1 spaghetti squash (2 lb.)
2-1/2 cups small broccoli florets
2 Tbsp. KRAFT Lite Zesty Italian Dressing
1 lb. boneless skinless chicken breasts, cut into strips
2 tsp. flour
1 cup fat-free reduced-sodium chicken broth
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
1/2 cup KRAFT Shredded Parmesan Cheese
1/8 tsp. each black pepper and ground nutmeg

Steps:

  • Pierce squash in several places with tip of sharp knife or fork; place in shallow microwaveable dish. Microwave on HIGH 10 to 15 min. or until squash is softened, turning every 5 min. Cool slightly.
  • Meanwhile, place broccoli in microwaveable bowl. Add enough water to cover broccoli. Microwave 3 to 4 min. or until broccoli is crisp-tender; drain.
  • Heat dressing in large nonstick skillet on medium heat. Add chicken; cook 4 to 5 min. or until done, stirring occasionally. Remove chicken from skillet, reserving drippings in skillet; cover chicken to keep warm.
  • Whisk flour and broth until blended. Add to drippings in skillet along with remaining ingredients; stir. Cook 2 min. or until sauce comes to boil, stirring constantly to scrape browned bits from bottom of skillet. Cook and stir 1 to 2 min. or until thickened.
  • Return chicken to skillet along with the broccoli; cook 1 to 2 min. or until heated through, stirring frequently.
  • Cut squash in half; remove and discard seeds. Use fork to scrape insides of squash into strands; place in bowl. Serve topped with chicken mixture.

This healthy alfredo dinner will make it's way into your weekly rotation in no time! Spaghetti squash has just 40 calories per cup, and is a simple substitution for regular noodles. Pair this with oven roasted garlic and herb potatoes on the sides page of my site and you've got a dinner sure to please!

Steps:

  • 1) Preheat oven to 400 degrees. Carefully slice your spaghetti squash in half. They can be very tough to cut! I recommend wedging the top or bottom of the squash into the sink drain so it's not wiggling around on the counter. Once halved, scrape the seeds out with a spoon. Drizzle a small amount of olive oil over each half, and sprinkle a pinch of salt and pepper. Place halves face down on a baking sheet and bake for 40-50 minutes, or until the inside is easily pierced with a fork. While your squash is cooking, grill your chicken. How many people this meal serves depends greatly on the size of your squash. The large squash pictured can easily serve four, a small squash would be closer to 2. For this reason use your own discretion for how much chicken to make, based on the size of your spaghetti squash and how many people you plan to serve! Dice chicken breast or tenders into bite sized pieces and place in a greased skillet. I use McCormick's Garlic and Herb seasoning, but garlic powder and salt will work as well. Cook until internal temperature reaches 165 degrees. If making homemade alfredo sauce, prepare now. If not, grab your jar of sauce! Once squash is done, scrape the insides with a fork to form "noodles". Scrape all the way down to the rind to get every bit! Either using your squash as a bowl, or on your dinner plate, combine noodles, chicken, and alfredo sauce. Enjoy!

In this twist on a classic Southern dish, the noodle-like strands of crisp-tender squash find their way into a creamy chicken and vegetable casserole.

1 large spaghetti squash (about 2 1/2 pounds)
2 tablespoons olive oil
One 10-ounce package sliced mushrooms
1 red bell pepper, diced
4 scallions, thinly sliced, white and green parts separated
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1 cup half-and-half
2 cups shredded rotisserie chicken (skin and bones discarded)
3 cups shredded Cheddar

Steps:

  • Preheat the oven to 425 degrees F. Cut the squash in half crosswise using a serrated knife. Dig out and discard the seeds with a spoon. Place into an 8-by-8-inch microwave-safe casserole dish with 2 tablespoons water. Cover the dish with plastic wrap and microwave on high until the squash is very tender and the inside can easily be flaked with a fork, 13 to 14 minutes. Use a fork to scrap the sides of the squash, separating the strands. Leave the scraped strands in the squash. Drain and dry the casserole dish.
  • Meanwhile, heat the oil in a large oven-proof skillet over medium-high heat. Add the mushrooms and cook, stirring often, until they have released most of their moisture and start to brown, about 5 minutes. Add the bell pepper, scallion whites, cayenne pepper, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the peppers are soft, about 5 minutes. Add the half-and-half and bring to a boil. Reduce the heat to medium and simmer until the liquid has reduced slightly and starts to thicken, 5 to 7 minutes.
  • Fold in the chicken and 2 cups Cheddar and stir until the cheese has melted. Add the spaghetti squash strands and stir until well combined. Transfer the squash mixture to the casserole dish and sprinkle the top with the remaining Cheddar. Bake until the cheese is melted and bubbling, 17 to 20 minutes. Let rest 5 minutes. Sprinkle with the scallion greens before serving.

