Chile Lime Salmon. This quick and easy 20 minute dinner is super flavorful thanks to a bit of heat from the Chile and a cooling citrus zest from the lime.

4 salmon fillets ((approx 1.5 pounds))
3 tbsp chili garlic sauce
1/2 tsp lime zest ((approx 1 small lime zested))
2 tbsp honey
1/2 tsp salt
chopped cilantro
lime slices

Steps:

  • Preheat oven to 350 degrees. Line a large baking sheet with foil. Set aside.
  • In a small bowl combine the chili garlic sauce, lime zest, lime juice, honey, and salt. Whisk to combine.
  • Lay the salmon fillets on the baking pan, skin side down. Brush the tops with the sauce.
  • Bake the salmon for 15 minutes. Remove from the oven.
  • Garnish with chopped cilantro and lime slice if desired.
  • Serve warm and enjoy!

SEASONING:
1 tablespoon salt
1 tablespoon ground nutmeg
1 tablespoon pepper
1-1/2 teaspoons each ground ginger, cinnamon and allspice
1-1/2 teaspoons brown sugar
SALMON:
1 salmon fillet (3 pounds)
4-1/2 teaspoons olive oil
SALSA:
1 medium mango
1 medium papaya
1 medium green pepper
1 medium sweet red pepper
1 cup finely chopped fresh pineapple
1/4 cup finely chopped red onion
3 tablespoons minced fresh cilantro
2 tablespoons lime juice
1 tablespoon olive oil
1/2 teaspoon salt

Steps:

  • Combine the seasoning ingredients. Place fillet in a greased 15x10x1-in. baking pan; sprinkle with 1 tablespoon seasoning. (Save remaining seasoning for another use.) Drizzle salmon with oil. Cover and refrigerate for at least 2 hours., Peel and finely chop mango and papaya; place in a large bowl. Finely chop peppers; add to bowl. Add the remaining salsa ingredients and gently stir until blended. Cover and refrigerate for at least 2 hours., Bake salmon at 350° until fish flakes easily with a fork, 25-30 minutes. Serve with salsa.

4 oranges
1/2 cup coarsely chopped fresh cilantro
1 small fresh jalapeño chile, seeded and finely chopped
1/2 small red onion, thinly sliced
1/4 cup olive oil
1/4 cup red-wine vinegar
1 teaspoon salt
1/2 teaspoon black pepper
For salmon
8 (6-oz) pieces salmon fillet with skin (3 lb total)
1 cupchile glaze
2 tablespoons fennel seeds
2 tablespoons whole black peppercorns, coarsely crushed

Steps:

  • Make salsa:
  • Cut peel and any white pith from oranges with a sharp knife, then cut sections free from membranes, letting them drop into a bowl. Stir in remaining salsa ingredients.
  • Prepare salmon:
  • Preheat broiler.
  • Season salmon with salt on all sides. Arrange on rack of a broiler pan, skin sides down, and broil about 4 inches from heat 4 minutes. Spoon glaze on top and spread onto sides, then sprinkle with fennel seeds and cracked pepper. Broil until glaze is bubbly and fish is just cooked through, 2 to 3 minutes more.
  • Serve salmon with salsa.

2 big tomatoes
1 medium onion
1/2 cup cilantro
1/2 large lime
1/2 teaspoon salt
1 large jalapeno (deseeded to taste)
1 teaspoon olive oil

Steps:

  • Chop tomatoes, jalepeno, onions and cilantro up by hand into small pieces.
  • Mix together in a bowl.
  • Add salt, olive oil and lime juice.
  • Mix throughouly and chill in the refridgerator for about an hour.
  • Remix before serving.

1/3 cup red onion, very thinly sliced
2 tablespoons cilantro, chopped
1 small jalapeno, halved seeded and very thinly sliced crosswise
2 tablespoons canola oil
1 pinch sugar
sea salt
4 (6 ounce) salmon fillets, center-cut, skinless
fresh ground pepper

Steps:

  • Preheat the oven to 425°.
  • Using a sharp knife, carefully peel the limes; be sure to remove all of the bitter white pith; Working over a bowl, cut in between the membranes to release the lime sections into the bowl; Cut each section crosswise into quarters; Return the limes to the bowl and stir in the onion, cilantro and jalapeño; Add 1 tablespoon of the oil, the sugar and a pinch of salt and toss well.
  • Heat the remaining 1 tablespoon of oil in an ovenproof skillet until shimmering; Season the fillets on both sides with salt and pepper and add to the skillet, skinned side up; Cook over moderately high heat until golden brown on the bottom, about 2 minutes; Transfer the skillet to the oven and roast the salmon for 5 minutes, or until just cooked through; Transfer to 4 dinner plates, spoon the salsa on top and serve.
