EASY 2-INGREDIENT CHOCOLATE FUDGE
A deliciously tempting, easy dark chocolate fudge recipe that can easily be made into truffles as well. Be sure to use SWEETENED CONDENSED MILK ONLY or this recipe will not set up. This is a recipe that was tested in a test kitchen before being published by Good Housekeeping magazine. I have been using it since 1990 without fail.

Steps:
- Place both ingredients in a microwave safe 8" x 8" dish.
- Microwave on high for 2 to 3 minutes.
- Remove (with oven mitts, please) and stir to combine.
- Place in the refrigerator for 2 hours to set.
- Fudge can be removed from refrigerator and stored at room temperature after it has set.
- Once at room temperature you can melon scoop it, roll it in powdered cocoa and chopped nuts, and serve as truffles.

OLD-FASHIONED CHOCOLATE FUDGE
This fudge is easy to make and very delicious. Enjoy this with your loved ones. For best results be sure to use a candy thermometer.

Steps:
- Grease an 8x8 inch square baking pan. Set aside.
- Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
- Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
- Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
- Pour into prepared pan and let cool. Cut into about 60 squares.

- Microwave semi-sweet chocolate and 3/4 cup milk in medium microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted.
- Add nuts and vanilla; mix well. Spread onto bottom of foil-lined 8-inch square pan.
- Microwave white chocolate and remaining milk in medium microwaveable bowl on HIGH 1-1/2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted. Spread over semi-sweet chocolate layer. Refrigerate 2 hours.

CHOCOLATE FUDGE (SOMERSIZE LEVEL 2)
A Pat S. posted this to a Somersizing mailing list I was on several years ago. It's a yummy dessert treat that's legal for those on Level 2 of Somersizing, and OK to have once in a while on Level 1, too. The recipe can easily be doubled. I used to make a big batch of this while I was faithfully Somersizing and keep it in the fridge for when I had a chocolate craving. Cooking time is chilling time.

- In a small saucepan, melt butter over low heat.
- Add heavy cream and cream cheese and whisk until smooth.
- Add Splenda and adjust for taste.
- [NOTE:I found that for my taste, I needed to add quite a bit more than the three tablespoons called for.
- ]Heat until bubbling, stirring constantly.
- Reduce heat and stir in cocoa and vanilla.
- Blend well.
- Pour into a small buttered dish.
- Place in the refrigerator to set for 3 to 4 hours.
- Cut into eight pieces.