2 tablespoons olive oil, divided
1 (3 pound) spaghetti squash, halved and seeded
¼ cup butter
1 clove garlic, minced
2 ounces cream cheese, cut into cubes
1 cup heavy cream
¾ cup grated Parmesan cheese
salt and ground black pepper to taste
8 ounces cooked chicken breast strips, cut into bite-sized pieces
1 tablespoon butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil.
  • Rub 1 tablespoon olive oil on the flesh of the squash. Place squash, cut-sides down, on the prepared baking sheet.
  • Bake in the preheated oven until squash is tender when pierced with a fork, 45 to 60 minutes.
  • When squash has about 10 minutes left, melt 1/4 cup butter in a saucepan over medium heat. Add garlic and saute until fragrant, about 1 minute. Add cream cheese, a few cubes at a time, and whisk as they melt. Add heavy cream; cook and whisk until heated through, 2 to 3 minutes. Slowly add Parmesan cheese, whisking until fully melted before adding more. Continue cooking until sauce thickens, 4 to 5 minutes. Season with salt and pepper.
  • At the same time, combine remaining 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium heat. Add cooked chicken and toss for 2 to 3 minutes to brown it up a little.
  • Remove squash from the oven and use a fork to shred the flesh into a bowl. Ladle some sauce into the squash and mix to combine. Add some chicken and the remaining sauce, then mix again. Top with remaining chicken.

1/2 medium spaghetti squash
4 tablespoons unsalted butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan
1/4 cup chopped fresh parsley leaves
Fresh basil leaves
Grape or cherry tomatoes, sliced in 1/2

Steps:

  • Slice spaghetti squash in half lengthwise. Scoop out the seeds with a spoon and clean as you would a pumpkin. Completely submerge 1 half at a time, in a large pot of boiling water and cook for about 20 minutes until the inside is just tender to a fork and pulls apart in strands. (Cook's Note: It is better to undercook if you're not sure.) Remove, drain and cool with cold water or ice bath to stop the cooking.
  • Scoop out the cooked squash from its skin with a spoon as you would an avocado and discard the skin. Use a fork to fluff and separate the squash into "spaghetti"- like strands. You can also use your hands. Reserve the separated cooked squash and dip with a strainer into boiling water to reheat just before serving.
  • Melt half the butter in a medium saucepan over medium-high heat. Add cream and reduce for about 2 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in the rest of the butter and parsley. Place spaghetti squash in a large serving bowl, and pour Alfredo sauce over squash. Garnish with basil and tomatoes. Serve and enjoy!

This is a recipe I came up with that uses all of my favorite ingredients and is very beautiful served on a platter.

2 skinless, boneless chicken breast halves
2 tablespoons garlic, minced
1 (8 ounce) package uncooked rigatoni pasta
6 slices bacon
1 tablespoon vegetable oil
1 small zucchini, sliced
1 small yellow squash, sliced
1 cup Alfredo sauce
¼ cup milk
6 sun-dried tomatoes, softened and chopped
3 tablespoons Parmesan cheese
¼ cup sliced almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  • Place the chicken in the prepared baking dish, and coat with the garlic. Bake 25 minutes, or until chicken juices run clear. Cool and chop.
  • Bring a large pot of lightly salted water to a boil. Place the rigatoni in the pot, cook 10 minutes, until al dente, and drain.
  • Place bacon in a skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
  • Heat the oil in a skillet over medium heat, and saute the zucchini and yellow squash until tender and lightly browned.
  • In a small bowl, mix the Alfredo sauce and milk. Serve chicken over the cooked pasta. Pour Alfredo sauce over the chicken. Top with zucchini and squash. Sprinkle with sun-dried tomatoes, bacon, Parmesan cheese, and almonds.
