieces of cheese are used. - Preheat oven to 450°F. Remove outer leaves and core of cauliflower. Cut florets into 3/4" pieces. Transfer to a rimmed baking sheet. Add 1/4 cup oil, 1 tsp. salt, and 1/2 tsp. pepper and toss to combine. Roast, tossing once halfway through, until cauliflower is deeply charred in spots, 30-35 minutes. Immediately grate garlic over hot cauliflower and toss to combine (you're counting on the residual heat to soften the garlic); set aside.

- Add pasta and 1/2 cup cooking liquid to bowl with egg yolk mixture and toss vigorously and continuously with a wooden spoon to create a creamy emulsified sauce that coats pasta, adding more cooking liquid as needed. This may require more tossing than you expect! Keep at it for at least 1 minute. Taste and adjust seasoning, if needed. Add roasted cauliflower and parsley and toss again to coat.
- Divide pasta among bowls. Top with more Parmesan and a few generous cranks of pepper.

- Cut cauliflower into bite size pieces and steam until just tender.
- While it is steaming, melt the butter and add the red pepper flakes and garlic powder (if using).
- Add the flour and mix until smooth and thickened.
- Mix in the milk a bit at a time stirring each time until smooth.
- Cook, stirring constantly, over a medium heat until thick and creamy (this takes awhile).

- Cut the cauliflower into small-ish florets so they are wither bite-sized or slightly smaller. Wash and pat dry.
- Mix together the chickpea flour, salt, turmeric, garlic, ginger and water to make the batter. It should stick to the back of a spoon but not be so thick it doesn't run off at all.
