CHIPOTLE'S CILANTRO LIME RICE
Make Chipotle's Cilantro Lime Rice in your own home with this delicious copycat recipe. If you close your eyes you will think you're eating one of Chipotle's rice bowls. This recipe is so easy to make and pairs perfectly with my copycat Chipotle Pork Carnitas.

Steps:
- In a heavy 2-quart saucepan, heat the oil or butter over low heat. If using butter, stir it occasionally until melted. Add the rice and lime juice and stir for 1 minute. Add the water and salt. Raise the heat and bring to a boil. Cover, turn down the heat to low and simmer until the rice is tender and the water is absorbed about 25 minutes. Fluff the rice with a fork and stir in the cilantro.

COPYCAT CHIPOTLE CILANTRO LIME RICE

- Gather the ingredients.
- In a 3-quart saucepan, combine water, rice, oil, and salt. Bring to a boil.
- Reduce heat, cover, and let simmer for 15 to 20 minutes or until water is absorbed. Remove from heat and let stand for 5 minutes covered.
- Stir in fresh cilantro, lime zest and juice.

- combine rice, water and bay leaf in a pot, cover it and bring it to a boil.

LIME CILANTRO RICE

- Heat the oil in a large saucepot over medium-high heat. Add the rice and toast until lightly golden, about 1 minute. Add the stock, lime peel, salt and 1 1/2 cups water and bring to a boil. Cover the rice, reduce the heat to low and simmer until all of the liquid is absorbed, about 15 minutes. Let the rice stand, covered, about 5 minutes, then stir in the lime zest, juice and cilantro. Transfer to a serving bowl and top with more cilantro leaves and green onion.

- Add rice and lime juice, stir for 1 minute.
- Add water and salt, bring to a full rolling boil.(Some people have had success with 1 cup of water, but when I've made it with 2 it worked for me).
- At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes.
- Add in the cilantro and fluff rice with a fork.
