2 tablespoons olive oil
2 pounds ground turkey (not lean)
Kosher salt and freshly ground black pepper
4 cloves garlic, chopped
2 stalks celery, chopped
1 large onion, chopped
3 tablespoons chile powder
2 tablespoons tomato paste
One 28-ounce can diced tomatoes
One 15-ounce can pinto beans, rinsed and drained
One 15-ounce can kidney beans, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 4-ounce can diced green chiles (mild, medium or hot, as desired)
2 cups chicken broth
1 cup shredded pepper Jack or sharp Cheddar, for topping
1 cup sour cream, for topping
1 cup sliced scallions, for topping

Steps:

  • Heat the olive oil in a Dutch oven or large wide pot over medium-high heat. Add the turkey, 1 teaspoon salt and a few grinds of pepper and cook, breaking up any clumps with a wooden spoon, until brown, about 8 minutes. Remove the turkey and set aside. Add the garlic, celery, onion and 1/4 teaspoon salt to the pot and cook, stirring occasionally, until the vegetables have softened, about 8 minutes. Add the chile powder and tomato paste and cook, stirring, 1 minute.
  • Return the turkey to the pot and add the diced tomatoes, beans, green chiles and chicken broth. Increase the heat to medium-high and bring to a simmer, then reduce the heat and simmer until the vegetables are tender and the flavors have melded, about 30 minutes.
  • Serve the chili topped with the cheese, sour cream and scallions.

1/4 bunch cilantro, chopped
1/4 cup extra-virgin olive oil
1 large sweet onion, diced
4 cloves garlic, minced
2 teaspoons kosher salt
3 pounds ground turkey (50-50 light and dark meat)
1/4 cup all-purpose flour
1/4 cup chili powder
3 tablespoons ground cumin
1/2 teaspoon freshly ground black pepper
Pinch of cayenne pepper
4 cups low-sodium chicken stock
2 15-ounce cans cannellini beans, with liquid

Steps:

  • In a blender or food processor, puree the roasted chiles and cilantro until smooth. Set aside.
  • In a large Dutch oven over medium-high heat, combine the olive oil, onion, garlic and salt. Cook until the onion is translucent, 5 to 6 minutes. Add the turkey and cook until browned and cooked through, breaking it up with a wooden spoon, 7 to 8 minutes.
  • Add the flour, chili powder, cumin, black pepper and cayenne and cook until fragrant, about 2 minutes. Deglaze the pot by adding the chicken stock and scraping up the browned bits from the bottom of the pot. Add the reserved pureed chiles and cilantro. Bring to a boil, then reduce the heat to a low simmer.
  • Add the beans and simmer, partially covered, until the turkey is tender and the chili has thickened, about 1 hour. Remove from the heat, cover and keep warm until serving. Serve with toppings.

Steps:

  • Heat a Dutch oven (or other heavy 5-quart pot) over medium heat. Add bacon; cook until crisp and brown, 6 to 8 minutes. Raise heat to high; add turkey. Cook, stirring and breaking up meat with a spoon, until no longer pink, 8 to 10 minutes.
  • Add onion, garlic, and jalapenos; cook until soft, stirring often, about 5 minutes. Stir in chili powder, cocoa powder, and cumin; cook, stirring, until fragrant, 1 minute.
  • Break up tomatoes with a spoon or your hands, and stir them in along with the puree. Add molasses, 1 cup water, and 4 teaspoons salt; bring to a boil. Reduce heat to a simmer; cook, partially covered, 30 minutes.

Rather than browning the meat first, which doesn't do much for lean ground turkey and can actually make it tough, this recipe prioritizes cooking down the vegetables first. Onions and canned tomatoes fried in olive oil provide an umami-rich flavor base for turkey's blank canvas, and the adobo sauce from canned chipotle peppers does a lot of this dish's heavy lifting. Optional toppings like shredded cheese and sour cream help cool down the spice. One of the best ways to enjoy this simple but powerful chili is over French fries with melted cheese, or tossed with some cooked spaghetti. It's so great on its own, as well.

3 tablespoons olive oil
1 large white onion, diced
1 (28-ounce) can whole peeled tomatoes
Salt
2 tablespoons chili powder
1 pound ground turkey
1 (7-ounce) can chipotle peppers in adobo sauce
Shredded extra-sharp Cheddar, sour cream and whole cilantro leaves, for serving (optional)

Steps:

