CHOCOLATE-COVERED BACON
An easy recipe for Chocolate-Covered Bacon, calling for bacon, chocolate, and sea salt or other toppings. The sweet and salty taste is magnificent!

Steps:
- Gather the ingredients.
- Prepare bacon according to package directions, either on stovetop or in oven. Cook bacon until it is crispy.
- Once bacon is cooked, drain fat and let cool, then pat both sides of bacon with a paper towel to remove any lingering fat.
- Melt chocolate in a double boiler or in microwave. If you are using chocolate candy coating, simply melting it is fine. If you are using real chocolate, temper it so that it remains shiny and hard at room temperature.
- Holding a strip of bacon at the top, carefully dip most of it into melted chocolate. If you have trouble dipping bacon, use a spoon to pour melted chocolate over bacon until both sides are covered to your liking.
- Lay chocolate-dipped bacon on a tray or plate covered with waxed paper. While chocolate is still wet, sprinkle top with flaked sea salt, chopped toasted nuts, or any other toppings you'd like. Repeat until all of the bacon is covered with chocolate.
- Refrigerate tray to set chocolate for about 15 minutes. Once set, let bacon come to room temperature, and it's ready to eat!

SWEET AND SAVORY CHOCOLATE BACON BARK
Steps:
- Prepare a baking sheet by lining it with aluminum foil and set aside for now.
- Place the chocolate in a microwave-safe bowl and microwave in 1-minute increments until melted, stirring after every minute to prevent overheating.
- While the chocolate is melting, chop the bacon strips into small bits. Set aside approximately one-third of the bacon to be used to top the bark.
- Once the chocolate is melted and smooth, stir in the remaining two-thirds of the chopped bacon, and stir until the bacon bits are well-incorporated.
- Pour the chocolate onto the prepared baking sheet , and with an offset spatula or a knife, spread it into a thin layer about 1/4-inch high. While the chocolate is still wet, sprinkle the top evenly with the reserved chopped bacon and press down gently to adhere it to the surface.
- Refrigerate the bacon bark to set the chocolate, about 30 minutes. Once set, break it into small uneven pieces by hand, and serve immediately. Chocolate bacon bark can be stored in an airtight container in the refrigerator for up to a week.

- Preheat the oven to 350 degrees F.
- To prepare the nuts: In a small bowl, add the pecans, walnuts, brown sugar, maple syrup, pumpkin pie spice, paprika and a pinch of salt and a grind or 2 of pepper. Stir until everything is coated and set aside.
- To prepare the bacon: In another small bowl, add the brown sugar, paprika, bacon, lemon zest, a pinch of salt and a grind or 2 of pepper. Spread out on a nonstick baking sheet and cook until the bacon is almost done and the sugars are bubbling, 8 to 10 minutes. Remove from the oven and add the nut mixture on to the sheet. Stir and fold with a spatula and spread everything out on the sheet again. Place back in the oven for 15 more minutes, stirring and spreading again halfway through. Serve warm, or allow to cool and break apart.
CHOCOLATE SALTINE BARK (OPTIONAL BACON)
Steps:
- Preheat oven to 300 degrees F Line cookie sheet with saltine crackers in a single layer Chop nuts (and optional combine with bacon) - mix well In a saucepan, combine the brown sugar and butter. bring to a boil for 3 minutes. When it is bubbly and starts to thicken a bit, immediately pour over saltines and spread so that it covers crackers completely. Back for 5-6 minutes. Remove from oven and sprinkle chocolate chips over the top. Put back in the oven for a few minutes to melt chips. Spread melted chocolate and top with chopped nuts/bacon mixture Cool completely and then break into pieces

- Preheat oven to 350 degrees F (175 degrees C). Line an 11x17-inch rimmed baking sheet with parchment paper. Spread saltine crackers on baking sheet in a single layer, salted sides up.
- Combine butter and brown sugar in a saucepan; melt together over medium heat, stirring well until mixture turns a caramel color, about 5 minutes. Pour caramel mixture over crackers and spread evenly.
- Bake in the preheated oven until just bubbly, about 5 minutes. Remove from oven and let cool briefly.
- Melt chocolate chips in a microwave-safe bowl in the microwave in 15-second intervals, stirring after each melting, 1 to 3 minutes. Pour chocolate over crackers and spread evenly.
- Transfer baking sheet to the refrigerator and chill until bark hardens, about 1 hour. Break bark up into pieces.
