CHINESE PEPPERED GREEN BEANS
Bright, crisp and spicy with crushed green peppercorns, fresh red chile pepper and garlic, these green beans will add lots of flavor and color to your meal. If you can't find Chinese yardlong or 'snake' beans, then regular green beans will do just fine.

- In a small bowl, using the bottom of a glass or jar, crush the peppercorns into a coarse pulp. Stir in the cilantro.
- Heat oil in a large wok or skillet over medium-high heat. Stir in beans, garlic, brown sugar, chile pepper, peppercorns and cilantro. Stir-fry for 45 seconds. Pour in the water and cover to steam for about 2 minutes. Serve immediately.

'CHINESE BUFFET' GREEN BEANS
Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

- Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes. Stir in the sugar, oyster sauce, and soy sauce. Continue cooking and stirring for several minutes until the beans have attained the desired degree of tenderness.

- To Prep Combine all seasoning and minced pork in a small bowl to marinate for about 15 mins.
- To Cook In a wok, heat oil over high heat until you see light smoke rising from the surface. Add drained green beans to fry for about 3 mins over low to medium heat. Stir the beans occasionally during the process. Transfer green beans to a plate and discard oil leaving only a remaining of 1 tbsp of cooking oil in the wok. Add minced pork and saute for 1 min until fragrant, then add ginger, garlic, Sichuan pepper, Ya Cai and dried red chillies. Saute for another 1 to 2 min. Return green beans to the wok and add salt, sugar and light soy sauce and saute until everything is well combined. Dish out and serve with steamed rice.
- Note: Ya Cai is a popular ingredient in Sichuan cuisine. It is a kind of pickled vegetable and is usually quite salty. Remember to reduce salt if Ya Cai is added to a dish
