The marinade for this chicken is based on the famous Chinese BBQ Pork (Char Siu), a very popular recipe on my blog! It's sweet, savoury, sticky, laced with Chinese Five Spice. Add your own touch like ginger and chilli for a kick! The red food colouring is optional - it gives the chicken the reddish tinge that Char Siu is known for. Recipe VIDEO below, MARINATING TIME: 3 - 24 hrs.

2 garlic cloves (, minced)
2 tsp brown sugar
1 1/2 tbsp honey
1 1/2 tbsp hoisin sauce
2 tsp oyster sauce
1 ½ tbsp light soy sauce ((or all purpose))
1/2 tsp Chinese five spice powder (Note 1)
1/2 tsp sesame oil ((not critical))
Few drops red food colouring (, optional)
750 g / 1.5lb chicken thigh fillets (, skinless boneless (or breast))
1 tbsp vegetable oil
10 - 12 bamboo skewers (, soaked in water for 1 hour (optional))
Green onions / scallions (, finely sliced, for garnish (optional))

Steps:

  • Place Marinade ingredients in a ziplock bag or bowl and mix to combine.
  • Add chicken and mix to coat. Marinade for 3 - 24 hours.
  • Optional: Cut chicken into bite size or large pieces and thread onto skewers. Use 1 skewer for small pieces, 2 for large, like pictured in post.
  • Heat half the oil in a heavy based skillet over medium high heat, or BBQ on medium (if using grill side, brush oil on bars).
  • Remove chicken from marinade (RESERVE for basting) and place in the skillet - cook in 2 batches, don't crowd the pan. Cook for 4 minutes then turn.
  • Use the Marinade to baste the cooked side of the chicken. After 3 minutes, turn the chicken over so the basted side is now cooking again - cook for 1 minute.
  • Baste the chicken, then turn again and cook for 45 sec - 1 min.
  • Transfer chicken to a plate, cover loosely with foil and rest for 5 minutes.
  • Serve, garnished with green onions / scallions if using!

8 large skin-on boneless chicken thighs (6 ounces each, boneless; 8 ounces each, bone-in) Sea salt and freshly ground black pepper 1/4 cup Chinese sweet-hot mustard, plus 1/2 cup for serving 4 ounces pepper Jack cheese, coarsely grated or cut into matchstick slivers 4 ounces Chinese sausage, cut into matchstick slivers 4 ounces sliced Chinese ham or other smoked ham, cut into matchstick slivers 8 shiitake mushrooms, stems removed, caps thinly sliced 3 scallions, trimmed, white and green parts thinly sliced on a diagonal (divided use) 1 batch Char Siu Barbecue Sauce for serving (see recipe)

Steps:

  • Step 1: Place the chicken thighs on a cutting board and open them through the cut made to remove the bone. Season the insides of the chicken with salt and pepper. Spread the meat with the mustard. Fill each thigh with an equal amount of cheese, Chinese sausage, ham, sliced shiitakes, and scallions. Close the thighs to envelop the stuffing and secure with 2 intersecting pieces of butcher's string. Refrigerate until grilling. ShareTweetPin257 Shares Step 2: When you are ready to cook, set up your grill for indirect grilling and preheat to medium. Brush and oil the grill grate. Indirect grill the chicken thighs with the grill lid closed until the outsides are browned and sizzling and the cheese is melted, about 50 minutes. This dish is so easy to make, but so delicious! Due to the marinating time, you do need to plan ahead to make this, but the wait is worth it. I serve this with a skinny Hawaiian slaw and there are never leftovers. Whether I roast it or grill it, this recipe never fails.

1 cup brown sugar
¼ cup soy sauce
2 tablespoons hoisin sauce
2 tablespoons honey
1 clove garlic, minced
1 tablespoon sriracha sauce
1 tablespoon sherry
1 tablespoon red food coloring
1 teaspoon sesame oil
½ teaspoon Chinese five-spice powder
⅛ teaspoon liquid smoke flavoring
12 skinless, boneless chicken thighs

Steps:

  • Whisk brown sugar, soy sauce, hoisin sauce, honey, garlic, sriracha sauce, sherry, food coloring, sesame oil, Chinese five-spice powder, and liquid smoke together in a bowl; pour into a resealable plastic bag. Add chicken thighs, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 24 to 48 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Line a roasting pan with aluminum foil and place a roasting rack in the bottom of the pan.
  • Remove chicken from marinade and place on the rack in the prepared roasting pan.
  • Pour marinade into a saucepan; bring to a boil, reduce heat to low, and simmer for 3 to 5 minutes. Remove from heat.
  • Bake chicken in the preheated oven, turning once and basting occasionally with marinade, until the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Transfer the chicken to a ziploc bag and add in hoisin sauce, honey, vegetable oil, dark soy sauce, and garlic. Press the air out of the bag and seal tightly. Press the marinate around the chicken to coat and place in the fridge to marinate at least 1 hour or overnight.
  • Preheat oven to 400 F. Line a roasting pan (or quarter sheet baking pan) with aluminum foil and place the wire rack on top. Arrange the chicken on top of the wire rack. (You can add a cup of water to the bottom of the baking pan to keep the pan from smoking due to the pan drippings getting burnt).
