350 gram Chicken strips
2 teaspoon Peanut oil
1 clove Garlic
1 teaspoon Sambal olek
1 Onion in wedges
2 cups Green Beans
3 Tomato in wedges
1 tablespoon Fish sauce
2 tablespoon Lemon juice
1 cup Basil chopped
1 tablespoon Lemon Grass chopped

Steps:

  • Heat oil and cook lemongrass, garlic, sambal and onion for 3 minutes. Add chicken and stir-fry for 4 minutes. Add beans and cook for 3 minutes. Add tomatoes and heat through. Add fish sauce, lemon juice and basil. Serve with rice

1 lb green chinese long beans, trimmed and cut into 2-inch pieces or 1 lb young green beans, trimmed and cut into 1 1/2 -inch pieces
2 teaspoons peanut oil
1 1/4 lbs boneless skinless chicken breasts, all fat removed, cut crosswise into thin strips
1 medium onion, thinly sliced, rings separated
4 large garlic cloves, minced
2 stalks lemongrass, tough outer leaves removed, 4 inches of each stalk minced
3 tablespoons Thai fish sauce
2 teaspoons sugar substitute
1 1/2 teaspoons ground coriander
1 teaspoon turmeric
1/2 cup fat-free no-salt-added canned chicken broth
2 tablespoons spicy oyster sauce
fresh ground pepper
2 cups cooked basmati rice
1/4 cup Thai basil

Steps:

  • Boil the beans in water until crisp cooked. Drain and place in ice water to stop cooking. Drain again and set aside.
  • Heat peanut oil in a heavy non-stick skillet or wok until very hot. Add the chicken, onion and garlic. Stir-fry for 4 minutes until chicken begins to cook through. Add the lemongrass, fish sauce, sugar substitute, coriander, and turmeric. Stir-fry for another 2 minutes. Add the beans, broth, and oyster sauce. Reduce the heat and simmer until the sauce thickens and chicken is cooked through. Season with pepper.
  • To serve, mold the rice using a 1/2 cup (small gratin cups and place the chicken around the rice. Garnish with basil. Serve immediately.

4 chicken breast halves with skin and bones (8 to 10 ounces each), fat trimmed or 1 whole chicken (about 2 pounds) cut up
Salt and freshly ground black pepper
4 large basil leaves
4 cloves garlic, bruised with the side of a knife
4 thin lemon slices
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F. Place the chicken in a baking dish; sprinkle both sides with salt and pepper and arrange skin side up. Loosen the skin from each chicken breast and slip a basil leaf between the skin and the meat. Add the garlic to the baking dish. Place a slice of lemon on top of each piece of chicken. Drizzle with oil. Bake, basting occasionally with pan juices and turning the chicken and the baking dish occasionally so the chicken browns evenly, 35 to 40 minutes. If using a whole chicken, the baking time will be about 50 minutes. To serve, place a browned lemon slice and garlic clove on top of each portion of chicken.

3 tbsp fish sauce
3cm piece ginger or galangal, finely chopped
2 lemongrass stalks, finely sliced
6 freeze-dried kaffir lime leaves (Barts is very good)
1 fresh red chilli , chopped
2 tsp light muscovado sugar
500g boneless skinless chicken breast , cut into chunks
2 tbsp lime juice
good handful fresh basil and coriander, roughly chopped
250-350g Thai rice , cooked following pack instructions, to serve

Steps:

  • Tip all the ingredients except the chicken, lime juice and herbs into a pan, bring to a gentle simmer and cook uncovered at a relaxed bubble for 5 minutes.
  • Add the chicken, cover and simmer for 15 minutes, until the chicken is tender. Stir in the lime juice, then scatter over the herbs before serving with rice.

1 ½ pounds chicken thighs, cut into thin strips
3 tablespoons fish sauce, or more to taste
1 ½ tablespoons honey
2 tablespoons vegetable oil
1 ½ red bell peppers, cut into strips
¼ cup chopped lemongrass
¼ cup grated fresh ginger root
4 cloves garlic, chopped
⅓ cup chopped green onions
¼ cup chicken broth
1 tablespoon white sugar
½ teaspoon red pepper flakes, or more to taste

Steps:

  • Mix chicken, fish sauce, and honey together in a bowl; cover with plastic wrap and refrigerate for at least 30 minutes.

2 tablespoons all-purpose flour
2 tablespoons butter
1 cup chicken stock

1/3 cup minced lemongrass*

Steps:

1/4 cup flour
1/4 cup fresh lemon juice
2 tablespoons each dried basil and rosemary, divided
1/2 teaspoon seasoned salt, divided
2 teaspoons paprika
2 small red potatoes, quartered
4 to 6 pound whole chicken
1 small yellow squash, cut in large pieces
1 small zucchini, cut in large pieces
1 small red bell pepper, cut in 8 pieces

Steps:

  • Preheat oven to 350°F., Shake flour in Reynolds® Oven Bag; place in 13x9x2-inch or larger baking pan at least 2 inches deep. Add lemon juice, 1 tablespoon each basil and rosemary, 1 teaspoon lemon peel and 1/4 teaspoon seasoned salt to bag. Squeeze bag to blend in flour., Add potatoes to oven bag. Turn bag to coat potatoes. Push potatoes to sides of bag. Combine remaining seasonings; spoon 2 teaspoons into chicken cavity. Sprinkle and rub remaining seasonings over entire chicken; place in center of potatoes in bag. 3 cloves garlic
2 teaspoons brown sugar
½ teaspoon turmeric
½ teaspoon ground coriander
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon red pepper flakes
2 cans reduced-fat coconut milk
1 tablespoon coconut oil
4 cups cooked rice
1 lb shrimp, optional, shrimp, chicken

green onion
broccoli

Steps:

  • Add chopped lemongrass, basil, 1 shallot, garlic, ginger, ground coriander, cumin, turmeric, salt, pepper, red pepper flakes, and brown sugar to a food processor. Blend until a paste forms. (If difficult to combine, add 1 tbsp water to the mix and blend again).
  • Dice the remaining shallots and set aside.
  • Over medium heat, melt coconut oil in a large pan (big enough to hold 2 cans of coconut milk). Once the oil is hot and melted, add the basil lemongrass curry paste in. Let the curry paste bloom for 1 minute. Then add in the remaining chopped shallots and sauté until softened (2 minutes, approximately).
  • Pour in both cans of coconut milk and stir until combined. Cover and let curry reduce over medium heat for 20 minutes. Stir every so often. Season with salt and pepper.
  • While the curry simmers, prepare the meat and vegetables you will be using as desired.
  • Once the coconut curry has reduced and become thicker, begin assembling your dish. Pour the curry over a bed of rice, and top with any proteins and vegetables.

  • Preheat oven to 450°F. Heat 2 tablespoons oil in large ovenproof skillet over medium-high heat. Remove chicken from marinade and season with salt. Add chicken, skin side down, to skillet. Cook until golden brown and crisp, about 8 minutes. Turn skin side up; transfer skillet to oven. Roast until chicken is cooked through, about 25 minutes.
  • Meanwhile, heat 1 tablespoon oil in medium skillet over medium-high heat. Add onion; sauté until golden brown, about 5 minutes. Add green beans, bell pepper, soy sauce, rice vinegar, and 1 1/2 teaspoons sugar and cook until beans are tender and liquid reduces enough to coat beans, about 5 minutes. Divide between 2 plates. Top with chicken.
