- Place pretzels, raisins and pine nuts in a bowl. In a microwave, melt chocolate chips; stir until smooth. Stir in coffee granules, cinnamon and sour cream. To rewarm, microwave in additional 5- to 10-second intervals. Add to pretzel mixture; toss until combined., Drop mixture by heaping tablespoonfuls onto a waxed paper-lined baking sheet. Sprinkle with salt., Refrigerate until set, about 10 minutes. Store in an airtight container in the refrigerator.

CHILLI CHOCOLATE CLUSTERS
These Chilli Chocolate Clusters contain just three ingredients. If you like both chocolate and spicy food, this is the recipe for you. They are quickly and easily made, perfect with a cup of coffee, ideal as a mid-afternoon energy boost or a sweet treat at any time throughout the day. If you have not previously ventured into the world of confectionery, this is a great place to start.

- Preheat your oven to 180 degrees C/350 F and line a large baking tray with non-stick baking paper.
- Place slivered almonds on another baking tray and roast them, stirring occasionally, for about 8 minutes or until they are light golden brown and aromatic. Remove from the oven and set aside.
- If your pieces of chocolate are large, cut them into smaller, even-sizes.
- Prepare a double boiler to melt the chocolate. Alternatively, you may prefer to use a microwave. - see Note 3A double boiler is a small to medium-sized saucepan and an ovenproof bowl which fits just inside the saucepan without touching the bottom. Add about 2.5cm/1 inch water to the saucepan, bring the water to a bare simmer and place the bowl over the saucepan.
- Add 2/3 of the chocolate to the bowl. As the chocolate begins to melt, stir it with a silicone spatula or heat-proof spoon. Do not use a wooden spoon as it may contain moisture. When the chocolate is almost melted, remove the bowl from the saucepan and add the remaining 1/3 of the chocolate a little at a time and stir until all the chocolate has melted. This method helps ensure that the chocolate does not overheat.
- Add the roasted almonds to the chocolate and combine.
- Using a teaspoon, place small mounds of the chocolate-almond mixture onto the prepared baking tray and sprinkle with chilli flakes to suit your taste.
- Put the chocolates aside until the chocolate sets or place in the fridge for 10 minutes to speed up the process.Store in an air-tight container.

NO-BAKE CHOCOLATE CLUSTERS
These little cookies are a bunch of good things all at once: crunchy and chewy, sweet and salty, craggy and never neat, or ever the same, which is just as they should be. The must-have ingredients are melted chocolate, either dark or white (or both), and cornflakes. The coconut is optional, and the cranberries are up for grabs - you can swap them for raisins or small bits of other dried fruit. Since these require nothing but melting and stirring, and because the ingredients are so basic, these can be a spur-of-the-moment cookie, a boon when there's often not enough time.

- Line a baking sheet with parchment paper or a baking mat or with 40 mini-muffin liners.
- If you're using white chocolate, use 6 tablespoons/85 grams butter. For semisweet chocolate, use 8 tablespoons/113 grams butter. Put the butter in a small saucepan, top with the chocolate and cook over very low heat, stirring almost constantly, until smooth. (Alternatively, you can stir in a heatproof bowl set over simmering water or in a microwave-safe bowl in a microwave, stirring in 20-second increments.)
- Meanwhile, toss the cornflakes, cranberries and coconut, if using, in a large bowl. Pour over the melted chocolate and gently stir in with a flexible spatula. Some of the cereal will break - it's inevitable - but keep working until you've coated all of the flakes.
- Use a medium cookie scoop or two spoons to shape sweets either on the lined baking sheet or in the paper liners. Gently press the mixture into the scoop or a spoon, binding the elements, before releasing the scoop or scraping the mixture off the spoon with another spoon onto the sheet or into the liners. Finish with salt and sprinkles, if using.
- Refrigerate or freeze (my preference) for about 30 minutes, or until set, before serving. To keep, cover and refrigerate for up to a week or freeze for up to a month. These are good straight from the fridge or just a few minutes out of the freezer.
CHILLI CHOCOLATE COOKIES

- Beat the butter and sugars together, then gradually mix in the vanilla and eggs. In another bowl, combine the flour, cocoa, a pinch of salt, baking powder and cayenne pepper, then mix these into the butter and fold in all the chocolate.
- Heat oven to 180C/160C fan/gas 4. Place walnut-sized spoonfuls of the mixture on baking sheets lined with baking parchment, leaving enough space between so they don't melt together. Bake in batches, for 10-12 mins, depending on how gooey you like your cookies. Allow to cool on the baking sheets for 1 min before removing to a plate to cool completely. Serve with vanilla ice cream.

- To melt the chocolate: use the double boiler method or do the following. Add chocolate and coconut oil to a medium, microwave-safe bowl. Heat in 20-second increments until melted. Stir in between heating increments, until smooth.
