Delicious Chicken and Spinach Soup with Vegetables: spinach, beans, green bell peppers, carrots, and tomatoes. This easy recipe is healthy and gluten-free!

2 tablespoons olive oil (divided)
1 pound chicken breast (or tenders, sliced)
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon salt
1 small onion (chopped)
1 green bell pepper (chopped)
1 carrot (large, peeled and cubed into very small cubes)
5 tomatoes (chopped)
15 oz red kidney beans ((from the can, drained))
3 cups fresh spinach
4 garlic cloves (minced)
32 oz chicken broth ((4 cups))
2 cups water
1/2 teaspoon dried oregano
1/2 teaspoon dried basil

Steps:

  • Season sliced chicken generously with paprika, oregano, basil, and salt.
  • In a large soup pan, heat 1 tablespoon of olive oil on medium-high heat. Add sliced chicken and cook medium-high heat until browned on both sides. The chicken does not have to be cooked all the way through, as it will continue to cook in the soup.
  • Add another tablespoon of olive oil to the same pan. Add chopped onion, chopped green bell pepper, and chopped carrot and cook for another minute on medium-high heat.
  • Add chopped tomatoes, red kidney beans, fresh spinach, and minced garlic to the pan.
  • Add chicken broth and water. Add 1/2 teaspoon of oregano and 1/2 teaspoon basil.
  • Bring to boil and then simmer for about 20-30 minutes until the carrots are soft and the chicken is completely cooked through. Season with salt to taste.

1 carrot, sliced into thin rounds
1 rib celery, thinly sliced
1 small onion, chopped
Kosher salt and freshly ground black pepper
1 clove garlic, finely chopped
4 cups low-sodium chicken broth
1/3 cup dry orzo
2 1/2 cups shredded cooked chicken
3 cups lightly packed baby spinach
2 tablespoons chopped fresh dill, plus sprigs for serving
1/2 lemon, zested

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the carrot, celery, onion, 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until tender, about 8 minutes. Add the garlic and continue to cook for 1 minute.
  • Add the chicken broth and bring to a boil. Reduce the heat to a simmer and stir in the orzo. Cook until the orzo is just tender, about 7 minutes.

1 pound skinless, boneless chicken thighs
2 cups chicken stock
4 cups water
3 tablespoons olive oil
1 large onion, thinly sliced
6 cloves garlic, chopped
2 large potatoes, cubed
1 (16 ounce) can garbanzo beans, drained
1 (10 ounce) bag fresh spinach
½ cup diced roasted red peppers
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Bring chicken thighs, chicken stock, and water to a simmer in a large saucepan over medium-high heat. Reduce heat to medium-low, and continue simmer in until the chicken is no longer pink in the center, about 20 minutes. Remove the chicken thighs, and set aside to cool. Reserve the broth.
  • While the thighs are cooling, heat olive oil in a large pot over medium heat. Stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the potatoes, then strain the reserved cooking liquid into the pot. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until the potatoes are tender, about 25 minutes.
  • Cut the cooked chicken into cubes and add to the simmering potatoes. Cook for 5 minutes, then stir in the garbanzo beans, spinach, and roasted pepper; simmer 10 more minutes. Season to taste with salt and pepper, and sprinkle with grated Parmesan cheese before serving.

grated parmesan cheese
1/2 lb extra lean ground beef
2 fresh garlic cloves, minced
1 egg
3 tablespoons grated parmesan cheese
2 tablespoons dry breadcrumbs
1/2 teaspoon seasoning salt or 1/2 teaspoon white salt
1/4-1/2 teaspoon fresh ground black pepper

Steps:

  • For meatballs; in a large bowl combine all meatball ingredients together; mix using clean hands.
  • Shape into 3/4-inch balls and place on a plate.
  • In a large pot heat the chicken broth until a medium boil; stir in spinach, diced carrots and meatballs; return to a boil then reduce heat to medium-low.
