4 tablespoons unsalted butter
1 tablespoon olive oil
1 small onion, chopped
4 ounces shiitake mushrooms, trimmed and thinly sliced
Kosher salt
5 ounces baby spinach
3 cups diced cooked chicken (from 1 rotisserie chicken)
1/3 cup all-purpose flour
2 1/4 cups low-sodium chicken broth
1 tablespoon fresh lemon juice
1 tablespoon coarsely chopped fresh rosemary
8 sheets frozen phyllo dough (9-by-13-inch sheets), thawed according to the package?s instructions

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt 1 tablespoon of the butter with the olive oil in a large nonstick skillet over medium-high heat, then add the onions. Cook, stirring, until just soft, about 4 minutes. Add the mushrooms and 1/2 teaspoon salt and continue stirring until softened, about 4 minutes. Gradually add the spinach and stir until completely wilted, about 2 minutes. Transfer to a large bowl and add the chicken; wipe the skillet clean.
  • Whisk together the flour, broth, lemon juice and 1/2 teaspoon salt and add to the same skillet over medium-high heat. Whisk until the mixture is boiling and simmer until just thick, about 2 minutes. Add to the chicken mixture with 1/2 tablespoon of the rosemary, then transfer to a 2-quart baking dish.
  • Melt the remaining 3 tablespoons butter and brush onto each phyllo sheet, layering one on top of the other. Gently place over the baking dish and crimp the sides to fit. Sprinkle with the remaining 1/2 tablespoon rosemary and bake until golden, 25 to 30 minutes. Let cool slightly before serving.

2 chicken breasts (cooked and shredded)
2 chopped fresh garlic cloves
1 teaspoon parsley
1 cup low-fat mayonnaise
1/2 cup milk or 1/2 cup half-and-half
1 cup shredded mozzarella cheese
6 sheets phyllo dough
1/2 cup melted butter
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • In large mixing bowl, combine spinach, shredded chicken, garlic, parsley, mayo, and milk.
  • Layer this mixture evenly in 9x9" glass dish.
  • Sprinkle mozzarella evely over top.
  • Tear phyllo into pieces about the size of the palm of your hand and layer over cheese.
  • Pour melted butter over phyllo and cover dish with foil and bake 30 minutes covered; try not to let foil rest on phyllo, but create a little "tent".
  • After 30 minutes, remove foil and sprinkle with parmesan.
  • Broil for 5-10 minutes until phyllo is golden and crisp.
  • Serve with green salad and fresh rolls!

16 sheets frozen phyllo dough, thawed (14x9-inch )

Steps:

  • Preheat oven to 375 degrees. Coat a 3 quart rectangular baking dish with cooking spray.
  • In an extra-large skillet, heat butter over high heat until melted. Add ground chicken and onion; cook about 8 minutes or until chicken is browned and onion is tender, breaking up chicken as it cooks. Drain off fat. Stir in spinach, 1 teaspoons freshly ground black pepper, 1/2 teaspoons salt, the nutmeg and crushed red pepper; cook and stir for 5 minutes. Transfer mixture to a bowl. 1 cup Italian salad dressing, or as needed
½ teaspoon garlic powder
¼ teaspoon lemon pepper
1 (8 ounce) package fresh spinach
2 (8 ounce) packages cream cheese, softened
½ cup chopped fresh chives
¼ cup olive oil
1 clove garlic, minced
1 pinch salt and ground black pepper to taste
2 cups chicken broth
1 cup shredded mozzarella cheese

Steps:

  • Place chicken in a bowl and pour in enough Italian salad dressing to coat. Marinate in the refrigerator, 2 to 3 hours.

3 sheets phyllo pastry

Steps:

  • Preheat oven to 375 F (190 C). Saute onions in chicken broth until broth has evaporated.
  • Stir flour into milk until dissolved.

  • Blend in cheese until melted.

3/4 pound boneless skinless chicken breasts, cubed
1 small onion, chopped
1/2 cup chopped green pepper
1 jar (26 ounces) spaghetti sauce
1 package (16 ounces) frozen leaf spinach, thawed and squeezed dry
1 jar (6 ounces) sliced mushrooms, drained
1 can (2-1/4 ounces) sliced ripe olives, drained

  • Cook pasta according to package directions. 2 ounces thin prosciutto slices, cut into thin strips

2 teaspoons chopped fresh thyme

3 tablespoons cornstarch mixed with 1/2 cup water
12 sheets fresh phyllo pastry or frozen, thawed
2 pounds skinless boneless chicken thighs, excess fat removed, thighs quartered

  • Combine dried porcini and 1 cup hot water in small bowl; let stand until porcini are soft, about 20 minutes. Drain porcini, reserving liquid.

  • Bring mushroom sauce to boil. Mix in chicken and parsley. Transfer mixture to 13x9x2-inch glass or ceramic baking dish. Cover hot filling with phyllo balls. Sprinkle Parmesan over. Bake 15 minutes. Reduce oven temperature to 350°F; bake until phyllo is golden and chicken is cooked through, about 20 minutes longer.

2 lbs fresh spinach or 20 ounces frozen spinach
3 tablespoons butter
3 tablespoons onions, grated
1 lb mushroom, chopped
3 tablespoons flour
1 teaspoon salt (to taste)
1/4 teaspoon white pepper
1/4 teaspoon nutmeg
2 cups light cream
4 tablespoons swiss cheese, grated

Steps:

  • Preheat oven to 325 degrees.
  • Wash fresh spinach, drain well and chop coarsely, or drain frozen spinach very well after thawing.
  • Melt butter in saucepan, saute onion and mushrooms for 5 minutes.
  • Blend in flour, salt, pepper and nutmeg.
  • Add cream gradually, stirring steadily to boiling point; cook over low heat 5 minutes.
  • Arrange successive layers of spinach and sauce in a buttered 1 1/2 qt casserole ending with sauce.
  • Sprinkle with cheese.
  • Place in a shallow pan of hot water.
  • Bake for 45 minutes.

Add mushrooms and ½ tsp salt and continue stirring until softened, about 4 min. Gradually add spinach and stir until completely wilted, about 2 min. Transfer to a large bowl and add chicken; wipe skillet clean.
  • Whisk together flour, broth, lemon juice and ½ tsp salt and add to the same skillet over medium-high heat. Whisk until mixture is boiling and simmer until just thick, about 2 min. Add to chicken mixture with ½ tbsp rosemary, then transfer to a 2-qt baking dish.
  • Melt 3 tbsp butter and brush onto each phyllo sheet, layering one on top of the other. Gently place over baking dish and crimp the sides to fit. Sprinkle with remaining rosemary and bake until golden, 25 to 30 min. Let cool slightly before serving.
