My grandmother gave me this tasty recipe when I was a girl. Some of my fondest childhood memories are of her huge kitchen and all the delicious treats she made. -Joan Lewis, Reno, Nevada

4 cups confectioners' sugar
1 cup ground pecans or walnuts
1/2 cup plus 2 tablespoons sweetened condensed milk
1/4 cup butter, softened
3 cups semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In a large bowl, combine confectioners' sugar, pecans, milk and butter. Roll into 1-in. balls. Place on waxed paper-lined baking sheets. Cover and refrigerate overnight., In a microwave, melt chocolate chips and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. (If balls are too soft to dip, freezer until firm, 3-5 minutes.)

This recipe was made by my mother only around Christmas time. Now, I carry on the tradition of this sweet confection.

1 cup margarine, softened
2 pounds confectioners' sugar, sifted
1 (14 ounce) can sweetened condensed milk
3 cups coconut
1 cup finely chopped walnuts
1 teaspoon vanilla extract
1 (12 ounce) package semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In large bowl, combine margarine, confectioners' sugar, condensed milk, coconut, chopped walnuts and vanilla. Stir well. Cover and chill in the refrigerator for 2 hours, or until mixture has thickened enough to roll into balls. Roll the mixture into 1-inch balls and place close together, but not touching, on cookie sheets. Freeze until hard.
  • While bonbons are freezing, line a cookie sheet or flat surface with waxed paper. Combine chocolate chips and shortening in the top of a double boiler, over, not in, simmering water. Stir until melted. Using a toothpick or a fork, dip each bonbon in the melted chocolate. Place on waxed paper to dry. When chocolate has hardened, store bonbons in plastic bag in the freezer.

Cayenne Ganache and Lemon Jelly Filled Chocolate Bonbons image

10 ounces cream
1 ounce glucose
1/4 teaspoon cayenne pepper
12 ounces dark chocolate, chopped
2 ounces butter, room temperature
1/2 recipe Lemon Jelly, recipe follows
30 chocolate shells
Melted dark chocolate, for sealing
1/2 ounce pectin
23 ounces sugar
20 ounces lemon juice
2 ounces glucose
1/4 ounce citric acid

Steps:

  • In a medium saucepan, bring the cream, glucose, and cayenne to a boil. Pour over the dark chocolate. Stir until emulsified. Add the butter. Allow to cool to 80 degrees F. Place in a pastry bag.
  • Pipe a small amount of the cold Lemon Jelly into a chocolate shell. Pipe the ganache over the jelly. Allow to set overnight in a cool place.
  • Seal the ganache with melted dark chocolate. Refrigerate for 10 minutes, then turn out of the mold.
  • Mix the pectin with the sugar. In a medium saucepan, bring the lemon juice to a boil. Add the sugar and pectin mixture. Add the glucose. Boil to 225 degrees F. Remove from the heat and add the citric acid. Allow to cool, and then refrigerate.

Caramel Filled Chocolate Bonbons image

4 ounces glucose
17 ounces sugar
20 ounces hot cream
4 ounces unsalted butter, cut into pieces
4 ounces salted peanuts, chopped
30 (1-inch) white chocolate shells
6 ounces melted white chocolate

Steps:

  • Bring the glucose to a boil in a medium saucepan. Once boiling, gradually add the sugar while stirring constantly. Add the hot cream and allow to boil to 230 degrees F. Remove from the heat and allow to cool for 10 to 15 minutes. Add the butter, pour into a bowl, and then chill in the refrigerator for 1 hour.
  • Place a small amount of chopped peanuts in the base of each chocolate shell.
  • When the caramel mixture is cold, transfer to a piping bag and pipe the caramel into the chocolate shells, leaving 1/8-inch free at the top. Allow to set overnight at room temperature.
  • Seal the back of the bonbons with melted chocolate. Place in the refrigerator for 10 minutes, and then turn out of the mold.

1 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1 (6 ounce) bag milk chocolate candies, like Dove

Steps:

  • Cream Crisco and sugar. Blend in vanilla. Add flour and salt. Mix until well blended.(will look somewhat dry) Flatten out small piece of dough (approximately 1 teaspoon) Keep water in small bowl for dipping fingers so dough does not stick to hands. Place one Brachs milk chocolate star in the center of flattened dough. Fold dough over star and seal, making sure that star is covered completely. Place on ungreased cookie sheet. Sprinkle with colored sugar for the holidays if desired. Bake at 350 degrees for 10 minutes ONLY. DO NOT OVERBAKE. Really good cookie. My family absolutely loves these. Bet you can't eat just one!

3/4 cup margarine or 3/4 cup butter, softened
2 teaspoons vanilla
2 cups all-purpose flour
1/4 teaspoon salt
1 (3 1/2 ounce) package almond paste

Steps:

  • Heat oven to 350*.
  • In small saucepan over low heat, melt chocolate in milk, stirring occasionally until smooth.
  • In large bowl, beat 1/4 cup sugar and margarine until light and fluffy.
  • Blend in chocolate mixture and vanilla.
  • Stir in flour and salt; mix well.
  • Using rounded teaspoonfuls of dough, shape into ball.
  • Place 2 inches apart on ungreased cookie sheets.
  • Make an indentation in center of each cookie.
  • Fill each with scant 1/4 tsp.
  • almond paste; press dough around filling to cover.
  • Bake at 350* for 9 to 11 minutes or until set.
  • Remove from cookie sheets; roll in sugar.
  • Cool completely.
  • Yield: 4 dozen cookies.
