This spicy green bean recipe is anti-everything. It's full of antioxidants and is anti-aging, too! Vegan and gluten-free.

1 pound of green beans, washed and trimmed
4 TB extra virgin olive oil
1 cup of red onion, chopped
1 cup of raw cashews, chopped
sea salt to taste
black pepper to taste
2 tsp paprika
2 tsp fresh flat leaf parsley

Steps:

  • In a 4-quart pan, heat water to boil Cook the green beans for 3 to 4 minutes. Drain in a colander and run cold water over the green beans immediately to stop the cooking process In a frying pan, add olive oil, onions, cashews, salt, pepper, and paprika Cook for 2 minutes over medium heat Add the green beans and cook for another 4 minutes Sprinkle parsley on top and serve

These green beans with bagna cauda flavors make a wonderful accompaniment to any meat, fish or chicken dish. The beans are simple to cook and fairly effortless, so do resist the urge to stir too often. Allow them to sit, caramelize and shrivel to bring out all of their natural sweetness. Anchovies are tossed in at the end for a bright, salty hit that complements the sweet beans and shallots. These beans can be made ahead, and are equally delicious warm or at room temperature.

3 tablespoons extra-virgin olive oil
1 large shallot, thinly sliced (about 1/2 cup)
3 garlic cloves, thinly sliced
1 pound green beans, trimmed and patted dry
Kosher salt and black pepper
3 anchovies, minced

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium. Add shallot and cook, stirring occasionally, until golden, about 5 minutes. Stir in garlic until fragrant, 1 minute. Using tongs or a slotted spoon, transfer mixture to a small bowl.
  • Add the remaining 2 tablespoons oil to the skillet. Add green beans, season with salt and pepper and toss to evenly coat in the oil. Leave undisturbed over medium heat for 2 minutes to encourage charring, then stir and cook, tossing every 2 minutes, until most of the beans are shriveled, about 6 minutes longer.
  • Reduce heat to low and add the shallot mixture and anchovies. Cook, stirring, until well incorporated and anchovies dissolve, about 2 minutes. Season with salt and pepper.
  • Transfer to a serving platter and serve warm or at room temperature.

10 garlic cloves, unpeeled
2 teaspoons plus 1/4 cup olive oil, divided
2 pounds fresh green beans, trimmed
1 cup water
1 cup lightly salted cashews, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Cut stem ends off unpeeled garlic cloves. Place cloves on a piece of foil. Drizzle with 2 teaspoons oil; wrap in foil. Bake 25-30 minutes or until cloves are soft. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork to form a paste., In a Dutch oven, heat remaining oil over medium-high heat. Add green beans and garlic; cook and stir 2-3 minutes. Add water; bring to a boil. Reduce heat; simmer, uncovered, 7-10 minutes or until beans are crisp-tender and water is almost evaporated, stirring occasionally. Add cashews, salt and pepper; toss to combine.

  • Arrange a steamer basket in a pot over boiling water, and steam the green beans 3 to 4 minutes.
  • In a bowl, mix the soy sauce, garlic, garlic chili sauce, and honey.

1 cup roasted, salted cashew nuts
6 tablespoons chopped cilantro, with some stems
1/4 cup canola or safflower oil
4 garlic cloves, roughly chopped
2 tablespoons soy sauce
2 teaspoons brown sugar
1 to 2 jalapeño peppers, sliced (discard seeds or not, to taste)
Juice of 1 lime, plus lime wedges for garnish
Kosher salt and freshly ground black pepper
3 pounds chicken thighs and/or drumsticks

Steps:

  • In a blender or food processor, combine nuts, 2 tablespoons cilantro, oil, garlic, soy sauce, sugar, jalapeño, lime juice and 2 tablespoons water. Blend until smooth, scraping down sides as necessary. Taste and season with salt and pepper if desired.
  • Season chicken all over with salt and pepper. Smear on enough cashew mixture to thoroughly coat pieces. (Set aside any remaining mixture.) Let marinate at room temperature while you heat grill or broiler. Or refrigerate for up to 12 hours before cooking.
  • Preheat broiler or grill. Grill or broil chicken, turning frequently, until it is crisp and golden on outside and done on inside (cut a small nick to check), 20 to 30 minutes.
  • Sprinkle chicken with remaining cilantro and serve with lime wedges and remaining cashew mixture.

2 tablespoons olive oil
1/2 cup slivered red onion
1/3 cup unsalted cashews
1/4 teaspoon salt
1/4 teaspoon black pepper
3 -5 sprigs fresh parsley, chopped

Steps:

  • Place green beans in a pot of boilling water and cook for 5 minutes.
  • Drain beans and immediately place in a bowl of ice-cold water, drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat for 30 seconds.
  • Add onions, cashews, salt and pepper.
  • Stir-fry for 2 to 3 minutes or until onions are softened.
  • Add the cooked green beans, raise heat to high, stir-fry for 2 to 3 minutes or until beans feel hot to the touch.
  • Take care not to burn the cashews during process.
  • Transfer the beans to a serving plate and garnish with chopped parsley.

Juice and zest of 1 lemon
1 clove garlic, grated
1 tablespoon Dijon mustard
2 teaspoons fresh oregano, finely chopped
1/3 cup olive oil
1/3 cup crumbled feta
1/4 cup sliced toasted almonds

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Bring a large pot of salted water to a boil. Add the green beans and cook at a rapid boil until tender, 2 to 3 minutes. Transfer the green beans to an ice bath, then dry on a kitchen towel.
  • Add the green beans to a grill basket and place over indirect heat to char them slightly, about 5 minutes. You do not have to cover the grill. When they reach the char level you are looking for, transfer them to a serving platter.
  • Whisk together the lemon juice, garlic, mustard and oregano in a medium bowl. Slowly drizzle in the olive oil while whisking constantly, then season with salt and pepper.
  • Pour the oregano vinaigrette over the green beans while still warm, then sprinkle with the feta and almonds. Serve warm or at room temperature.
