CHARRED BREAD WITH RICOTTA AND CHERRY SALSA
The cherry salsa recipe atop this bruschetta-like appetizer is also delicious as a condiment for grilled or roast pork.

Steps:
- Toss white/red parts of spring onions and lemon juice in a medium bowl to coat and let sit 10 minutes.
- Add spring onion greens, cherries, and 1/2 cup oil to bowl and toss gently again to incorporate; season cherry salsa with kosher salt and pepper.
- Prepare a grill for medium-low heat. Brush cut sides of baguette with oil. Grill, cut sides down, until bread is toasted and golden brown, about 3 minutes.
- Let toasts cool for a minute, then spread generous amounts of ricotta over both pieces. Sprinkle lightly with sea salt. Cut each half on a diagonal into 6 pieces. Arrange on a platter and, using a slotted spoon, top with cherry salsa.
- Do Ahead
- Cherry salsa can be made 6 hours ahead. Cover and chill.

Steps:
- Combine boiling water and red pepper flakes in a large bowl. Let stand until pepper flakes soften, about 5 minutes.
- Stir cherries, red bell pepper, red onion, lime juice, sugar, and salt into the bowl with red pepper flakes. Let stand until flavors combine, about 30 minutes. Stir in cilantro before serving.

Steps:
- Finely dice spring onion bulb and greens. Place 3 tablespoons diced bulb and 1 tablespoon greens in a small bowl and pour lemon juice over them. Set aside for 10 minutes to macerate.
- Halve the cherries and slice into slivers. Place cherries, herbs, jalapeño, olive oil and salt in a medium-size bowl and stir to combine.
- Add onion and greens, taste and add more salt and lemon juice if needed.
- Let the salsa sit for at least 5 minutes to meld flavors.

I love salsa with a hint of natural sweetness and ground cherries are a perfect addition. This is a relatively mild salsa; if you like it spicier, don't remove the jalapeno seeds, or increase the amount of jalapeno. I use only organic produce, so I don't peel the cucumber.

- Mix lime juice and red onion together in a bowl and let stand stand for about 5 minutes, as this mellows the raw onion taste.

CHERRY TOMATO SALSA
Turn backyard cherry tomatoes into a colorful, and tasty,salsa.

Steps:
- Wash tomatoes and peppers before chopping. Peel onion and garlic.
- Chop cherry tomatoes (I usually cut them in half or in quarters, depending on size), peppers, onion, and garlic.
- Combine all ingredients in large saucepan or Dutch oven. Bring to a boil over medium-high heat.
- Reduce heat and simmer for 10 minutes.
- Ladle hot salsa into pint jars, leaving ½ inch headspace. Wipe jar rims with damp paper towel.
- Cover with two-piece lids. Process in water bath canner for15 minutes.
- Makes about 4 pints of salsa.
