Don't let the delicate look of these hors d'oeuvres fool you. A touch of cayenne gives them a hint of heat that makes them a tasty accompaniment to a pre-dinner cocktail-or even a cold beer.

Steps:
- Preheat oven to 350°F with racks in upper and lower thirds.
- Pulse cheese, flour, butter, salt, and cayenne in a food processor until mixture resembles coarse meal. Add milk and pulse until dough forms a ball.
- Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12- by 10-inch rectangle (1/8 inch thick). Cut dough with a lightly floured pizza wheel or lightly floured sharp knife into 1/3-inch-wide strips. Carefully transfer to 2 ungreased baking sheets, arranging strips 1/4 inch apart. (If strips tear, pinch back together.)
- Bake, switching position of sheets halfway through baking, until pale golden, 15 to 18 minutes. Cool completely on baking sheets on racks, about 15 minutes.

- Heat oven to 350 degrees. In a food processor, combine cheese, butter, flour, salt and red pepper, and pulse until mixture resembles coarse crumbs. Add half-and-half, and process on low speed until dough forms a ball.
- On a lightly floured surface, using a lightly floured pin, roll dough to a rectangle 8 by 10 inches and 1/8 inch thick. With a sharp knife, cut dough laterally into thin strips, 1/4 to 1/3 inch wide. Gently transfer each ''straw'' to an ungreased cookie sheet, leaving a 1/4-inch space between them, and bake 17 minutes, or until the ends are barely browned. Let cool.

- Preheat oven to 350°F.
- In a food processor, combine the cheese, butter, flour, salt and red pepper in five 5-second pulses until the mixture resembles coarse crumbs. Add the half-and-half and process until the dough forms a ball, about 10 seconds.
- On a lightly floured surface, using a lightly floured rolling pin, roll the dough into an 8- by 10-inch rectangle that is 1/8-inch thick. With a sharp knife (or a pizza or pastry wheel; both worked great), cut the dough into thin 8-inch strips, each 1/4- to 1/3-inch wide (dipping the knife in flour after every few inches ensures a clean cut). Gently transfer the strips to an ungreased cookie sheet (though I lined mine with parchment), leaving at least 1/4-inch between them. The dough may sag or may break occasionally in the transfer, but don't be concerned - just do your best. The straws can be any length, from 2 to 10 inches.
- Bake the straws on the middle rack for 12 to 15 minutes, or until the ends are barely browned. Remove from the oven and set the cookie sheet on a rack to cool.
- Serve at room temperature. Cheese straws will keep in the refrigerator, in a sealed container, for two days. They will not last an hour at a party.

- 1. Combine first 5 ingredients in a food processor; pulse in 5-second intervals until mixture resembles coarse crumbs. Add half-and-half, and process 10 seconds or until dough forms a ball.
- 2. Turn dough out onto a well floured surface, and roll into an 8- x 10-inch rectangle (about 1/8 inch thick). Cut dough with a sharp knife into 1/4- to 1/2-inch-wide strips, dipping knife in flour after each cut to ensure clean cuts. Place on ungreased baking sheets.
- 3. Bake at 350° for 12 minutes or until ends are slightly browned. Cool on baking sheets on a wire rack 30 minutes. Break into desired lengths.
- Note: To make cheese rounds, roll dough to 1/8-inch thickness, and cut with a 1 1/2-inch round cutter. Place on ungreased baking sheets. Bake and cool as directed. Freeze baked cheese straws or rounds in a heavy-duty zip-top plastic freezer bag up to 3 months. Let thaw at room temperature 30 minutes before serving.

- Preheat the oven to 350 degrees F. Line a large baking sheet (half sheet pan) with parchment or a silicone baking mat. If your baking sheet is smaller, simply bake in two batches.
- In a food processor fitted with the grating attachment, grate the cheese. Remove the grating attachment and put in the chopping blade (you may need to remove the cheese in order to do this. Just put the cheese back in after).
- Cut the butter into large pieces and add to the food processor with the cheese. Add the flour, salt and red pepper flakes. Pulse for 10 seconds at a time, until the mixture is crumbly.
- Add the milk or cream, and process until the mixture comes together into a ball. About another 15-20 seconds.
