CHILEAN-STYLE CHEESE EMPANADAS (FRITAS DE QUESO)
Steps:
- Gather the ingredients.
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, and sugar.
- Gently mix the vegetable shortening into the flour.
- Place the milk and water in a saucepan and heat until almost boiling.
- Stir the hot liquid into the flour mixture. Add more water (1 tablespoon at a time) if the mixture seems too dry and crumbly, or add more flour if the mixture is too wet and sticky.
- Knead dough gently until well mixed and homogenous.
- Divide dough into 16 portions, and roll each piece into a ball. Let the dough rest for 5 minutes.
- Grate or finely chop cheese.
- Roll each ball of dough into a 6- to 7-inch circle.
- Place 1 ounce of cheese in the center of each dough circle.
- Fold the dough in half over the cheese to form a semicircle.
- Press down firmly along edges to seal.
- Roll the edge inward over itself and press down again to seal.
- Crimp edge decoratively with a fork, pressing to seal.
- In a deep-sided skillet, pot, or deep-fat fryer, heat several inches of vegetable oil to 350 F. Fry empanadas in batches, turning at least once, until golden brown.
- Drain empanadas on paper towels.
- Empanadas can be kept warm in a 200 F oven for up to 1 hour before serving. Serve warm.

CHEESESTEAK EMPANADAS
These flaky empanadas are filled with all the fixin's of Philly's famous cheesesteaks. A spicy cheese sauce for dipping on the side is the winning touch -- or you can skip it depending on which whiz camp you're in.

Steps:
- Position 2 racks in the middle of the oven and preheat to 425 degrees F. Line 2 baking sheets with parchment.
- Heat the oil in a large skillet over medium-high heat. When it starts to shimmer, add the beef, a pinch of salt and a few grinds of pepper. Cook, stirring occasionally, until lightly browned on the edges and just cooked through, 2 to 3 minutes. Transfer the beef to a medium bowl and set aside. Add the garlic, onion and bell pepper to the skillet and cook, stirring constantly, until crisp-tender, about 2 minutes.
- Add the vegetables to the bowl with the beef and toss to combine. Allow to cool slightly. Fold in the provolone cubes. Lightly beat the egg with 1 tablespoon water in a small bowl and set aside.
- Unfold 1 puff pastry sheet onto a lightly floured surface. Roll out into a 12-inch square. Cut out 9 rounds with a 4-inch round cookie cutter. Spoon about 1 tablespoon of the meat filling just off center on each round. Brush the edge of each round with the egg wash and fold the puff pastry over the filling, slightly stretching if necessary. Press the edges together and crimp with a fork to seal.
- Transfer the empanadas one of the prepared baking sheets and brush each with more egg wash. Repeat this process with the remaining pastry sheet, filling and egg wash. Bake until puffed and golden brown, about 15 minutes.
- Meanwhile, combine the cheese sauce, pepperoncini and juice in a microwave-safe bowl. Microwave on high for 30 seconds and then stir. Repeat until hot.
- Serve the empanadas with the cheese sauce for dipping.

Steps:
- Heat oil in a large skillet.
- Cook down onions until translucent.
- Add meat, 1 teaspoon salt, and ½ teaspoon pepper, and cook until meat is fully cooked. Transfer into a large bowl.
- Preheat oven to 400°F (200°C).
- Combine cheese, ketchup, mustard, Worcestershire sauce, and 1 teaspoon of salt. Mix thoroughly.
- Roll out the pie crust and cut into 4 pieces.
- Place a spoonful of the stuffing on one side of the dough, leaving ¼ inch (6 mm) from the edge and fold over, creating a triangle.
- With a fork, crimp down the 2 sides so the stuffing stays in.
- Transfer onto baking sheet. Brush on egg and sprinkle on sesame seeds.
- Bake for 20 minutes or until golden brown and pie crust is thoroughly cooked.
- Let it cool for a few minutes

