Charred Alaska Halibut Tacos with Cilantro Pesto image

Pesto isn't just for pasta! This zesty cilantro and parsley pesto is a mouthwatering accompaniment to grilled halibut tacos. Gluten free recipe courtesy Natalie Kahn of Valencia, California.

1 bunch cilantro
1 bunch flat leaf parsley
1 jalapeño, minced
1/4 cup toasted Pepitas (pumpkin seeds)
1 clove garlic, minced
1/4 cup cotija cheese
1/4 cup extra-virgin olive oil
Salt and pepper, to taste
1 pound Alaska Halibut fillets
Olive oil
8 small (4-inch) corn tortillas
1/2 head red cabbage, finely shaved
1/4 cup cotija cheese
Lime wedges, for garnish

Steps:

  • Combine all pesto ingredients in a blender or food processor and blend. Drizzle in more olive oil or water, if needed, until you get a salsa-like consistency. Season to taste with salt and pepper; set aside.
  • Heat grill to medium-high heat (400F). Brush Alaska halibut and grill surface with oil; grill 5-7 inches from heat for about 8 minutes, turning once during cooking. Cook just until fish is opaque throughout. Season with salt and pepper.
  • Char tortillas on grill or grill pan. Top each taco with a big pinch of shaved red cabbage. Break halibut into chunks and distribute evenly between tortillas. Top with a generous spoonful of pesto, a sprinkle of extra cotija cheese, and a lime wedge. Cook's tip: Alaska halibut can also be sautéed, roasted or broiled, cooking just until opaque throughout.

¼ cup olive oil
¼ cup chopped cilantro
1 jalapeno pepper, diced
1 tablespoon ground ancho chile powder
¼ teaspoon ground cumin
salt and ground black pepper to taste
½ pound halibut fillets
8 corn tortillas
2 cups shredded cabbage
1 (8 ounce) jar salsa
1 cup shredded pepper Jack cheese
1 avocado, sliced

Steps:

  • Stir lime juice, olive oil, cilantro, jalapeno, chile powder, cumin, salt, and pepper together in a large bowl or resealable zip-top bag. Add halibut and marinate for 20 to 25 minutes. Do not over-marinate, as lime juice will start to 'cook' the fish.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Drain marinade; grill fillets for 5 minutes. Turn and cook until fish flakes easily with a fork, about 2 minutes more.
  • Warm tortillas on the grill or stove. Divide halibut among tortillas and top with cabbage, salsa, pepper Jack cheese, and avocado.

Pesto
1/2 cup loosely packed fresh cilantro, coarsely chopped
1 medium fresh jalapeño, seeds and ribs discarded, finely chopped (optional)
2 tablespoons finely chopped walnuts
2 tablespoons shredded or grated Parmesan cheese
1 teaspoon grated lime zest
1 tablespoon fresh lime juice
2 teaspoons olive oil
1 medium garlic clove, minced
4 halibut or salmon fillets (about 4 ounces each), rinsed and patted dry

Steps:

  • Lightly spray the grill rack or broiler pan with cooking spray. Preheat the grill on medium high or preheat the broiler.
  • In a small bowl, stir together the pesto ingredients. Brush half the pesto on one side of the fish. Place the fish with the pesto side up on the grill rack or in the broiler pan. Set the remaining pesto aside.
  • Grill or broil about 6 inches from the heat for 4 minutes. Turn the fish over. Spread with the remaining pesto. Grill or broil for 4 to 6 minutes, or until the fish flakes easily when tested with a fork (for halibut) or is the desired doneness (for salmon). Watch carefully so the walnuts don't burn.

4 (4 ounce) halibut fillets

Steps:

  • Preheat grill to medium heat.
  • Meanwhile to prepare pesto, place 1 1/2 cups cilantro, 3 tablespoons garlic, pine nuts, Parmesan cheese, 1/4 teaspoons salt and pepper in a food processor and blend.
  • Add olive oil, slowly, in a steady stream at low speed until combined and set aside.
  • Combine lemon juice, remaining 1/2 cup cilantro, minced garlic and remaining 1/4 teaspoons salt in a small bowl and pour over fish.
  • Grill fish 6-8 minutes on each side or until fish flakes easily with fork.
