Bite-sized pieces of chicken that are sure to be a family favorite. I love to serve it with homemade mashed potatoes and green beans.

3 cups flour
2 teaspoons garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
2 eggs
2 tablespoons lemon juice
oil for frying
3 skinless, boneless chicken breasts, cubed

Steps:

  • Mix flour, garlic powder, salt, and black pepper together in a bowl. Beat eggs and lemon juice together in a separate bowl.
  • Heat 1 1/2 to 2 inches of oil in a large pot over medium heat.
  • Dip the chicken pieces into the flour mixture, then the egg mixture, and again into the flour mixture.
  • Test the oil to make sure it is hot enough: a small amount of flour dropped in should sizzle. Place 10 pieces of chicken into the hot oil; cook until golden brown, about 8 minutes. Remove from the oil and drain on a paper towel lined plate and season with salt. Repeat with remaining chicken.

1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
2 cups low-fat buttermilk
3 cloves garlic, smashed
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper, optional
Kosher salt and freshly ground black pepper, to taste
3 cups crushed Sour Cream and Onion Kettle Brand® Potato Chips
1/4 cup unsalted butter, melted
2 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat oven to 400 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside. In a large bowl, combine chicken, buttermilk, garlic, basil, oregano, thyme, cayenne pepper, salt and pepper, to taste; marinate for at least 30 minutes. Drain well. Working in batches, dredge chicken in crushed potato chips, pressing to coat. Place onto the prepared baking sheet; drizzle with butter. Place into oven and bake, turning pieces halfway through, until crisp and cooked through, about 20-25 minutes. Serve immediately, garnished with parsley, if desired.

3 lb chicken breast (cut into 1-inch pieces)
5 tbsp all purpose flour
1 1/2 tbsp salt
1 tsp garlic powder
1 cup buttermilk
2 cups panko crumbs
1 cup oil (vegetable or canola)

Steps:

  • In a medium bowl, combine the flour, salt, and garlic powder.
  • Pour the buttermilk into a separate bowl and the panko crumbs onto a plate.
  • Dredge a piece of chicken into the flour mixture until evenly coated then dip in buttermilk, letting excess drip off. Lastly, roll in panko bread crumbs until evenly coated. Transfer to a platter.
  • Preheat 1-inch of oil in a deep frying pan over medium heat. Adjust the heat to keep the oil at 350˚F. Fry the popcorn chicken in small batches, leaving space between each piece and flipping as needed. Fry until golden brown and 165˚F at the deepest part of the chicken on a thermometer.
  • Remove the popcorn chicken from the oil and let it rest on a paper towel-lined plate. Serve immediately with your favorite dipping sauce!

400 g skinless chicken breasts (about 2)
1 tablespoon fish sauce
300 g arrowroot
vegetable oil, for deep frying
sumaq, to serve

Steps:

  • Butterfly the breasts and place a piece between 2 sheets of plastic wrap. Using a mallet, pound out to 3mm thick. Repeat with all pieces.
  • Tightly roll each piece and cut into 5mm widths. Put into a bowl and add fish sauce to coat, then dust in arrowroot - shake off the excess in a sieve.
  • Heat oil in deep frypan and add chicken in batches. Deep fry for 2 mins or til crisp.
  • Dust with sumac and serve straightaway with a good garlic aioli.

25g salted popcorn
85g stale bread or breadcrumb
1 tsp smoked paprika
50g plain flour
1 large egg
2 skinless chicken breasts , cut into long thin strips
oil , for frying
150ml pot soured cream
zest 1 lime and juice of ½
handful coriander , chopped

Steps:

  • Put the popcorn, bread or breadcrumbs and paprika in a food processor and blend until finely chopped. Tip into a wide, shallow bowl. Whisk the egg in a second bowl, and mix the flour with some seasoning in a third bowl.
  • Dip the chicken strips first into the seasoned flour, then into the egg mixture, and finally into the popcorn breadcrumbs - press the crumbs onto the chicken to help them stick. Continue until all the chicken pieces are coated, then chill for 30 mins, or up to 1 day. Mix together the ingredients for the dip in a small bowl.
  • When ready to cook the chicken, heat enough oil to just cover the surface of a large frying pan. Once hot, cook the chicken pieces for 2-3 mins on each side (in batches so you don't overcrowd the pan) until golden and cooked through. Drain on kitchen paper. Serve warm with the dip on the side.