ECUADORIAN FRIED CHEESE EMPANADAS
Steps:
- Place the flour in a large bowl with the salt and baking powder and whisk briefly to mix.
- Cut the butter into small pieces and add it to the flour. Use a pastry cutter or 2 knives to "cut" the butter into the flour, until the mixture is crumbly and there are no large pieces of butter.
- Add the milk or water 2 tablespoons at a time and mix gently with a fork. Continue to mix until the dough comes together and is not too dry or shaggy (you made need slightly more or less water).
- Knead the dough a few times with your hands until it is relatively smooth.
- Wrap it tightly in plastic wrap and let it rest on the counter for 30 minutes (or refrigerate for several hours-up to overnight).
- Cover dough with plastic wrap and set aside for 30 minutes (or refrigerate until ready to use). This dough can also be prepared in a food processor. Add the butter to the flour mixture and pulse briefly until butter is in small pieces and the mixture is crumbly. Add the milk or water gradually and pulse, just until the dough comes together into a ball.
- Melt the butter in a small skillet and add the minced onion. Cook over medium-low heat until the onion is translucent and fragrant.
- Remove from heat and let cool.
- When it has cooled, place the onion with the shredded cheese in a bowl and toss to combine.
- Divide the dough into 16 equal balls. Roll each piece of dough into a ball, and then let the dough rest for 5 minutes.
- On a lightly floured surface, roll each ball of dough into a thin, 6-inch diameter circle, letting the dough rest for several minutes if needed to let the dough relax and stretch.
- Brush the edges of a circle of dough lightly with water.
- Place 1 1/2 tablespoons of the cheese mixture in the middle of the dough, and then fold the circle of dough in half and seal the edges together firmly.
- Fold the edges of the dough into a decorative seam (learn how to shape and fill empanadas ).
- Repeat with remaining pieces of dough.
- Heat several inches of vegetable oil in a deep skillet or saucepan over medium-high heat.
- The oil is hot enough with a piece of the dough sizzles gently in the oil.
- Cook the empanadas in batches, flipping them once until they are golden brown.
- Carefully remove the empanadas from the oil with a slotted spoon, spatula, or tongs, and place them on a plate lined with paper towels.
- Sprinkle the tops of the empanadas with a teaspoon of sugar as soon as you place them on the plate.
- Let empanadas cool for 5 minutes before serving.

- Preheat oven to 425°F.
- In a small heavy skillet cook leek and prosciutto in oil over moderate heat, stirring, until leek is softened. Add water and cook, covered, over low heat until leek is soft, about 10 minutes. Pour off any excess water. Remove skillet from heat and add salt and pepper to taste. Let filling cool completely and stir in cheese.
- Roll out puff pastry on lightly floured surface into a 12-inch square and with a 4-inch round cutter cut out 4 rounds.

- DAY BEFORE: Cream butter and cream cheese together until smoothly blended. Beat in the flour. Shape dough into a smooth ball, wrap in foil or cling wrap, and refrigerate overnight or up to a week.
- AT BAKING TIME: Remove dough from refrigerator 30 minutes before using. Start heating oven to 375 degrees F (190 degrees C).
- Roll chilled dough thin. Cut with 3 or 4 inch round cookie cutter. Place small spoonful of jam in center of each round, moisten edges with water.
- Fold round over and press edges together. Bake on ungreased cookie sheet 15 to 20 minutes. Immediately roll in sugar mixed with cinnamon (traditional) OR in confectioners' sugar if preferred.

- Make the filling by mixing the corn, coriander, spring onion, cheese and chilli with some seasoning.
- Unroll the pastry sheet, roll a little thinner with a rolling pin, then use a 10cm circle cutter to cut out circles of pastry. (You should get 6 circles, then re-roll the trimmings for 2 more.) Brush edges of the circles with a little of the beaten egg, then spoon a couple of teaspoonfuls of filling mixture onto each. Fold over one half of the pastry, and seal by pinching the edge with your fingers, until you have 8 small pastyshaped empanadas. Arrange on a baking parchment lined baking sheet, brush with the rest of the egg and scatter with sesame seeds. Cover and chill for at least 30 mins before baking.
- To serve, heat oven to 200C/180C fan/ gas 6 and bake for 20 mins until golden and crisp.
