3 cups whole wheat rotini pasta
10 reduced-fat round buttery cracker, crushed (about 1/2 cup crumbs)
3 Tbsp. KRAFT Grated Parmesan Cheese
1 tsp. dried oregano leaves
1 egg white
4 small boneless skinless chicken breasts (1 lb.)
2 cups CLASSICO Tomato and Basil Pasta Sauce, divided
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Steps:

  • Cook pasta in large saucepan as directed on package. Meanwhile, combine cracker crumbs, Parmesan cheese and oregano in pie plate. Lightly beat egg white in separate pie plate. Dip chicken in egg white, then roll in crumb mixture until evenly coated. Set aside.
  • Spray large nonstick skillet with cooking spray. Heat on medium heat. Add chicken; cook 5 min. on each side or until cooked through (165ºF). Spoon 1 cup of the pasta sauce over chicken; top with mozzarella cheese. Cover skillet with lid. Reduce heat to low; simmer 3 min. or until sauce is hot and cheese is melted.
  • Meanwhile, drain pasta; return to pan. Add remaining 1 cup pasta sauce; toss to coat. Cook on medium heat 2 min. or until heated through, stirring occasionally. Spoon onto serving plates; top with the chicken.

2 chicken breasts
2 eggs, beaten
1 ball fresh mozzarella cheese, thinly sliced
1 jar marinara sauce, heated
whole wheat pasta
fresh basil, for garnish
½ cup panko bread crumbs
½ cup parmesan cheese
1 tablespoon fresh basil
½ teaspoon garlic powder
2 teaspoons dried oregano
¼ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Preheat oven to 425°F (215°C).
  • In a medium bowl, combine the panko, parmesan cheese, basil, garlic powder, oregano, salt, and pepper.
  • Beat the 2 eggs in a shallow dish. Dredge the chicken in the egg wash, then coat with the bread crumb mixture.
  • Transfer the breaded chicken breasts to a greased roasting pan. Top the chicken with 2 small slices of mozzarella.
  • Bake for 20-25 min, until the cheese and bread crumbs have turned golden brown and the chicken is cooked through, or until it has reached an internal temperature of 165°F (73°C).

1 lb grape or cherry tomatoes (cut in halves)
2 medium bell peppers (coarsely chopped)
2 tbsp avocado or coconut oil
2 lbs boneless & skinless chicken breasts (thinly sliced)
2 1/2 cups water or chicken stock
2 cups Kalamata olives (pitted)
1 1/4 tsp salt
Ground black pepper (to taste)
2 bay leaves
12 oz whole wheat spaghetti (use GF and adjust cooking time if necessary)
Handful of basil (chopped)

Steps:

  • Preheat large deep skillet or a dutch oven on medium heat and swirl oil to coat. Add peppers an cook for 3-4 minutes, stirring occasionally. Transfer to a bowl with sliced tomatoes.
  • Return skillet to the stove on medium-high heat and add chicken. Cook for 5-7 minutes or until opaque, stirring occasionally. If any juices appear do not drain.
  • Add water (I usually boil a kettle to speed up cooking) or stock, olives, salt, pepper, bay leaves and gently stir.
  • Take a bunch of spaghetti and snap in 3 adding to the skillet. Give a gentle stir to mix ingredients. Cover and cook for 10 minutes.
  • Remove lid, stir well softened spaghetti with the rest of ingredients, cover and cook for 5 more minutes.
  • Turn off heat and add previously cooked peppers, tomatoes and basil. Stir and serve hot.

An enlightened version of a traditional family favorite- uses minimal fat while adding whole wheat pasta and baby spinach to this enlightening dish

9 ounces dry whole wheat spaghetti, uncooked
1 1/2 cups panko breadcrumbs
1/2 cup fresh grated parmesan cheese, divided
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1/2 cup Egg Beaters egg substitute, with yolk
6 boneless skinless chicken breasts
1 (26 1/2 ounce) can spaghetti sauce, divided
1 (6 ounce) package baby spinach leaves

Steps:

  • Cook spaghetti according to package directions omitting salt. Drain and set aside.
  • Preheat oven to 350 degrees.
  • Spread breadcrumbs evenly on a baking sheet.
  • Spray with cooking spray.
  • Bake 5-7 minutes or until crumbs are golden brown. emove from baking sheet, and cool.
  • Increase oven temperature to 425 degrees.
  • Combine bread crumbs, 1/4 cup parmesan cheese, salt and pepper in a shallow dish, and set aside.
  • Pour egg beaters into second shallow dish and set aside.
  • Spray baking rack with cooking spray, and place on baking sheet, and set aside.
  • Dip each chicken breasts in egg beaters, then coat with seasoned bread crumbs. lace on baking rack, and lightly spray chicken with cooking spray.
  • Bake for 20 minutes or until chicken reaches an internal temperature of 165 degrees.
  • Top each chicken breasts with 2 tablespoons of spaghetti sauce, and 2 teaspoons cheese.
  • Bake for 5 minutes, or until cheese melts.
  • Heat remaining spaghetti sauce in large saucepan over medium-high heat for 2-3 minutes, or until hot.
  • Add spinach and cook 2 minutes, or until spinach wilts.
  • Add cooked spaghetti, and toss to coat with sauce.
  • Continue heating until hot.
  • PLace spaghetti mixture on serving platter, and top with chicken.
  • Serve immediately.
