- Finely grate zest from lime. Place zest and cherries in a sterilized pint jar. Bring vinegar just to a boil; pour over fruit, leaving ¼-in. headspace. Center lid on jar; screw on band until fingertip tight. Refrigerate for 1 week., Strain vinegar mixture through a fine-mesh strainer into another sterilized pint jar. Press solids to extract juice; discard remaining fruit., Bring sugar and water to a boil. Reduce heat; simmer until sugar is dissolved. Cool slightly. Stir into vinegar mixture; shake well. Store in the refrigerator up to 2 weeks. , To serve, drink 1-2 tablespoons or add to a glass of ice, top with sparkling water and garnish with fresh cherries and lime.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Beat in lime zest, juice and vanilla. Combine flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition. Fold in walnuts. , Transfer to 2 greased 9x5-in. loaf pans. Bake 50-55 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks. , Combine confectioners' sugar and enough lime juice to reach desired consistency; drizzle over warm bread. Cool completely., Freeze option: Do not make glaze. Securely wrap cooled loaves in foil, then freeze. To use, thaw at room temperature. Prepare glaze as directed.

CHERRY-LIME RICKEY

- Combine the cherries, sugar and 1 cup water in a medium saucepan over high heat. Bring to a boil and reduce to a simmer. Carefully smash the cherries with a potato masher, then simmer the mixture until slightly reduced and dark red, about 10 minutes. Let cool for 10 minutes.
- Strain the mixture through a strainer into a heatproof container, pressing on the cherry solids to extract all the juice. There should be about 1 3/4 cups of syrup. Let cool for 30 minutes.
- Combine the cherry syrup with the limeade and lime juice in a pitcher and stir well. There will be about 3 cups total.
- To serve: Either stir in 3 cups water if you want a still drink, or mix equal parts of the drink mix with seltzer in a glass. Serve over ice with frozen cherries and lime wheels.

- Preheat oven to 375°F. Grease an 8x4-inch loaf pan and set aside.
- In a medium mixing bowl, whisk melted butter, sugar, lime juice, lime zest and eggs. In a separate bowl, mix together the flour, baking powder, and salt.

- In a large bowl, beat butter and sugar together. Add eggs, one at a time. Beat in vanilla. Add vlour, baking powder, baking soda, salt and lime zest. Slowly beat in sour cream.
- Grease two 9inch loaf pans generously. Spoon over half the batter evenly to each pan. Divide pie filling evenly between pans, spooning it over the batter. Top with the remaining bread batter. It's okay if it doesn't cover the cherry filling completely.
- Bake in a 350 degree oven for 60-70 minutes. Remove and cool on a wire rack for 10 minutes. Then remove from pan and cool completely before adding glaze.
- For the glaze, whisk the powdered sugar with lime juice until smooth. Pour over tops of bread. In a small bowl, combine the lime zest with granulated sugar until crumbly. Sprinkle over glaze. Allow to set about 15-20 minutes before wrapping. ENJOY.

BLUEBERRY CHERRY LIME JAM (BREAD MACHINE)
What do you do with a boring day, 3 partial pints of blueberries, and too many cherries? You make jam! It started as most of my recipes do, with a whim. I realized I didn't have enough blueberries for blueberry jam. I had raspberries and blackberries, but I didn't want to put berries that would hide the blueberry taste. Ah HA! I had cherries! I hate pitting cherries, but for this recipe it's worth it. If you don't have a bread machine, no worries! Just use the timing found in other jam recipes that call for pectin.

- Wash your berries and pit your cherries! Hey, that rhymes!
- I use organic dried cane sugar or sucanat for my sweetener, but regular sugar will do fine too.
- Wash your lime and roll it under your hand on the counter top to help it release more juice. You can also put it in the microwave for about 30 seconds or so, then roll it.
- Juice the lime. Sure you can use juice from a bottle, but fresh makes a difference. Plus you get real lime zest. Lime zest is hard to find in the spice section, at least around here.
- Zest the lime until you get at least a teaspoon. I also added a few thin strips of lime peel (try not to get much pith -the white part-) because I love candied citrus peel.
- Put into your pan in order, sugar, pectin, berries, then lime. The breadmaker commandments say it matters. I didn't do it that way because I am a rebel and it turned out fine.
- Put your bowl into the breadmaker. Turn it to the jam setting. Let her rip! Check it at about 5 minutes in then maybe 5 minutes later, just to make sure nothing is sticking to the side. Other than that, it's like magic and does it without your input.
- Go for a run, watch an episode of your favorite TV drama, or chill for about 90 minutes.
- When your jam is done, open the bread machine and let it cool for quite awhile because hot fruit burns are NASTY!

- For the quick bread: Preheat the oven to 350 degrees F. Lightly brush one 9-by-5-by-3-inch loaf pan or three 6-by-3-by-2-inch mini loaf pans with melted butter and set aside.
- Combine the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a medium bowl. Add the dried cherries and almonds and toss together. Set aside.
- Whisk together the melted butter, yogurt, vanilla extract, eggs and grated zest if using in a small bowl. Stir in the shredded zucchini. Fold this mixture into the flour mixture until just incorporated.
- Transfer the batter to the prepared loaf pan(s). Tap the bottom on a hard surface a few times and smooth the top. Bake until a toothpick inserted in the center comes out clean, 55 to 60 minutes for the regular loaf and 35 to 40 minutes for the minis. Transfer to a wire rack to cool for 30 minutes, then turn the bread out and let cool completely on the rack.
- For the lime glaze: Whisk together the confectioners' sugar, milk and lime zest and juice in a small bowl.
- Pour the glaze over the bread and allow to set at room temperature, 15 to 20 minutes. Store in an airtight container for up to 1 week.
