These crunchy, crispy crackers have a big, bold cheese flavor. They're vastly superior to anything you can get at the store. You can change up the cheeses and the spices. It's really a fun thing to play around with.

½ teaspoon vegetable oil
2 tablespoons unsalted butter at room temperature
¾ cup lightly packed shredded sharp Cheddar cheese
⅓ cup lightly packed freshly shredded Parmesan cheese
½ teaspoon paprika
1 pinch cayenne pepper, or to taste
¼ teaspoon salt
½ cup all-purpose flour
1 tablespoon cold water, or as needed

Steps:

  • Line a baking sheet with aluminum foil and lightly grease with vegetable oil.
  • Place butter into a mixing bowl; add Cheddar cheese, Parmesan cheese, paprika, cayenne pepper, and salt. Mix together with the back of a spatula until thoroughly combined.
  • Mix flour into cheese mixture with a fork until crumbly. Sprinkle in cold water, 1 or 2 drops at a time, and mix with spatula until it comes together in a dough that holds its shape when squeezed.
  • Transfer dough to a work surface and press into a thick, flattened disk. Wrap in plastic wrap and refrigerate 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll dough out on a floured work surface to about 1/8-inch thick. Use a pizza cutter to cut 1-inch wide strips from the dough. Cut strips crosswise into rectangles about 1 1/2-inches long. Use the back of a bamboo skewer to punch 5 small holes into each cracker. Arrange crackers onto prepared baking sheet.
  • Bake in the preheated oven until crackers are browned and crisp, about 15 minutes. Let stand about 3 minutes for crackers to cool and release from the foil. Let cool completely before serving.

Here's what you need: shredded cheddar cheese, unsalted butter, salt, flour, ice water

8 oz shredded cheddar cheese
4 tablespoons unsalted butter, room temperature
1 teaspoon salt
1 cup flour
2 tablespoons ice water

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
  • Once combined, mix in the flour and add the ice water one tablespoon at a time.
  • The dough should hold together but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
  • Separate dough into two halves and pack together into discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
  • Roll out dough to ⅛ of an inch (½ cm), pinching the cracks on the ends.
  • Cut into 1 inch x 1 inch (2 ½ x 2 ½ cm) squares and pierce a hole in the middle of each square for ventilation during baking.
  • Place the separated crackers on a parchment paper-lined baking sheet.
  • Bake for 13 minutes, or until golden brown.

24 round buttery crackers
1/2 of a medium red pepper, cut into very thin slices

Steps:

  • Cut each cheese slice into football shape with sharp knife; place 1 cheese slice on each cracker. Place cheese trimmings in resealable plastic bag and store in refrigerator for snacking or another use.
  • Cut peppers into small pieces. Arrange on top of cheese to resemble the laces and seams of a football.

1 pound cream cheese, softened
8 ounces sharp Cheddar, shredded
3/4 teaspoon hot sauce
3/4 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 medium shallot, minced
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
1 1/4 teaspoons minced fresh rosemary
1 1/4 teaspoons minced fresh thyme
One 9.1-ounce box whole-wheat crackers, such as Wheat Thins
1 1/4 cups walnuts
1 piece white string cheese
Vegetable crudites, for serving

Steps:

  • Combine the cream cheese, Cheddar, hot sauce, Worcestershire sauce, garlic powder, onion powder and shallots in a large bowl. Beat with an electric mixer until thoroughly blended. Season with salt and pepper. Transfer to a large sheet of plastic wrap, cover with a second sheet of plastic wrap and form into a football shape. Wrap up in the plastic and refrigerate until firm, at least 2 hours and up to overnight.
  • Preheat the oven to 350 degrees F.
  • Combine the butter, rosemary and thyme in a small bowl and microwave until melted.
  • Lay the crackers out on two baking sheets. Brush the tops with about 2 1/2 tablespoons of the herb butter. Bake until fragrant and a shade darker, about 10 minutes. Cool completely, then store in an airtight container at room temperature until ready to eat. (The crackers can be made up to 2 days ahead.)
  • Toss the walnuts with the remaining herb butter and arrange on a baking sheet in a single layer. Bake until golden brown, about 8 minutes. Cool completely, then finely chop.
  • Unwrap the cheese ball and cover completely with the walnuts. Transfer to a serving dish. Separate the string cheese into strands and arrange them to look like the laces on a football. Serve with the herbed crackers and crudites.

My friend Misty made this every Sunday when our families got together to watch football. She would never give me the exact recipe until she moved away and felt sorry for me! It is sinfully good! She likes it with the corn flakes but I prefer Ritz crackers on mine. If you use Ritz crackers you really don't need to saute' them in butter. I like to use a 9x13 glass pan and I wait for it to cool down so it cuts into more precise squares. I hope you enjoy!

1 lb frozen hash browns
1 (8 ounce) bag cheddar cheese
1 (10 1/2 ounce) can cream of chicken soup
4 tablespoons of melted butter
1 medium sweet onion
2 tablespoons additional melted butter
1 cup sour cream
salt and pepper
2 cups corn flakes

Steps:

  • First, melt the butter in a saute' pan.
  • add diced onions and saute' to your liking, I like them a little al dente myself. Melt the other 2 tbsps of butter in the same pan
  • once melted add the corn flakes and make sure they are coated well. Combine the rest of the ingredients in a mixing bowl
  • once thoroughly mixed spoon into your baking pan, I prefer to use a 9x13 glass pan for this recipe.
  • After that, sprinkle the corn flake topping on the top and
  • bake for approximately 45 minutes at 375, basically until bubbly.

⅓ cup milk
1 teaspoon cornstarch
1 teaspoon Creole seasoning (such as Tony Chachere's®)
1 cup grated medium Cheddar cheese
1 cup all-purpose flour

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Combine milk, cornstarch, and seasoning in a saucepan over medium heat. Whisk constantly and bring to a simmer. Simmer for about 1 minute, then remove from the heat.
  • Add Cheddar cheese and mix until smooth. Sift flour into the mixture a bit at a time and mix until you have a dough ball you can roll out.
  • Roll out the dough on a sheet of parchment paper until as thin as you can. Cut dough into strips with a pizza cutter, and then into squares. Slide crackers and parchment paper onto a cookie sheet.
  • Bake in the preheated oven until crispy, 20 to 30 minutes. Remove from the oven and allow to cool before serving.
