Cheese and oatmeal may seem like a foreign combination, especially if you're used to sweet breakfast oatmeal doused in whipped cream and sugar. This Instant Pot recipe will blow your mind, with an ultra-cheesy and buttery flavor and a fried egg on top for an extra punch of protein. Steps:
- Pour 1 cup of water into your Instant Pot, 1.5 cups of water if you have the 8 quart.
- Place a trivet in the bottom of the pot.
- Place the stackable pot or oven safe vessel onto the trivet.
- Put in 1 cup of oats, 2 cups of broth, salt and pepper.
- I use 2 pinches of salt and 1 of pepper, but adjust to your preference and broth choice.
- Top with the butter.
- Lay the 2 pieces of cheese on top.
- Put the lid on the stackable pot or if you don't have a lid, use aluminum foil.
- Pressure ON HIGH for 14 minutes.
- If using quick cooking oats, quick release the pressure when it's done cooking.
- If using regular steel cuts oats, let the pressure come down naturally for 10 minutes, then release the remaining pressure.
- Carefully, remove the lid and the pot of oatmeal.
- Stir and check for salt and pepper.
- I like to fry up an egg and toss it on top.

- Bring 4 1/4 cups water, 1 teaspoon salt and 1/2 teaspoon pepper to a boil in a large saucepan. Stir in the oats, reduce heat to medium and cook, stirring constantly, until the oats are soft and the oatmeal is slightly thickened, about 7 minutes. Stir in the ham, cheese and chives and remove the saucepan from the heat.
- Heat the oil in a large nonstick skillet over medium-high heat. Carefully crack the eggs into the pan and cook until the whites are set and slightly crispy and the yolk is still runny, 2 to 3 minutes. Sprinkle with 1/4 teaspoon salt.
- Transfer the oatmeal to individual bowls. Top each with an egg, sprinkle with additional fresh chives and serve.

No one in our household liked meatloaf until I threw this together one day. Now even my picky 8-year-old will eat it! It is really moist which is why everyone likes it but has a bit of crust on outside.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- Mix the beef, pork, egg, apple, onion, Worcestershire sauce, salt, and pepper in a mixing bowl until evenly mixed. Add the Cheddar cheese, bread crumbs, and oats; mix again until evenly mixed. Pack the meat mixture into the prepared loaf pan.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (72 degrees C). Allow the meatloaf to rest for 10 minutes before slicing to keep the meat from crumbling.

VERY TASTY CHEESY CHEDDAR AND OAT SCONES
Great served fresh from the oven - split open and douse dangerously with butter.....naughty but very, VERY nice!! These also keep very well in an airtight tin or container and can be toasted next day or gently warmed through in a low oven. Ideal for freezing - will keep in freezer bags for up to 2 months. Great picnic fare - split them open and spread with garlic & chive soft cream cheese, (Boursin or Philadelphia type) or make cheese & ham scone sandwiches or even cucumber scone sandwiches!! The oats give them a great texture - I use fairly coarse porridge oats. This recipe is easily doubled for larger crowds or greedy people!!!

- Preheat oven to 220C - gas 7.
- In a large roomy bowl rub softened butter into flour until they resemble breadcrumbs.
- Stir in oats & cheese, then add the milk - if it feels too dry, add a touch more milk.
- Bring it all together and make a soft dough.
- Lightly dust a surface with flour and roll out the dough until NO thinner than 2cm.
- Using a 4cm scone/cookie cutter firmly stamp out the rounds - do NOT twist as you stamp as it stops the scones from rising evenly!
- Re-roll all the trimings and stamp out some more rounds until the dough is finished.
- Place on a non-stick baking tray/sheet or one which has been lined with non-stick baking paper. Dust with a little more flour OR glaze with a little milk & add some extra grated cheese for the topping if desired.
- Bake for 12-15 minutes until well risen and golden.
- Cool on a wire rack - if you can manage it!
- Serve on their own or with Boursin soft cheese, Philadelphia cream cheese, sliced ham, cucumber, cress or just with BUTTER!
- Cheese variation for the topping is grated parmesan mixed with a little paprika or cayenne pepper.

- Heat the oven to 200C/180C fan/gas 6. Melt the butter in a small pan, then leave to cool slightly. Tip the oatmeal, flour, baking powder, parmesan and sesame seeds, if using, into a bowl with ½ tsp salt, then pour in the melted butter. Add 5 tbsp boiling water and bring together into a firm dough, adding another 1 tbsp boiling water if needed.
- Turn the dough out onto a lightly dusted work surface, then roll out to the thickness of a £1 coin. Cut into small squares or 3-4cm triangles, then transfer to a lined baking sheet. Re-roll any offcuts and repeat. Bake for 12-15 mins until golden. Leave to cool for a few minutes on the baking sheet, then transfer to a wire rack and leave to cool completely. Serve with soft cheese and grapes, if you like.

- Take the microwave safe bowl we all have somewhere.
- Combine your oats, water, baking soda and salt mixing it in a sloppy way.
- Place your slice of cheese on top. Or if your using the better suggestion of a stick cheese, place it in the middle. The stick or string cheese most kids love in their lunches for school is what I use. It can be any combination of the yellow or white or whatever you've got to try.
- Put a cover, just setting on top of the bowl and heat in the microwave for about 45 seconds.
- Take and stir the contents together until all looks like a gooey mostly oat concoction.
- Now you can let it cool or add what you wish to it and eat up.
- My suggestions include salt, pepper, crackers for dipping, salsa, peppers, and the list could go on.
