1 pound ground beef round
2 tablespoons taco seasoning mix
1 can (4 ounces) chopped mild green chiles, drained
16 (1/2-inch) cubes Colby Jack cheese
1 egg white
1 tablespoon water
2 cups crushed nacho cheese-flavored tortilla chips
6 tablespoons prepared thick taco sauce
3 tablespoons honey

Steps:

  • Heat oven to 400 degrees F.
  • Combine ground beef, taco seasoning, and green chiles in a large bowl, mixing lightly but thoroughly. Divide beef mixture into 16 portions; shape each portion around a cheese cube, completely covering the cheese.
  • Beat egg white with water in shallow dish until blended. Place chips in second shallow dish. Dip each meatball into egg white mixture, then into chips to coat completely. Press each meatball with palm into a flattened nugget shape, generously coating both sides of nugget with chips.
  • Spray a large baking pan with nonstick cooking spray. Place nuggets in baking pan; spray tops of nuggets generously with nonstick cooking spray. Bake for 15 to 20 minutes, or until meat registers 160 degrees F on an instant-read thermometer; meat should not be pink and juices should run clear.
  • Meanwhile, combine sauce ingredients in small microwave-safe dish. Microwave on high for 30 seconds or until warm. Serve nuggets with sauce.

12 medium jalapeno peppers
12 tablespoons cream cheese, softened
1 ½ pounds Beef, brisket, flat half, separable lean only, trimmed to 0" fat, all grades, cooked, braised
12 slices thick-cut bacon
1 teaspoon kosher salt, or as needed
1 teaspoon coarse ground black pepper
½ (12 ounce) bottle BBQ sauce

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Slice the jalapenos in the shape of a "T": cut a straight vertical line from top to bottom with a cross-cut directly under the stem, making sure to cut only halfway through the jalapenos. Use a spoon to remove and discard all seeds and membranes. Place jalapenos on a baking sheet.
  • Bake in the preheated oven for 10 minutes.
  • Remove from the oven and place jalapenos in a bowl of ice water to extract the rest of the seeds' oil. If you do not do this step, they will be extremely spicy. Raise the oven temperature to 350 degrees F (175 degrees C).
  • Remove jalapenos from the water and blot dry with a paper towel. Spread 1 tablespoon of cream cheese inside of each jalapeno. Place approximately 2 ounces of brisket inside each, then wrap with a slice of bacon. Sprinkle a pinch of kosher salt and a pinch of ground pepper over the top of each bacon-wrapped jalapeno, then transfer to the baking sheet.
  • Bake in the preheated oven for 30 minutes. Remove from the oven and brush tops with BBQ sauce. Continue to bake for 5 minutes more.

3 tablespoons Worcestershire sauce
1 tablespoon chili powder
2 garlic cloves, minced
1 teaspoon celery salt
1 teaspoon pepper
1 teaspoon liquid smoke, optional
1 fresh beef brisket (6 pounds)
1/2 cup beef broth
2 bay leaves
BARBECUE SAUCE:
1 medium onion, chopped
2 tablespoons canola oil
2 garlic cloves, minced
1 cup ketchup
1/2 cup molasses
1/4 cup cider vinegar
2 teaspoons chili powder
1/2 teaspoon ground mustard

Steps:

  • In a large bowl or shallow dish, combine the Worcestershire sauce, chili powder, bay leaves, garlic, celery salt, pepper and, if desired, liquid smoke. Cut brisket in half; add to bowl and turn to coat. Cover and refrigerate overnight., Transfer beef to a 5- or 6-qt. slow cooker; add broth and bay leaves. Cover and cook on low for 6-8 hours or until tender., For sauce, in a small saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients; heat through., Remove brisket from the slow cooker; discard bay leaves. Place 1 cup cooking juices in a measuring cup; skim fat. Add to the barbecue sauce. Discard remaining juices., Return brisket to the slow cooker; top with sauce mixture. Cover and cook on high for 30 minutes to allow flavors to blend. Thinly slice beef across the grain; serve with sauce. Freeze option: Place individual portions of sliced brisket in freezer containers; top with barbecue sauce. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little water if necessary.

1 (28 ounce) can diced tomatoes with juice, pureed

Steps:

  • In a skillet over medium heat, brown the ground beef with the onion, until the meat is no longer pink, and the onion is soft; drain fat.
  • In a Dutch oven or large saucepan, combine the ground beef mixture, and pureed tomatoes. Season with Worcestershire sauce, chili powder, salt and pepper. I just keep adding stuff until it tastes good. Bring to a boil, and let simmer for 15 to 20 minutes to blend flavors. Serve over rice.

1 pound ground beef
1 small onion, chopped
1 teaspoon chili powder
Salt and pepper to taste
3 cups shredded cheddar cheese, divided
12 corn tortillas (10 inches)
SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1 can (15 ounces) tomato sauce
1 tablespoon chili powder
1/4 teaspoon salt
Dash cayenne pepper

Steps:

  • In a skillet, cook ground beef and onion until the meat is browned and onion is tender; drain. Stir in chili powder, salt, pepper and 1-1/2 cups cheese. , Soften tortillas according to package directions. Spoon about 1/4 cup meat mixture onto each tortilla. Roll up and place, seam side down, in a greased 13x9-in. baking dish; set aside. , For sauce, melt butter in a small saucepan. Stir in flour; cook until bubbly. Add remaining sauce ingredients.   • Preheat broiler setting on oven. Mix together butter and garlic powder in a small bowl. Add salt and pepper, to taste.
  • Brush both sides of each slice of bread with butter mixture and place on an ungreased baking sheet.
  • Broil bread for 1 minute on each side, or until light golden brown. Sprinkle one side of bread with cheese and Italian seasoning and broil until cheese is melted.

1 lb sirloin steak
2 tablespoons steak seasoning
2/3 cup flour, seasoned with
salt and pepper
2 cups crumbled corn flakes
1/2 cup finely chopped pecans
2 tablespoons parmesan cheese
1/2 teaspoon paprika
1/4 teaspoon nutmeg (optional)
1/4 cup margarine or 1/4 cup butter
2 tablespoons flour
1 cup half-and-half or 1 cup milk
5 ounces sharp cheddar cheese, grated
2 teaspoons Worcestershire sauce

Steps:

  • Set oven to 400 degrees.
  • Slice the beef into bite-size squares (about 1-1/4-inch squares), and roll in the steak seasoning.
  • Coat the cubed seasoned steak pieces in a plastic bag containing the flour, salt and pepper mixture until each piece is individually coated.
  • Refrigerate steak while continuing preparation.
  • In a bowl, thoroughly blend corn flake crumbs, chopped pecans, Parmesan cheese, paprika and nutmeg (if using); set aside.
  • In a saucepan, melt margaine.
  • Whisk in the 2 Tbsp flour, stir until all the flour is completely dissolved.
  • Add in the half and half cream (half and half cream is recommended as milk usually will scorth the bottom of the pot, but milk can be used if desired); heat and stir until the mixture comes to a light boil.
  • Lower the heat to simmer.
  • Add in the grated cheese and Worcestershire sauce; continue stirring and cooking until the cheese melts.
  • Remove from heat; keep the cheese mixture warm.
  • Remove the steak pieces from the fridge.
  • Dip each floured steak square in cheese sauce.
  • Then roll in bowl of dry crumbs (making sure that all sides are coated well).
  • Place on a well-greased or non-stick coated cookie sheet (leaving spaces between each square).
  • Bake for 15 minutes, or until steak squares are a deep golden brown.
  • Cool slightly before removing from the pan with a spatula.
