Chipotle butter provides a wonderful addition to these cheesy biscuits that are made using Bisquick® mix and Betty Crocker® cornbread & muffin mix - ready in 30 minutes.

1 pouch (7.5 oz) Bisquick™ Complete buttermilk biscuits mix
1 pouch (6.5 oz) Betty Crocker™ cornbread & muffin mix
1 container (8 oz) sour cream
1/2 cup buttermilk
1 cup shredded Cheddar cheese (4 oz)
1 teaspoon fajita seasoning, if desired
1/2 cup butter, softened
2 teaspoons chopped fresh parsley
1 chipotle chile in adobo sauce (from 7-oz can), finely chopped
2 teaspoons adobo sauce (from can of chipotle chiles)

Steps:

  • Heat oven to 400°F. Lightly grease 2 cookie sheets with shortening or cooking spray.
  • In medium bowl, stir all biscuit ingredients with fork or whisk until blended. On lightly floured surface, press or roll dough to 1/2-inch thickness. Cut dough with floured 2-inch round cutter; place rounds on cookie sheets.
  • Bake 10 to 12 minutes or until golden brown.
  • Meanwhile, in small bowl, mix butter, parsley, chipotle chile and adobo sauce. Serve biscuits warm with chipotle butter.

2 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons granulated sugar
3/4 teaspoon salt
2 cups grated sharp cheddar cheese
1/3 cup oil
3/4 cup milk

Steps:

  • Measure first 4 ingredients into bowl.
  • Add grated cheese.
  • Stir.
  • Add cooking oil and milk.
  • Stir to form a soft ball of dough.
  • Add more milk if needed to make dough soft.
  • Turn out on lightly floured board and knead gently 8-10 times.
  • Roll to 3/4 to 1 inch thick.
  • Cut with biscuit cutter.
  • Place on ungreased cookie sheet close together for moist sides or 1 inch apart for crisp sides.
  • Bake in 425 degree oven for 15 minutes or until nicely browned.
  • Serve plain or with butter.

  • Preheat oven to 450 degrees F (230 degrees C).

1 Tbsp granulated sugar
1 Tbsp baking powder
1 tsp ground black pepper
1 tsp cream of tartar
1 tsp salt
1/2 cup (1 stick) unsalted butter, (chilled and cut into 1-inch pieces)
2 cups grated sharp cheddar cheese ((see notes))
1 cup + 2 Tbsp buttermilk
2 Tbsp chopped chipotle peppers + 1 Tbsp adobo sauce
1 large egg
Coarse salt, (for topping)

Steps:

  • Pre-heat oven to 400 degrees and line two baking sheets with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, black pepper, cream of tartar, and salt.
  • Work the butter into the flour using a pastry blender or your hands, until it resembles coarse meal. Blend in shredded cheddar cheese.
  • In a separate small bowl, whisk together buttermilk, chopped chipotle peppers, adobo sauce, and egg until well combined.
  • Add wet mixture to dry mixture and stir together with a wooden spoon until just incorporated. Do not over-mix.
  • Scoop about ¼ cup of the dough with a measuring cup or a small ice cream scoop and place on prepared baking sheets about 2 inches apart. Sprinkle with coarse salt.
  • Bake for about 19-21 minutes, rotating pans halfway through, until biscuits are golden brown.

Steps:

  • Stir together first 5 ingredients, and, if you like, fajita seasoning. Pat or possibly roll dough out onto a lightly floured surface to 1/2-inch thickness. Cut dough with a 2-inch round cutter, and place rounds on a lightly greased baking sheet. Bake at 400 degrees for 10 to 12 min. Serve with Chipotle Butter. Garnish, if you like. This recipe yields 2 dozen.

This is a scratch recipe, adapted from Food and Wine, that is a dead ringer for the ones I enjoy at Ruby Tuesday's. I like it because it uses plain flour instead of Bisquick.

Number Of Ingredients 11

2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon garlic powder
1/3 cup butter, cold, cut into chunks
2 tablespoons odorless vegetable oil or 2 tablespoons any flavorless odorless vegetable oil
1 cup grated sharp cheddar cheese or 6 -7 ounces sharp cheddar cheese
1/2-2/3 cup milk
3 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley flakes or 1 tablespoon fresh parsley, finely chopped

Steps:

  • In a large bowl, whisk together the flour, baking powder, salt and garlic powder.
  • Add the cubed butter. Using a pastry cutter or a fork, cut butter into flour until it is coarse, pea-sized.
  • Add oil, grated cheddar cheese and the milk. Stir till well combined and holds together.
  • Make sure to keep adding milk a bit at a time, just until the dough is moistened and you can no longer see any raw flour.
  • Drop approximately 1/4 cup portions of the dough onto an un-greased cookie sheet or a using an ice cream scoop or large spoon.
  • Bake for 15-17 minutes in a preheated oven at 400 degrees.
  • While biscuits are baking, melt 3 tablespoons butter is a small bowl with 1/2 teaspoon garlic powder and the parsley.
  • When biscuits come out of the oven, use a brush to spread this garlic butter over the tops of all the biscuits. Do this a few times - it's fun to watch all the butter getting absorbed into the biscuit! Use up all of the butter. Serve warm.
