CHEESE AND ONION MUFFINS RECIPE
These cheese and onion muffins are easy to make and only take 20 minutes to prepare. Give the classic flavour a twist from sandwiches, and serve up these muffins instead

Steps:
- Preheat oven to 200°C/440°F/Gas Mark 6.
- Line a muffin tray with 12 cases.
- In a large frying pan, sauté the onions in 1 tbsp of oil until just soft. Drain on some kitchen towel and set to one side.
- In a bowl sift together the self-raising flour and baking powder.
- Mix through the onion and cheese.
- In a separate bowl mix the milk, eggs and remaining oil stir until well combined.
- Pour the dry ingredients into the wet and mix until just combined.
- Divide between the 12 cases.
- Bake for 15 to 20 mins or until well risen and firm to the touch.
- Remove from the oven and allow to cool for 5 mins before transferring to a wire rack to cool fully.

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
- Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.
- Bake in the preheated oven until the tops just start to lightly brown, 18 to 20 minutes.

- Heat oven to 200C/180C fan/gas 6 and oil a 12-hole muffin tin. Whisk the oil, egg and buttermilk. In a mixing bowl, mix the flour, 1 tsp salt and mustard powder, then stir in the cheddar, spring onions, chives and half the Parmesan.
- Use a large spoon to gently fold the wet ingredients into the dry - don't overmix, just lightly combine. With the final few folds, mix in the soft cheese cubes. Spoon the mixture between the holes in the tin (they will be quite full), scatter with the remaining Parmesan and bake for 25 mins.

CHEESE AND ONION MUFFINS
Steps:
- Preheat oven to 375 F.
- In a non-stick skillet over medium heat stir butter and chopped onion. Sauté for 10-15 minutes until lightly browned.
- In a large mixing bowl mix all dry ingredients together and stir in cheddar cheese and 1/2 cup of parmesan.
- Beat egg, milk, oil and caramelized onions into a separate bowl and add to dry ingredients. Fold gently until just combined.
- Spoon Cheese and Onion Muffins into well-greased cups. Sprinkle the top of each muffin with remaining 1/2 cup parmesan cheese then bake for 15-20 minutes.

- Heat the oven to 200C/180C fan/gas 6 and oil a 12-hole muffin tin. Tip the flour, polenta, bicarb, mustard powder, cayenne and 2 tsp each of the cumin and onion seeds into a bowl with a large pinch of salt. Whisk the oil, milk and eggs together in a jug and pour over the dry ingredients. Beat everything together until smooth. Stir through all but a handful of both cheeses, then divide the mixture between the holes in the tin. Combine the rest of the cheese, cumin and onion seeds and scatter this over the tops.
- Bake the muffins for 20-22 mins until puffed up and golden. Leave to cool for 10 mins in the tin, then transfer to a wire rack to cool completely. Best eaten on the day, but will keep in an airtight container for two days.

- In a food processer, chop the onions and parsley together until minced, but not liquified.
- Remove from blender and set mixture aside.
- Without cleaning the food processor, add the cheese, egg, milk, sour cream, butter and sugar.
- Pulse a couple of times to blend well.
- Add the flour, baking powder, salt, paprika and cayenne.
- Process just until combined, do not overmix.
- Stir in the chopped onions and parsley.
