- Preheat oven to broil with oven rack 6 to 8 inches from heat. Heat oil in a large ovenproof skillet over medium-high. Add onion and garlic; cook, stirring often, until softened, about 5 minutes. Add oregano, salt, black pepper, and crushed red pepper, if using. Cook, stirring, for 1 minute. Stir in beans.
- Add tomatoes, crushing them lightly with your hands, and their juices. Stir to combine. Bring to a simmer and cook, stirring occasionally, until liquid is slightly reduced, about 5 minutes.
- Top mixture with cheese and transfer skillet to oven. Broil until cheese is melted, bubbly, and browned in spots, 3 to 4 minutes. Serve with crusty bread or toast.

- Cook rice according to package directions. Transfer to a large bowl; add the beans. In a nonstick skillet, saute onion in oil for 4-5 minutes. Stir in the tomatoes, chili powder and salt. Bring to a boil; remove from the heat., In a 2-qt. baking dish coated with cooking spray, layer a third of the rice mixture, cheese and tomato mixture. Repeat layers. Layer with remaining rice mixture and tomato mixture. , Cover and bake at 350° for 30 minutes or until heated through. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until cheese is melted.

A tube of tomato paste here mimics the deep flavors of sun-dried tomato. Frying a few generous squeezes caramelizes the tomato's sugars and saturates the olive oil, making a mixture that's ready to glom onto anything you stir through it. Here, it's white beans, though you could add in kale, noodles, even roasted vegetables. Then, all that's left to do is dot it with cheese and bake until it's as molten or singed as you like. Serve with bread and a bitter-green salad.

CHEESY, SPICY BLACK BEAN BAKE
Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

Another recipe from a singing legend. Remember Isaac Hayes? Of "Shaft" fame? He has a tremendous cookbook and there are so many wonderful recipes, I dedicated an entire cookbook for his recipes.