  • In a large pot or Dutch oven, heat the oil over medium-high heat. Add the onion and cook, stirring occasionally with a wooden spoon, until translucent and starting to brown at the edges, 5 to 7 minutes.
  • Use a fork to fish the tomatoes out of the can and add them to the pot, leaving behind the juice for now. Season with salt and cook the tomatoes, breaking them up with the wooden spoon and stirring occasionally, until jammy and their liquid has reduced significantly, 5 to 7 minutes.
  • Stir in the chili powder and cook until fragrant, just a few seconds. Add the ground turkey, season with salt and stir to combine, breaking up the meat with the spoon. (Don't worry about browning or cooking it through here, as it will do so when it simmers.) Stir in the reserved liquid from the tomato can.
  • Use the fork to fish out as many chipotle peppers from the can as you would like, starting with two or three, and add to the pot, breaking them up with the wooden spoon, along with all of the adobo sauce. The more peppers you use, the spicier your final chili will be; if you like spice, just add the entire can. (Store any peppers you don't use in an airtight container in the refrigerator for up to a week and in the freezer for up to 2 months.) Fill the empty chipotle can with cold tap water, swish it around and add to the pot. Stir to combine.
  • Bring the chili to a simmer over medium-high heat - you should see occasional small bubbles breaking the surface of the mixture - then cover the pot and reduce the heat to continue simmering over medium-low, stirring occasionally, until the liquid has reduced and the tomatoes have broken down, about 20 minutes. The chili should look thick and shiny, but not too thick that you couldn't ladle it into a bowl. (If it's too watery, then simmer with the lid off for another 5 minutes, stirring occasionally.) Taste and add more salt if desired. Serve with cheese, sour cream and cilantro, if using.

3 (15 ounce) cans small white beans, rinsed and drained
chopped red onion
chopped fresh cilantro
plain low-fat yogurt or light sour cream

Steps:

  • Heat oil in heavy large pot over medium heat. Add onions; sauté until light brown and tender, about 10 minutes.
  • Add oregano and cumin; stir 1 minute.
  • Increase heat to medium-high.
  • Add turkey; stir until no longer pink, breaking up with back of spoon.
  • Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon. Add tomatoes with their juices, breaking up with back of spoon. Mix in stock and tomato sauce. Bring to boil.
  • Reduce heat; simmer 45 minutes, stirring occasionally.
  • Add beans to chili and simmer until flavors blend, about 10 minutes longer.
  • Discard bay leaves. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat before continuing.).
  • Ladle chili into bowls. Pass red onion, cilantro and yogurt separately.
  • Notes: I usually decrease the chili powder slightly because my DH prefers things mild.
  • We've always skipped the red onion and cilantro, but, it sounds interesting.
  • I'm estimating the active and passive work times.

Similar to "Mom's Chili-Crockpot Version" this chili replaces ground beef with ground turkey, tomato paste with diced tomatoes, and is a lower fat alternative. Great with grated low fat cheese and fat free sour cream on top. Also, hot chili sauce to taste can be stirred into the crockpot to make this recipe hotter.

1 lb dried kidney beans
1 teaspoon oregano
1 onion, chopped
2 garlic cloves
1 tablespoon chili powder
1 lb ground turkey
2 teaspoons garlic powder
2 tablespoons flour
3 tablespoons chili powder
1 teaspoon basil
1 teaspoon oregano
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes

Steps:

  • Cook beans, oregano, onion, garlic and 1 Tbs. chili powder in six cups water for 2 hours. Salt to taste after 1 hour.
  • Toward end of bean cooking time, brown meat and garlic powder. Drain. Return to pan. Sprinkle with flour. (If flour sticks to pan, use a little water from beans to scrape sides.) Brown till combined.
  • Set aside.
  • Add tomato sauce, diced tomatoes (don't drain), chili powder, basil, and oregano to crock pot and stir till blended.
  • Add meat/flour mixture to crock pot.
  • Add beans to crock pot. (Reserve water).
  • Combine.
  • Heat on "high" for one hour, then reduce to low and cook for at least one hour more. Add water from beans to chili if mixture becomes too thick.
  • Prep time does not include soaking beans, but does include bean cooking time.

  • Bring broth to a simmer in a large Dutch oven or other heavy pot. Meanwhile, remove and discard stems from ancho, guajillo, and pasilla chiles. Tear flesh into a few pieces, letting seeds fall out. Transfer to a blender. Add hot broth and cover blender; let sit until chiles are softened, 25–30 minutes. Add chipotle chiles and blend on high speed until smooth, about 1 minute; set aside.
  • Heat 2 Tbsp. oil in same pot over medium-high. Season turkey all over with salt. Add half of turkey to pot and smash down with a wooden spoon to flatten against surface of pot and break into smaller clumps. Cook, undisturbed, until underside is browned, top side is no longer pink, and most of the liquid is cooked off, 8–10 minutes. Using a slotted spoon, transfer to a plate. Repeat with another 2 Tbsp. oil and remaining turkey.
  • Heat remaining 2 Tbsp. oil in same pot over medium. Add onions and garlic; season with salt and stir to combine. Cover pot and cook, stirring occasionally, until onions are translucent, very soft, and starting to brown around the edges, 10–12 minutes. Add cumin and oregano and cook, stirring frequently, until fragrant and sizzling, about 1 minute. Add tomato paste and cook, stirring to coat vegetables, until paste darkens slightly, about 1 minute. Add cider, cinnamon, and bay leaves and scrape up any brown bits stuck to bottom of pot (if you’re not using cider, skip this step and increase water in next step to 5 cups). Bring to a lively simmer and cook, stirring occasionally, until liquid is mostly reduced, about 5 minutes.
  • Add reserved chile purée, beans, and maple syrup. Add 4 cups water to blender, swish around to loosen any remaining purée, then pour into pot; season with salt. Bring to a boil, reduce heat to medium-low, and gently simmer, partially covered and stirring occasionally, until liquid is thickened and very flavorful, about 1 hour. Add turkey and simmer until flavors have melded, about 30 minutes longer.
